  • 1. Wash the eggs, bring the water to a boil, immediately turn off the heat, and pierce the blunt part of each of the two eggs with a needle. The eggs should sit in NON-BOILING (or at least not very boiling) water for exactly 1 minute (this is if you cook according to the original source, I kept it for three minutes, basing my decision on my assumption - so that the layer of boiled protein would be thicker).
  • 2. Cut our lemon in half and carefully squeeze the juice from half the lemon into a separate bowl. To get more juice, you can add a little water to the squeezed lemon and squeeze the lemon into the sauce again. Please note that you don’t need to overdo it with lemon juice. One of my sauces turned out very sour, and believe me, this is not very tasty!
  • 3. Prepare the blender (whisk), use a knife to split the eggs in half, pour the liquid part of the egg into a blender glass, and scoop out the white layer from the egg shells with a spoon. Salt and beat the eggs thoroughly, pour in lemon juice, and beat thoroughly again.
  • 4. Pour 1-2 tablespoons of Parmesan into the blender glass with the sauce and whisk thoroughly again.
  • 5. Add either a few drops of Worcestershire sauce (if you managed to find it), or a little sweet sandwich mustard (this is not Russian thermonuclear mustard, but one that you can practically eat with a spoon, it is also sometimes called “Butterbrodnaya”, “French” but without whole mustards). grains). Add pepper to taste.
  • 6. Beating the contents of the glass with a blender (whisk), pour 100 grams of olive oil into the glass in a thin stream and, without stopping whisking, bring everything to a homogeneous whipped mass.

Store the sauce in the refrigerator and whisk again before using. The taste of the sauce is preserved for 1-2 days, but the consistency clearly becomes worse. If the sauce is prepared and whipped correctly, its volume will increase 1.5 times, and the consistency will be thinner than 10% sour cream. I found out for certain that the said twist with piercing the egg with a needle took place in the classic version of the salad by its creator, Caesar Cardini. I assume that the purpose of this stage is to obtain a thin layer of boiled protein, which, when ground, improves the consistency of the sauce.

Italian-American Caesar Cardini came up with his famous salad from ingredients that were on hand.
Unexpectedly, the dish quickly gained popularity not only in the United States, but throughout the world.

Since 1924, many variations of it have appeared.

You can find recipes with chicken breast and turkey meat, beef and venison, ham and bacon.

Many chefs replace meat with seafood (crab meat, shrimp, tuna, sea or river fish fillet) in their original versions of this dish.

For dietary recipes, you can also use Chinese cabbage or white cabbage instead of lettuce (traditionally romaine lettuce).

The meat is used boiled, baked or fried in a dry frying pan with a non-stick coating.

It is better to take young cabbage - its leaves are more tender.

Ingredients:

  • cabbage - 100 g
  • fillet without skin and bones - 100 g
  • whole grain bread - 50 g
  • Parmesan cheese - 30 g
  • tomatoes (cherry) - 3-4 pcs.
  • chicken eggs - 2 pcs.
  • garlic - 1 small clove.
for the sauce:
  • yogurt - 50 ml
  • lemon juice - 1 tbsp.
  • salt - 1/4 tsp.
  • mustard - 1/4 tsp.
  • boiled yolk - 1 pc.

Preparation:

  1. Boil the fillet (peeled from skin and fat) in salted water with the addition of spices. Cut the cooled meat into cubes or separate into small pieces.
  2. Let's boil the eggs. Two are enough for us - we’ll take 1 yolk for dressing, and the rest for the salad.
  3. Coarsely chop the cabbage and, adding a little salt, knead it with your hands.
  4. Dry the bread, cut into cubes, in a hot frying pan until golden brown.
  5. Cut the cheese very thinly into small petals or grate it. Cut the tomatoes into halves or quarters.
  6. In a blender, beat all the ingredients for the sauce.
  7. Let's warm up a flat plate a little and run a cut clove of garlic over the entire inner surface - we don't need the taste and pungency of garlic, but the smell is simply necessary for piquancy.
  8. Place all the ingredients beautifully on the dish in layers: cabbage, meat, eggs, crackers, grated cheese. Pour in the sauce and garnish with cherry tomatoes.

Salad with shrimp and Chinese cabbage is a different taste.

We’ll make a dietary sauce for it using olive oil.

Whole grain crispbread is perfect for this.

We need:

  • Chinese cabbage - 200 g
  • shrimp – 300 g
  • whole grain bread - 1-2 slices
  • cheese - 50 g
  • tomatoes - 2-3 pcs.

  3. Grind the cheese on a grater.
  4. Break the bread into small pieces.
  5. In a blender, mix all the ingredients for the sauce - the mass should be thick and homogeneous.
  6. Place cabbage, vegetables and shrimp in a salad bowl. Sprinkle with cheese and add pieces of bread. Pour over the sauce.

  • eggs - 2 pcs.;
  • lemon juice - ½ lemon;
  • garlic - 2 cloves;
  • salt - a pinch;

Preparation includes the following steps.

  1. Cut the loaf into small squares. Drizzle with oil, add a little salt and bake in the oven.
  2. Boil the chicken fillet. Cut into small strips.
  3. Grate the Parmesan cheese.
  4. Wash the lettuce leaves, dry them and tear them into 2-4 pieces with your hands.
  5. The sauce can be made from whole eggs or just the yolks. In the first case, put them in boiling water for 1 minute.
  6. In the second, separate the yolks from the whites.
  7. Peel the garlic cloves and grate them on a fine grater. Add mustard, lemon juice and yolks. Add olive oil and beat everything.
  8. Pour ½ of the sauce over the lettuce leaves and toss gently.
  9. Place the chicken pieces and croutons on top and pour the remaining sauce on top. Sprinkle with grated Parmesan.
  10. Stir lightly and serve.
