This is a very good option for a sweet treat when you want to have fasting days and take a break from too high-calorie baked goods. And if you have your own vegetable garden and apple trees grow in it, then you will definitely have to make apple marshmallows. You can store it in the refrigerator, wrapping it tightly in cling film. But, I want to tell you that it is eaten very quickly, and absolutely everyone likes it, so by wrapping the pieces of apple marshmallow in rolls and packaging it beautifully, it can be given as a sweet gift. This natural and low-calorie sweetness is suitable for those on a diet and for a change during fasting.

To prepare apple marshmallow at home (in the oven), you will need a minimum of ingredients - in fact, the apples themselves, and preferably green ones, they contain more pectin. I usually make marshmallows from Semerenko apples, adding just a little sugar and water. If you take apples that taste sweeter, then you don’t even need to add sugar.

First, wash the apples and cut them into slices, removing the cores.

Now put the apple slices in a saucepan or stewpan.

Cover with a lid and place on low heat. The apples should soften, this will take 20-30 minutes. When they look like in the photo, remove the pan from the heat, let the apples cool a little so as not to get burned, and carefully drain the resulting juice. You can simply drink it, because it is very tasty and resembles not even juice, but jelly.

Now the apple slices need to be peeled. You can do this through a sieve, grinding the whole mass in parts or removing the peel from each slice separately with a spoon.

Pour sugar into the resulting applesauce and again put it on low heat and boil the puree for 15 minutes. Then we turn it into a homogeneous mass using an immersion blender.

Cover the baking sheet with parchment and grease with a small amount of vegetable oil. This will make it easier to remove the finished pastille from the parchment. Spread the applesauce in an even layer on the parchment paper.

Place the baking sheet in the oven and dry the marshmallow at 130 degrees for an hour and a half, opening the door a little while drying. To do this, I simply place a spoon between the door and the oven itself.

The finished apple marshmallow looks like this. While it's hot it will be a little soft, just leave it at room temperature and it will cool and harden. To make it easier to remove from the parchment, cut the parchment together with the marshmallow with scissors.

Now, prying on one side, remove the marshmallow from the parchment paper and roll each piece into a roll.

How to make apple pastille with sugar

We take sour varieties. Antonovka is ideal for this method of preparing dessert: it contains a lot of pectin. Place two kilograms of apples on a baking sheet, add half a glass of water and bake in the oven for 40 minutes at 170 degrees. Cool slightly and puree (or puree in a blender). Transfer the apple mass to a saucepan and simmer over very low heat, stirring occasionally, to 2/3 volume. The puree will become thick and slightly golden in color. It should be cooled. If juice appears, strain it: we don’t need excess liquid. Transfer to a mixer and beat. When the mass turns light, add a glass of sugar. Continue whisking until the crystals are completely dissolved. 1. Peel the apples (optional), remove the seeds and cut into slices. Place them in an aluminum pan and cover with sugar.

A filled 5 liter pan requires about 1 cup of sugar. Glass - 200 ml.

2. Pour 1 glass of water into the pan, put it on medium heat and cook for 15-20 minutes under a closed lid until the fruit is completely softened. If the pan is not aluminum or thick-walled, then you need to stir constantly so that the apples do not burn.

3. Then mash the fruits with a blender until pureed. And we continue to evaporate the puree for another 20 minutes over low heat to remove excess moisture.

It is especially important to continue stirring here, because... Without stirring, the puree begins to “gurgle”, scattering pieces of apples around it.

Then remove the puree from the heat and let it cool.

4. Take a baking sheet, line it with parchment paper, sprinkle with cinnamon and distribute the applesauce evenly.

There is an interesting point here: the thicker the layer, the sweeter the marshmallow will be. And the thinner, the correspondingly more sour.

  • Apples – 1 kg

Step-by-step cooking process at home

  1. Wash the apples thoroughly.
  2. Cut each of them into four slices. We remove the cores with seeds, and also try to remove all the wormholes that are on the apples. You can also peel all the skin off the apples at this point.

After performing the described actions, the syrup is removed from the stove and cooled to 70 degrees at room temperature. Then it is poured into the applesauce and whipped at low speed using a mixer.

To prepare this delicacy, apples are thoroughly washed, cored, and then cut into small slices, which are placed on a baking sheet lined with baking paper.

Having prepared the fruits, they are sent to the oven, preheated to 170 degrees. Observing this temperature regime, the apples are baked for about twenty minutes.

After this time, all products should become as soft as possible. They are removed from the oven, placed in a fine sieve and intensively ground with a masher.

Add half of the granulated sugar to the resulting puree and beat with a mixer until a fluffy and light mass is formed. This process may take you about 20 minutes. Beat the egg whites with the remaining sugar in exactly the same way. In order for them to form a stable and fluffy mass, it is recommended to first keep them in the refrigerator.

After processing the applesauce and egg whites, combine them in one bowl and continue beating until smooth.

Forming and heat treatment process

Having received a fluffy and airy mass, they begin to heat treat it. About 5-6 large spoons are separated from it, and the rest of the mixture is laid out in a deep and wide mold, evenly distributed using a spatula (2-2.5 cm thick).

In this form, the product is sent to a preheated oven and dried at a temperature of 150 degrees for 6-7 hours.

After the specified time, the apple marshmallow should noticeably change in color, turn brownish and acquire a dense consistency. It is removed from the oven and carefully cut into 5-6 equal parts (strips). After this, they are greased with the previously left fruit mass and stacked on top of each other.

Having formed a multi-layer dessert, it is again sent to the oven and baked at the same temperature for about two hours.
