How is cocoa butter produced and does it contain caffeine?

Since beans collected from trees do not have a particularly pleasant aroma and do not have strong taste, to improve them, fermentation and drying are carried out while still on the plantation. They are sorted and subjected to heat treatment.

After crushing the dry beans, cocoa nibs are obtained. Next, the product is ground into powder. Ground cocoa is the raw material for chocolate production. Its fat content is from 52 to 56%.

The oil obtained by pressing differs in the degree of purification and can be intended for:

  • cooking;

As for caffeine, it is present in cocoa, but it is much less than in coffee. A person gets an invigorating effect from consuming the product rather due to the antidepressant phenylethylamine and theophylline.

The caffeine content depends on the country in which the cocoa tree was grown; the figure can range from 0.05% to 0.1%. Such a product cannot cause serious damage to the heart. However, given the invigorating effect of cocoa, drinking it before bed is not recommended, at least not in large quantities.
