Calorie content of cakes and methods of reducing it – Moscow State Budgetary Health Institution Polyclinic No. 2
Most people have a weakness for sweet desserts...
Most people have a weakness for sweet desserts and especially cakes. For girls and women who are watching their figure, following a diet or trying to lose weight, eating cakes raises a lot of questions and doubts.
In order to answer the questions whether you can treat yourself to a piece of cake and what type of cake to choose, you need to determine what the caloric content of cakes and which cakes have the lowest energy value?
The energy value of any dish depends on the composition and proportions of the products included in it. In cakes, creams have the highest calorie content, because they are made from butter, cream, full-fat sour cream, condensed milk, and in addition, they often contain a lot of sugar.
To determine the calorie content, you first need to look at what kind of cream is added. The largest amount of calories is contained in cakes with butter cream, the second place in calorie content is occupied by cakes in which butter cream is used, the third place is occupied by sweets with condensed milk and custard.
The next indicator of calorie content is the dough from which the cake is baked.
Many people love sponge cakes, because a tender, melting sponge cake is truly one of the greatest pleasures for those with a sweet tooth. But it is important to note that biscuit dough is the most high-calorie dough, especially if you take into account that syrups with a high sugar content are used for its impregnation.
Another factor that is worth paying attention to is the amount of cream , the more cream decorations on the surface of the cake, the correspondingly higher its energy value.
Confectioners very often create wonderful cream compositions when decorating cakes; of course, it is beautiful and pleasing to the eye, but to preserve your figure, it is better to abandon this beauty.
You will get no less pleasure from a piece of cake modestly decorated, for example, with fresh fruit or berries, without eating too much.
affect the calorie content of the cake - chocolate as an additive to cream or icing, nuts and candied fruits, decorations made from sugar mastic and other delicacies increase the number of calories.
Recently, confectioners, taking into account the needs of the population, began to prepare cakes with dietary types of cream, for example, a cake with yogurt cream has the lowest calorie content - 240 kcal per 100 g.
If you want to make a diet cake yourself, then you can use yogurt for the cream, taking into account its calorie content per 100 g:
- Yogurt 1.5% fat with sugar – 67 kcal;
- Yogurt 3.2% fat with sugar – 82 kcal;
- Yogurt 6% fat with sugar – 108 kcal.
The calorie content of unsweetened yoghurts is 15-20 kcal lower than that indicated above.
Calorie content of cake creams
The average calorie content of cake creams is:
- Butter cream – about 300-350 kcal;
- Custard – 180-215 kcal;
- Condensed milk cream – 300-315 kcal;
- Whipped egg white cream – 170-180 kcal;
- Butter cream – 225-250 kcal;
- Curd cream – 160-175 kcal.
The energy value of creams is influenced by the amount of sugar and additives - raisins, nuts. For example, if these ingredients are added to low-calorie curd cream, its energy value increases to 240 kcal.
Calorie content of cake dough
If we consider the most common and popular types of cake dough, we get the following picture:
- Biscuit dough without additives – 260-280 kcal;
- Puff pastry – 340-410 kcal;
- Shortbread dough – 350-400 kcal;
- Honey dough – 380 kcal;
- Choux pastry – 210-220 kcal;
- Unleavened dough – 220-240 kcal.
If you prepare the cake yourself, then, taking into account the above data, you can independently calculate the energy value of your dessert, as well as prepare a completely acceptable dietary dish. For example, a lean cake with yogurt and fruit will have a calorie content of only 145 kcal per 100 g.
Calorie content of cakes
When purchasing ready-made cakes, carefully study its composition and value indicated on the label. For example, the following indicators can be cited:
- Cake "Napoleon" - 100 g about 550 kcal;
- Cake “Bird's milk” - approximately 350 kcal per 100 g;
- Sponge cake - on average about 400 kcal;
- Cake “Pancho” - 280 kcal;
- Cake “Prague” - 350-450 kcal.

How to easily reduce your calorie intake and lose weight
Almost always, losing weight and maintaining weight at an optimal level turns into an ordeal. Diets, miracle pills, gym memberships, a swimming section, sugar-free foods and a refrigerator that alerts the entire apartment about an insidious burglar are not a complete list of tricks that from 60 to 80% of the adult population resort to from time to time.
Not everyone achieves success: either there is not enough enthusiasm, or time, or other obstacles arise on the way to the dream of becoming a ballerina.
If you take statistics for Americans, you can see that in 2004 they consumed 2,750 kcal daily, which is as much as 500 kcal (can you imagine, 500!) more than in 1970. In our country the scale is not the same - fast food has not yet managed to take over everything and everyone, but it is quite comparable.
Not a diet, but a trick
Fact: 97% of people who have ever dieted return to their previous lifestyle. And most of them eat even more kilograms than they lost during their experiments. There is only one way to solve this problem - change your diet for life.
To do this, it is enough to enter one single thing - your word of honor! - a change that will allow you to reach your ideal weight and maintain it forever.
So, all you need to do is consume as many calories daily as you would at your optimal weight. All.
This is a method whose effectiveness has been repeatedly proven. By the way, this plan is also suitable for very thin people who want to gain weight. It doesn't matter how much you weigh now. If you eat as much as you should, sooner or later you will reach your natural, healthy weight.
Determining the optimal caloric intake of the diet
How many calories you need depends on several factors: your body type, height, and activity level. You can forget the number indicating the number of your extra pounds like a bad dream - you won’t need it.
And don’t be afraid that you will have to write down what you eat for a while. There are many convenient applications for Android and iOS, which already contain standard calorie portions.
Additionally, you can point your camera at the barcode and the app will read it and automatically download your calorie data. You may first need a digital scale to weigh out your portions.
But after a month (or even less), you will be able to determine the serving size by eye and know how many calories are contained in what product.
What is your body type?
Measure the circumference of your wrist (use a tape measure or a piece of string, which can then be easily measured with a ruler).
What is your ideal weight?
These data differ between men and women. Find your height and body shape in the table: at the intersection of these columns is the coveted number. This is what you will strive for.
How active are you?
One of the most popular classifications today suggests dividing people into three groups according to their level of activity. Choose the one that best describes your daily lifestyle. If you cannot choose one thing and you are overweight, it is better to choose a less active option.
- Sedentary lifestyle: lack of regular physical activity, occasional walking - physical activity, mainly characteristic of everyday life.
- Moderately active lifestyle: a combination of various daily activities (work, leisure, etc.) or a regular exercise program equivalent to walking or running 2.5–5 km daily, combined with physical activity typical of everyday life.
- Very active lifestyle: a combination of different daily activities (work, leisure, etc.) or a regular exercise program equivalent to walking or running more than 5 km daily, combined with physical activity typical of everyday life.
Determining the optimal caloric intake of the diet
In the first column of the table, find your ideal weight (what you wrote down in the second paragraph), and then look for a number that corresponds to your activity level - sedentary, moderately active, very active.
Voila! Now you know how many calories you need every day. Don't forget that you can't cut calories too much: men should consume at least 1,200 kcal per day, women - at least 1,000 kcal.
And these are very low values - do not strive for quick results so as not to harm your body.

Calorie content of cake
Many people think about the calorie content of a cake when it’s too late, when their sides sag and they feel a loss of strength and shortness of breath. Of course, it is quite difficult to resist swallowing a creamy iceberg, but it is possible. The main thing is to set yourself a goal to lose weight and give up sweets, or replace them with more nutritious, low-calorie foods.
In fact, determining the number of calories in a cake is not easy, because its nutritional value directly depends on the products that were used for preparation. It is clear that when buying a finished product in a store, it will not be difficult to determine the calorie content of the cake - the manufacturer writes it on the packaging.
How to determine how many calories are in a cake?
The number of calories in a cake primarily depends on the type of cream. The calorie content of the cream will vary depending on the products used to prepare it.
Most often, butter, butter or custard is used in homemade cakes. The highest calorie content will be a cake made with butter cream, and the lowest calorie confectionery product will be a custard cake, since it contains only sugar, water and flour.
If you add butter to the custard, the calorie content of the cake with cream will increase.
Also, the number of calories in the cake depends on the decoration of the product. By using fresh or dried fruits to decorate the top layer, you can slightly reduce the calorie content of the cake. Accordingly, when decorating a cake with icing, chocolate or figurines specially prepared for this purpose, the number of calories in the cake will be higher.
Very often, biscuit dough is used as a cake layer for the product. Such confectionery products are very popular; adults and children love them. However, the calorie content of a cake made from sponge dough is the highest. In addition, this cake is very light, airy, melts in your mouth, which means you can eat much more of it.
The benefits and harms of cakes
This delicacy can be beneficial when consumed in moderation. Many ingredients, such as fruits, berries, butter, cream, and even wheat flour, are rich in beneficial substances.
However, for people with diabetes and those who are experiencing the first signs of obesity, the cake is contraindicated. Excessive consumption can harm anyone's body.

Napoleon for those who are on a diet
What should those who love sweets, but want to change their weight or improve the quality of their figure, do? The answer that will solve this problem 100% is to stop eating sweets. But not everyone is ready for this. Therefore, there are a couple of ways to reduce the “danger” of the high calorie content of “Napoleon”:
- First, calculate your individual KBJU norm for the day and eat a small piece of cake without exceeding the established norm (you need to understand that this will entail a decrease in the remaining amounts of food).
- Secondly, try to reduce the calorie content of Napoleon as much as possible by changing the quantity and quality of some ingredients.

If everything is clear with the first point, then what can you suggest for the second point? To begin with, we minimize the calories in the recipe, that is, instead of buttercream, choose custard. Then you can reduce the amount of sugar - instead of the full amount in the recipe, put half. This will not greatly affect the taste of the finished dessert. In extreme cases, sugar is completely replaced with a sweetener.
Alternatively, you can experiment with milk: take cow's milk with a lower percentage of fat content or completely replace it with a mixture of coconut and soy.
If you use homemade dough to make a cake, then it would be ideal to replace wheat flour with bran, whole grain or oat flour.
In general, it is clear that even while on a diet, you can treat yourself to sweets. The main thing is to correctly calculate the calorie content of the Napoleon cake and treat yourself to dessert no more than 2 times a week.

Store-bought desserts: what are the dangers?
If you decide to enjoy store-bought cakes, you need to carefully study the composition. Undesirable and even harmful components may be hidden in confectionery products:
- Confectionery fat. Hidden behind the harmless name are hydrogenated fats. They can provoke serious diseases of the heart and the entire vascular system, leading to obesity and disruption of brain function.
- Refined sugar. White sand is added to the vast majority of desserts. Constant use of this ingredient creates an excess of glucose, which leads to mood swings, lethargy, and weight fluctuations.
- Chemical additives. Manufacturers are trying to save money by replacing natural ingredients with cheaper synthetic ones. For example, instead of natural fruit juice, flavoring, etc. is used in the composition. Artificial additives can provoke allergies, disrupt metabolism and overload the liver.
With the increasing popularity of healthy lifestyles, some manufacturers began to produce safe desserts based on home recipes (the most demanding customers can purchase baked goods to order). Attention to the composition allows you to choose the most successful cake in terms of calorie content and composition.
