How to cook fermented baked milk at home

You can make a healthy product yourself from regular milk. The benefits of homemade fermented baked milk will be enhanced by guaranteed quality ingredients. There are two main recipes for preparing the product.

In the oven

To prepare the product you will only need 2 liters of milk and a small amount of cream.

  • In an enamel container, bring the milk to a boil and then cook over low heat for 1.5 hours.
  • When the color of the milk turns light beige, remove it from the stove and place it in an oven preheated to medium temperature for another half an hour.
  • After this time, a brownish foam should form on the surface of the milk. If it appears, the milk is removed from the oven, cooled to 40 ° C, and then 2 large spoons of cream are added and mixed.

Then the product can only be fermented, wrapped in a blanket and left in a warm place for 10 hours.

Advice! Before adding cream, you need to make sure that the milk temperature does not exceed 40 ° C. If it is too hot, the fermentation process simply will not begin.

In a slow cooker

If you have a multicooker at home, it will be even easier to prepare the product, and the benefits of thermostatic fermented baked milk will be even greater than store-bought ones.

  1. Milk is poured into the bowl of the kitchen unit and the “stewing” or “milk porridge” mode is set. It is necessary for the milk to simmer inside the multicooker for about an hour at a temperature of 100 °C.
  2. After an hour, the device will need to be switched to the “heating” mode and left for another 6 hours.
  3. After this, remove the bowl of milk from the multicooker, allow the drink to cool to 40 °C and add cream.
  4. The fermented milk is returned to the multicooker and put on heating mode for another half hour, and then turned off and simply left under a closed lid for 8 hours.

Varenets and ryazhenka - differences, cooking technology

The Slavs began preparing these products long before the advent of electric and gas stoves or ovens. The milk languished in the oven for a long time until it reached the desired consistency. The season for preparing Varents and ryazhenka was mainly in the winter. During this period, stoves were lit to warm the house and at the same time enjoy the taste of baked milk.

Fact! Despite the fact that similar products are sold in any store, housewives try to preserve folk traditions. True, now the cooking process is carried out on modern stoves.

With a large number of identical qualities, in order to understand the difference between Varenets and ryazhenka , you need to study the process of preparing each product separately.

How to prepare Varenets

The cooking process is divided into 2 stages. First, the milk mixed with cream is placed in an oven preheated to 120 degrees. At home, earthenware is traditionally used. The ingredients are in the oven for about 7 hours, after which the almost finished Varenets is put in a cool place for another 5-7 hours. Before sending the product to settle, add a little yogurt, saturating it with beneficial bacteria.

Cooking fermented baked milk

The oven must first be preheated, but the temperature should not exceed 100 degrees. Otherwise, fermented baked milk will lose many beneficial properties that appear during the breakdown of proteins. Also, incorrect temperature conditions negatively affect the taste.

The milk in a deep clay vessel is placed in a preheated oven and left to simmer for 6-8 hours. During heat treatment, it becomes thicker, darkens and acquires an original taste. The dishes are removed from the oven, the contents are allowed to cool, and then sour cream is added. Ryazhenka is poured into jars in portions and left to sit for a while.

What is the difference

Based on the differences in the preparation process of each product, we can draw conclusions about what is the difference between Varenets and Ryazhenka :

  • preparing Varents is a longer process;
  • Ryazhenka has a brownish tint, Varenets can be distinguished by its light beige color;
  • Ryazhenka has a more pronounced taste of baked milk;
  • Varenets can be included in the diet menu, while fermented baked milk has more calories and fat content;
  • Ryazhenka contains more calcium, Varenets is rich in phosphorus;
  • kefir grains are used for the base of fermented baked milk, and acidophilus bacteria are used for Varenets;
  • Ryazhenka is a product that belongs to Ukrainian cuisine; Varenets appeared on the territory of Russia.

What is healthier: fermented baked milk or kefir

In terms of their composition and beneficial properties, fermented milk drinks are very similar; they contain the same vitamins, minerals and lactic acid bacteria. But there are also differences.

  1. Kefir is more acidic than fermented baked milk.
  2. Ryazhenka is absorbed a little faster than kefir.
  3. Ryazhenka, on average, is higher in calories: most often you can find a product with 2.5% fat content or higher, while kefir is completely fat-free.

It is worth giving preference to fermented baked milk if the acidity of the stomach is slightly increased. But kefir is better for weight loss.

How to select and store fermented baked milk

In order for a store-bought product to bring benefit rather than harm, you need to look at:

  • on the date of manufacture, the fresher the drink, the better;
  • for expiration date, the natural product can be stored for no more than 5-7 days.

It is better to purchase the product in glass bottles, as the properties are preserved better in them. In addition, through the walls you can immediately see the consistency and color of fermented baked milk: a high-quality product should be cream-colored, moderately thick and without lumps.

Store the product only in the refrigerator, and no longer than the period indicated on the package. Opened fermented baked milk should be consumed within a maximum of 2 days, after which it will spoil.
