The national Italian dish has long been considered “our own” in many countries of the world, no matter what variations of its preparation the housewives have not come up with. A dish based on a dough base is familiar to everyone, but the vegetable base looks much more interesting; it is used when preparing zucchini pizza (recipe in the article below). Italian flatbread with vegetables is a rather exquisite treat, striking not only with its special taste, but also with its low calorie content.

Dietary zucchini pizza can be prepared with any filling, because zucchini can be combined with almost any product: from vegetables to seafood.

Zucchini pizza - recipe

Once all the ingredients are prepared, you can start preparing the zucchini pizza. Wash the zucchini. If desired, the skin can be removed with a knife or vegetable peeler, especially for ripe fruits. Grate the zucchini on a coarse grater.

Peel the onion. To prepare zucchini, half an onion will be enough. Cut it into cubes.

Add to bowl with zucchini.

Salt the zucchini with onions and sprinkle with spices.

Beat in the eggs.

Mix everything.

Add flour.

It is advisable to first sift the wheat flour through a sieve. Stir the zucchini mixture again.

The zucchini dough for making pizza is ready. Let's put the bowl with it aside. Now let's prepare the other products needed for zucchini pizza - tomatoes, cheese, sausage.

Wash the tomatoes. Remove skin from smoked sausage. Cutting it for pizza can be very different. For zucchini pizza, you can cut the sausage into cubes, circles, half circles, or strips. This time I decided to cut it into slices.

Cut the tomatoes into slices.

Grate hard cheese on a coarse or medium grater.

Now we move on to the next stage - frying the pizza. Pour some sunflower oil into the pan. Let it warm up. Carefully pour the squash batter into the hot pan. Use a spoon to adjust the dough so that the zucchini pizza base is even.

Cook the squash over low heat for about 3 minutes. After that, turn it over to the other side using a wide spatula.

The main thing is not to overcook the pizza so that it doesn’t burn. Grease the crust with mayonnaise. I take the pan off the stove. I grease it with a tablespoon.

Arrange pieces of tomatoes and sausage according to your taste.

Sprinkle the pizza with grated cheese.

Place the pan with the zucchini pizza on the stove. Cover it with a lid. Keep it on low heat for no more than 5 minutes. The cheese on the pizza should melt, but the tomatoes should retain their shape.

Transfer the finished pizza to a plate. Sprinkle with chopped herbs. Cut into pieces and serve. Zucchini pizza

There is an opinion that the less flour in the pizza dough, the tastier and more tender the crust will be. Zucchini in this sense is a rather complex product, since a lot of juice is released from them. An excellent solution to this problem can be the use of zucchini pulp, which remains after squeezing the juice in a juicer.

This is interesting! A very interesting taste is obtained if you use zucchini pulp together with cucumber and herb pulp.

The proportions of the products in this recipe are as follows:

  • 2 cups zucchini pulp;
  • 2 eggs;
  • 3-4 tbsp. spoons of flour;
  • 0.5 tsp salt;
  • ground black pepper to taste.

The cake is mixed with the egg, flour and spices are added.
Mix everything thoroughly and place it on a heated frying pan greased with sunflower (or other vegetable) oil. The dough should be evenly leveled with a spoon so that there are no obvious differences in the thickness of the layer. The pizza crust is baked under the lid for about 7-10 minutes, opening the lid slightly from time to time - this will allow excess moisture to evaporate. A frying pan about 25 cm in diameter is well suited for the amount of dough received - this way the dough will not be too thick.

Once the dough has set, you can put the filling on top. There is complete scope for imagination here. To maintain the diet of the pizza, you can use a vegetable set. The first layer is laid out onion cut into half rings, mixed with pieces of butter. All this is salted and peppered to taste.

Then lay out the tomatoes, sprinkle them with salt and sugar, you can add a little dried oregano. Sugar will smooth out the tomato sourness and enrich their taste. Sprinkle chopped garlic on top.

The final chord, as always, is grated cheese. After this, the pizza is covered with a lid and baked over low heat until fully cooked - about a quarter of an hour. Cool the dish in the pan; you can only remove the cooled pizza from it - this will reduce the risk of the crust breaking. It is cut into portions, decorated with herbs and served.

Advice! This recipe uses quite a bit of flour, so there is a risk that the pizza slices won't hold up very well. To be on the safe side, you can add a little more flour to the dough.

If the caloric content of the dish is not in the first place, you can safely add boiled meat, sausage, sausages, pickled mushrooms and other favorite ingredients to the filling, each time getting a new tasty and healthy pizza.

Actually, today I will share with you this discovery of mine. What did I personally like about this zucchini pizza recipe? Firstly, no minced meat, sausages, etc. Secondly, no test. Thirdly, it is prepared quickly and easily. Fourthly, it is an excellent alternative to the usual ones, but it is baked in the oven, therefore, minimal oil is consumed. So, let's take it in order...

  • Let's take:
  • two small or one large zucchini;
  • two or three medium tomatoes,
  • a bunch of dill (you can use any other greens that you personally like);
  • two or three eggs;
  • 2-4 table. spoons of flour (depending on the consistency of the grated zucchini);
  • a teaspoon of baking powder;
  • approximately 200 grams of cheese.

Peel the zucchini and remove seeds. Grate in a large bowl so that it is convenient to knead the “dough” there. You can use a regular large grater, but as usual, I use my favorite one with a medium attachment.

Unfortunately, this time I was so carried away by the process of preparing zucchini pizza in the oven

, that I practically didn’t take pictures... But the essence, I think, will be clear anyway. First, grate the zucchini. Please note: if the zucchini releases a lot of moisture, it is better to squeeze it out and remove it. I grated my zucchini, sprinkled it with a little salt, and let it sit. I drained the juice, but there was very little of it.

Then add chopped greens to the grated zucchini. First add 2 tables. spoons of flour and two eggs (the original had 3 eggs, but I saw that two were enough). Mix everything thoroughly. If you see that the mass is too “liquid”, add another spoonful of flour. The consistency should be a little thicker than for pancakes, but not so much that the spoon “stands” straight.
