To prepare this aromatic delicacy, it is best to take the following varieties of apples: Antonovka, Renet Simirenko, Anise, Borovinka, Saffron Pepin and similar ones. All of them are distinguished by their sourness and retain their shape perfectly when cooked.

For apple jam, ripe, but not overripe, undamaged fruits are sorted and washed thoroughly. Use slightly crushed or damaged apples to make apple butter or jam.

Large fruits are cut into slices no more than 2 centimeters wide, and small ones are simply cut in half. To prevent the apple flesh from darkening, it is recommended to blanch the slices in boiling water for about 3 minutes.

It is known that apple jam can be cooked in different ways. As with other fruits, apples can be boiled once or twice. The latter option is preferable, as it allows you to better maintain the transparency of the syrup and the shape of the apple slices.

Methods for making jam

The most popular recipe for apple jam is amber jam with slices. This delicacy turns out transparent with whole pieces of fruit, looks appetizing and very tasty. Let's start with it.

To prepare, you will need granulated sugar and fruit in equal quantities, in addition to them you need a glass of clean water and time. It will take 2-3 days to prepare such a dessert; it cannot be said that the recipe is very simple, but the result will please even avid gourmets. Once all the ingredients are ready, you can start cooking:

  1. Selected apples must be freed from seeds and stems; if there are broken parts or wormholes, remove them. The washed fruits should be divided into slices; it is advisable to cut the apples into equal parts so that they cook evenly.
  2. Place apple slices and sugar in layers in the container where the amber jam will be prepared. In this form, the bowl of apples should be left for 8-10 hours so that the sugar melts and partially dissolves.
  3. Place the fruit in its own juice on the stove and bring to a boil. There may not be enough syrup to cover all the fruits, but it is not advisable to interfere with the jam. You can gently press down the slices so that they are immersed in the juice.
  4. After everything comes to a boil, you should keep the dessert on the fire for another five minutes and put it in a cool place for the same 8-10 hours.
  5. Repeat the previous procedure: boil over medium heat for a couple of minutes and leave to infuse.
  6. The last cooking will last 10-15 minutes. After which the hot amber apple jam will be ready to go into jars.

For this recipe you need a kilogram of apples and a kilogram of sugar. Preparation:

  1. Apples are cut into thin slices.
  2. The slices and sugar are laid out in layers. The top layer should be sugar.
  3. The container with fruit is covered with a towel and left to stand for 12-20 hours. During this time, the apples release juice.
  4. As soon as the top layer of sugar has dissolved and there is a lot of liquid in the pan, you need to put it on the fire and boil it.
  5. Afterwards you need to boil the jam for five minutes, and then turn off the heat and wait for it to cool.
  6. Repeat the previous step, only boil the jam for ten minutes.
  7. The last time, bring the dessert to a boil and cook for about half an hour. The longer the jam is cooked, the darker its color.
  8. The treat is ready.
