Tula gingerbread: folk craft

Calorie intake per day

As such, there is no single and generally accepted daily calorie intake. According to the recommendations of the World Health Organization, “energy entering the body (in calories) must be balanced with energy expended.” Thus, your individual calorie intake depends, first of all, on the nature of your work, level of physical activity, gender, age and a number of other factors. However, on the Internet you can find many tables and calculators of unknown origin, offering information on daily values, supposedly based on authoritative sources. We believe that the quality of this information is quite questionable.

The most reliable way to determine individual calorie needs is to simply calculate the energy value of food consumed during the day (or several days). Just record your normal daily diet on paper. Write down what and how much you ate during the day. Calorie content can be directly calculated using information from product labels and using our website. Provided that you are healthy and your weight does not change much with your current diet, the results obtained can be conditionally considered your daily norm.

To lose weight, you need to slightly reduce your daily energy intake. If you maintain your current lifestyle, you will experience a slight calorie deficit because your costs will remain the same. This will lead to the gradual burning of your fat reserves. What exactly the deficit should be is up to you to decide. We strongly advise against increasing it sharply, because... it won't lead to anything good. Reduce your calorie intake gradually and lose weight slowly. This way you won’t have to torture yourself and break down from time to time. And of course, before making any dietary changes, we strongly recommend that you consult with your doctor or qualified dietitian.

Tula gingerbread - NMPT No. 32

1. WHAT IS GINGERBREAD?

Gingerbread is a festive sweet baked from special gingerbread dough with honey, sometimes with the addition of nuts and raisins.

Very tasty gingerbread cookies are made with a filling of fruit or berry jam and boiled condensed milk. The oldest filling is apple.

The name “gingerbread” comes from the word “spice”, since the aromatic gingerbread dough necessarily contains spices: black pepper, citrus peels rich in essential oils, vanilla, cinnamon, cardamom, peppermint, ginger, anise, etc.

The first honey cakes with the addition of aromatic herbs were known back in Ancient Egypt.

2. TULA Gingerbread

Here's what our experts Baba Yaga and Dobry Molodets say about it:
B.Ya.:
How do Tula gingerbreads differ from “non-Tula” ones? Almost nothing! Well, okay, the trick with Pokrovsky gingerbread is that they add walnuts to the condensed milk filling. And Vyaznikovsky gingerbreads “Memorable”? Everything is the same as in the Tula ones - both the filling is made of jam and they are similar in appearance. And the gingerbread “Gorodets Souvenir” is again filled with fruit jam, however, with the addition of grated raisins...

D.M.:

Well, grandma, you’ve lived such a long life and still haven’t understood that the most important things always lie in the little things, in seemingly insignificant differences, in the subtlest nuances of aroma, taste, appearance, shape, color, composition. , cooking features. Gorodets gingerbread, for example, is glazed on both sides. And very tasty too.

But only in the Tula gingerbread everything is combined very harmoniously: the fruit and berry filling from local gardens, the amber, aromatic crumb, the iridescent glaze with “frost,” and the taste is pleasant and recognizable.

B.Ya.:

Here, the other day, I watched a commercial on YouTube about Tula gingerbread. What they won’t say! This gingerbread is supposedly good for health, lowers “bad” cholesterol, and removes radiation from the body... Ugh! What is the benefit of it if it contains only sugar and calories?!

D.M.:

I don’t know about cholesterol and radiation, but there are benefits in it: the gingerbread contains honey, all the products are natural, the fruits and berries in the filling contain vitamins. The product, however, is high in calories. You need to eat it in reasonable quantities, preferably no more than 100 grams at a time.

3. HOW TO EAT GINGERBREAKES CORRECTLY?

Gingerbread can be stored in packaging from the manufacturer for quite a long time. But the most delicious gingerbread is, of course, fresh.

By the way, if the gingerbread has become stale, put it in the microwave for literally 15 seconds and it will become soft again.

Some gourmets suggest eating it with sour cream. A slightly dry sweet gingerbread and moist and sour sour cream, in theory, should complement each other perfectly. Why not? Give it a try.

But, nevertheless, it is more correct to eat gingerbread “in Russian”: without any tricks or additives, just as a bite with aromatic hot tea. And the tea must be poured, of course, from a Tula samovar... :)

The rich taste of Tula gingerbread has been proven for centuries; it is good on its own and completely self-sufficient.

4. TASTY GIFT

In Tula, when it comes to gingerbread, there is an ironclad rule: “If you eat it yourself, bring it to a friend.”

A product known in Rus' since 1685, handmade according to an ancient recipe, decorated with a three-dimensional image printed from gingerbread boards - isn’t this a great gift?!

It is customary to give gingerbread cookies on Forgiveness Sunday on the last day of Maslenitsa. Gingerbread was awarded to soldiers during the war. Huge gingerbread cookies weighing several kilograms were baked for the wedding celebration. Previously, as a sign of special respect, they were presented as gifts to high-ranking officials.

Tula gingerbread is a great souvenir for tourists. They plan to treat air passengers on Aeroflot flights with Tula gingerbread cookies.

Manufacturers produce gingerbread cookies with appropriate images and text for all significant events. By the way, the Tula Gingerbread Museum has a whole collection of gingerbreads with grammatical errors - the woodcarvers who carved the gingerbread boards were often illiterate people.

There are a great variety of ready-made gingerbread shapes. Their size ranges from tiny “overclocking” gingerbreads to giants of human height and weighing one and a half pounds!

And if you want, a unique gingerbread board mold will be made for you to order according to your sketches and taking into account your wishes. Innotek, for example, for its anniversary ordered a batch of “branded” gingerbread cookies with its trademark. Everyone liked the gingerbread cookies and remembered them for a long time.

5. TULA – THE HOMELAND OF TULA Gingerbread. AND NOT ONLY.

The hero city of Tula is located just 190 km south of Innotek's Moscow office. Tula has long been famous for its gunsmiths. Not far from the Tula Museum of Weapons there is a monument to Lefty, who, according to legend, shoed a flea.

The famous Tula gingerbread brought fame to the city. A monument to the Tula gingerbread appeared in the city center, and at the end of the last century the Tula Gingerbread Museum was opened.

A rich collection of Tula samovars of all shapes and sizes is collected in the Samovar Museum near the entrance to the Tula Kremlin.

The Tula region also produces delicious chocolate Suvorov candies and the Filimonov clay toy.

Such “Tula” products as Tula accordion, Belyovskaya pastila and Krainskaya mineral water are registered as appellations of origin of goods.

TULA GINGERBREAD

Product specification:

Tula gingerbread is distinguished by a pronounced honey-creamy taste, golden color of the crumb and the presence of fruit and berry filling made from fruits and berries growing in the Tula region, in the center of the gingerbread. The color-textured design of the surface of the gingerbread is expressed by the warm brown color of the front surface and the dark color of the pattern with a clear highlight of lines and edges, and to enhance the artistic expressiveness of the gingerbread and give it originality, aesthetics and elegance, it is covered with sugar glaze to form a marble-glossy crust with frost. The compositional structure of the relief design of the gingerbread is made in the form of a large central dominant pictorial plot motif or inscription. Along the contour of the gingerbread there is a crown-shaped intricate ornament of curls, curls, volutes, and a plant belt-braided pattern of stylized branches, leaves, buds and flowers. The themes of the visual subjects are very diverse: festive, everyday, thematic, cultural and historical. The drawings on the Tula gingerbread successfully convey the general external resemblance to living nature and reflect the inherent grace and elegance of the object. The composition of the pattern on the gingerbread, the different heights, widths and shapes of the relief of the pattern, the alternating rhythm of its arrangement, the plastic softness, the smoothness of the lines of the relief surface give the surface of the gingerbread the necessary liveliness and energy, making it unusually decorative. The ritual significance of the composition and the completeness of its ornamental structure are emphasized by the measured rhythm of the teeth—festoons—framing the outline of the gingerbread. Gingerbread has a wide variety of shapes - rectangular, square, round, oval, curly and different sizes - from small to large. The design is applied to the gingerbread using wooden carved gingerbread boards. According to the manufacturing method, Tula gingerbread is classified as raw printed gingerbread.
