Tsar's cake - recipe

Cottage cheese is an affordable and healthy product. They prepare casseroles, cheesecakes, dumplings, and pancakes with it. Cheesecakes and rye flatbreads with cottage cheese are tasty and filling. A special place is occupied by the royal cake, the recipe of which resembles a shortbread cake with an airy soufflé inside.

We will need:

  • cottage cheese (fat content 9%) - 500 g (2 packs);
  • flour - 250 g (1 cup);
  • granulated sugar - 200 g (1 glass);
  • butter - 150 g (2/3 pack);
  • eggs - 3 pieces;
  • salt - 2 g (1/2 teaspoon);
  • soda - 2 g (1/2 teaspoon);
  • vanillin.

Preparation time: 15-20 minutes.

Cooking time: 40-50 minutes.

Total cooking time: 1-1.5 hours.

Quantity: cottage cheese pie.

Royal cottage cheese cake, recipe for tender pastries:

  • First place the oil in the freezer for half an hour.
  • Advice. It is permissible to replace butter with margarine for baking.
  • Chop the butter into small pieces or grate it on a grater with large holes.
  • Add half the sugar to the container and sift all the flour.
  • Quickly grind the ingredients into fine, uniform crumbs.
  • Line the springform pan with baking paper. Place about 2/3 of the crumbs into a container, forming the sides and bottom. We compact the mass tightly.
  • Mash the cottage cheese with a fork or rub through a sieve, add vanillin, salt and soda. Pour in the remaining sugar and mix.
  • Beat in one egg at a time, stirring the mixture each time. The thickness of the filling is like thick sour cream.
  • Advice. You can use a mixer for mixing.
  • Place the curd crumbs into the prepared pan and level the surface.
  • Cover the filling with the remaining dough.
  • Heat the oven to 200 degrees.
  • Place the pan in the oven for 40-50 minutes. The royal cake with cottage cheese is ready when the top layer of dough is browned.
  • Remove the mold after the baking has cooled completely.
  • Serve the pie, cut into portions.

Like many modern women, I don’t like and don’t really know how to cook. Although I don’t eat semi-finished products and can cope with simple main courses), especially since this is more than enough for a person who adheres to the principles of PP (proper nutrition). Porridge or scrambled eggs for breakfast, a piece of meat, poultry or fish with a side dish for lunch and the same thing, but with a vegetable salad for dinner - that’s all cooking. Over the last few months, I’ve been “fascinated” by these simple healthy flatbreads, which can be baked instead of high-calorie cookies, without getting carried away, however, and even replace morning oatmeal with them, since their main ingredient is rolled oats. I spotted this recipe on Instagram of a young fitness enthusiast @hengreyd.

To make oatcakes you will need:

- a frying pan with a non-stick coating, because we will fry the flatbreads without oil (!); - a small bowl for mixing products; - oatmeal and eggs in the proportion of 1 egg per 50g of cereal, or 4 tablespoons. You will get 4 small flatbreads, but keep in mind when eating them that 50g of flakes is a full serving of oatmeal for an average-sized person, that is, do not get carried away with eating the flatbreads. Otherwise you will turn into a horse:) I usually make cakes from 100g of flakes; — ideally, you don’t need to add sugar, but the cakes will turn out completely bland. I add 1 tsp to the “dough”. sugar per 100g of flakes. For those who use sweetener in baking, add to taste. Add any spices and/or fruits if desired. For example, cinnamon or cocoa (I haven't tried it yet). I add 1/2 small or 1/3 large banana, mashing it into a paste with a fork. Experiment :)

Cooking method:

— break the required number of eggs into a bowl, stir with a whisk or fork until smooth. If necessary, add sugar, spices, banana to taste; - add the required amount of flakes, mix; — put the resulting “dough” in the refrigerator overnight (or for half a day); - take the “dough” out of the refrigerator and mix it. Using a spoon or your hand, place the lumps into a non-stick frying pan and flatten them with a spoon. The thinner the cakes are, the better and faster they will bake. It’s better to place one lump at a time to see how much space is left in the pan for the next flat cakes.

— close the frying pan with a lid and fry over medium or low heat (depending on your stove and frying pan) for 2-3 minutes on each side. I fry for 3 minutes, I like them to be golden brown.

These flatbreads taste better already cooled. In the basic version (only eggs and cereal), they turn out bland and dry. But they can be used as a base for a sandwich, for example, with cheese or even caviar;) With the addition of banana, oatcakes become softer.

How to make a diet pie?

Dietary baked goods are confectionery products made from low-calorie products. For any baking, housewives use flour with high energy value.

We learn how to cook baked goods using corn, rice, and buckwheat flour, and as a result we reduce the calorie content of baked goods. Even with rolled oats flakes you can bake aromatic cookies, which will serve as an excellent snack while on a diet.

  • instead of margarine, add low-fat cottage cheese;
  • from a chicken egg we beat only the white into the dough;
  • replace sugar with a spoon of honey;

  • Beat one egg into the mixture, add salt, add half a pack of low-fat cottage cheese and 210 g of ground whole grain flour.
  • Knead the dough thoroughly and transfer it to a warm place for half an hour.

Dietary “recessed” dough:

  • For pies, prepare a special dough consisting of yeast according to the instructions, 2 eggs, 2 tbsp. milk, 400 g whole grain flour, a pinch of sugar and salt.
  • To get truly healthy baked goods, replace eggs and sugar with water and baking powder.
  • The proposed recipe is used for baking pizza or savory pies.

Other recipes for preparing dietary baked goods:

  • for cookies mix 2 tbsp. oatmeal with 600 g of dried fruits, nuts and banana;
  • To prepare yeast-free dough without adding eggs, mix 0.5 tbsp. oil and water, salt, add 2 tbsp. flour.

In baking, wheat flour is replaced with buckwheat, corn, flaxseed, and coconut. In chocolate desserts, we mix the dough with rye flour; to make cookies, we use wholemeal flour.

We don’t always deal with a classic casserole, because most recipes involve the use of low-fat cottage cheese, and pieces of apples, pumpkin, and stewed cabbage can serve as fillings.

Follow a simple step-by-step recipe for homemade dietary baking to enjoy flavorful cookies.

  • 2 eggs;
  • 2 cups oatmeal;
  • sweetener;
  • cinnamon;
  • a handful of raisins.
  • Beat 2 eggs with vanilla sugar into a strong foam.
  • Separately mix the dry ingredients - 2 cups of extra oatmeal with sweetener and cinnamon, add a handful of raisins or other dried fruits.
  • Mix the dry and liquid components.
  • If you get a liquid consistency, pour the dough into silicone molds.
  • Spoon the thick dough onto a baking sheet previously lined with baking paper.
  • Place in the oven until done.

Curd cheesecake

  • 50 g oatmeal;
  • 20 g honey;
  • 20 g flour;
  • 1 tbsp. l. vegetable oil;
  • 50 g sugar;
  • 1 tbsp. l. semolina;
  • 600 g cottage cheese;
  • 2 eggs;
  • 20 g honey;
  • vanilla sugar.
  • Grind 50 g of oatmeal in a food processor until crumbly.
  • Mix the crumbs with 20 g of honey, 20 g of flour and 1 tbsp. l. vegetable oil.
  • Transfer the dough to a greased pan and place in the refrigerator for 20 minutes.
  • To fill the apple, peel and core it, cut it into slices, bake in the microwave until soft, and blend in a blender until smooth.
  • Grind applesauce with 50 g of sugar, 1 tbsp. l. semolina, 600 g of cottage cheese, 2 eggs, 20 g of honey and vanilla sugar.
  • Transfer the filling onto the dough.
  • We place the mold on a baking sheet, where we pour boiling water, making sure that the water reaches the middle of the mold.
  • Bake until done in the oven at 160C.
  • The finished cheesecake should rest in the refrigerator until morning.
  • 1 kg oatmeal;
  • half a pack of low-fat cottage cheese;
  • 30 g sweetener;
  • spoon of butter;
  • 1 egg;
  • cinnamon powder, sesame seeds, vanillin, soda.
  • First, mix the cereal with cinnamon powder, sweetener and soda.
  • Add chopped butter and egg.
  • After the flakes swell.
  • Grind the dough with low-fat cottage cheese.
  • Gently mix the ingredients.
  • Spoon the cookies onto a baking sheet and transfer to the oven.
  • After 20 minutes at a temperature of 180C, we treat guests to dietary pastries.

Dietary baked goods made from cottage cheese

  3. Add cottage cheese to the cherries, mash everything with a fork.
  4. Add beaten eggs to the cherry-curd mixture and stir.
  5. Add flour and semolina, bring the mixture until smooth and leave for 10 minutes.
  6. Preheat the oven to 180 degrees, lightly grease the baking dish with butter, pour the dough into the container and bake the pie for 40 minutes.

Classic cottage cheese casserole

This recipe can be safely included in any diet menu, as it is ideal for a complete, low-calorie, nutritious breakfast.

What ingredients will you need?:

  • half a kilo of low-fat cottage cheese;
  • a few tablespoons of low-fat sour cream to add airiness;
  • two chicken eggs;
  • a tablespoon of sugar;
  • four tablespoons of butter;
  • two tablespoons of semolina;
  • a pinch of vanillin and salt;
  • breadcrumbs;
  • one apple.

Oatmeal pancakes with zucchini

To prevent the flatbreads from turning out dry, when kneading the dough, it is recommended to add one ingredient with juicy pulp. The zucchini will make the pancakes soft and they will stay that way for several days. If, of course, they survive until that time.

The recipe for oatcakes is quite simple:

  1. Grate a small zucchini coarsely or cut into cubes. Place in a bowl, add salt and leave on the table for half an hour. During this time, liquid will be released from the zucchini, which must be drained before adding the vegetable filling to the dough.
  2. In a separate container, mix oat flour (1.5 tbsp), flakes (1.5 tbsp), salt (1 tsp) and baking powder (2 tsp).
  3. Add zucchini, a glass of milk and vegetable oil (2 tbsp.)
  4. Knead the dough. Divide it into small “balls” and form round cakes from them on a baking sheet lined with paper. Brush the top with beaten yolk and sprinkle with pumpkin seeds.
  5. Place the baking sheet with the tortillas in the oven, preheated to 220°, for 10 minutes.
