Chicken broth is an excellent supplier of protein to the human body. Protein is needed for the structure of all organs without exception, but “getting” it in modern conditions of refined carbohydrate food is an extremely difficult task. In addition, chicken broth, with a calorie content of about 20 grams per 100 grams, will support the growth of only muscle mass, bypassing fat mass, which, for example, pork broth cannot boast of. It has a calorie content that is 2 times higher than that of a poultry dish.

It also leads in the content of polyunsaturated fatty acids. These are the same acids, thanks to the presence of which, a person is not afraid of hypertension, heart attacks and other heart diseases. The ability to strengthen memory and reduce irritability and aggression is not the least of the positive aspects. Also, this broth, whose calorie content is reduced by boiling the chicken in plenty of water, helps to gently normalize blood sugar levels. And when this factor is balanced, the person leaves fatigue and weakness.

Techniques to reduce the calorie content of chicken broth

  • You only need to put the meat in cool water. When water is heated, some harmful substances “leave” from the meat;
  • After boiling the meat for 5 minutes, the first water must be drained. After such an operation, most of the harmful substances and some amount of fat will be removed. The pan and meat must be washed;
  • After the water boils for the second time, it is necessary to remove the remaining “dirt” from the surface with a slotted spoon.

A person’s diet must be balanced, because to maintain health, the body’s cells need not only chicken broth, but also other minerals found in carbohydrates, proteins, vegetables/fruits, and high-quality drinking water.

At different periods of life, the human body consists of 60–90% water, so high-quality drinking water is of paramount importance for its health.

Water quality can be improved in modern conditions in several stages:

  • Pour tap water into a porcelain or glass container and let it sit for at least 24 hours;
  • Pour the settled water into plastic bottles and put them in the freezer for at least a day so that it freezes completely;
  • Remove the plastic bottles from the freezer and let the water thaw naturally. The resulting water is suitable for consumption, but the resulting sediment must be poured into the sink. This water will make excellent chicken broth.

Calorie content of broth

A few words about the calorie content of skinless chicken broth. The fact is that the number of calories changes in positive and negative directions due to the presence of skin and cartilage in the dish. If you are going to prepare a dietary product for postoperative nutrition, then fat and skin should be removed from the chicken carcass. The calorie content of chicken broth made from chicken breast with skin can be up to 100 calories per 100 grams! This fatty stew is good for exhaustion of the body. But for people suffering from gastrointestinal problems, a leaner option will be more beneficial. There is always a way out, and in this case too. Chicken broth from skinless chicken breast with a calorie content of 15-18 calories is the most optimal solution.

How to reduce energy value and reduce calorie content: methods and methods

There are several methods you can use to reduce the calories and nutritional value of chicken broth. They will also help get rid of harmful accumulations that could be in chicken meat. Here are just a few of them:

  1. After the water boils, it should be drained, pour clean cold water over the chicken meat and continue the cooking process. The fact is that many harmful substances and most of the fat go into the first water. By draining this water, you can reduce the nutritional value of the broth.
  2. When boiling water with chicken meat, a lot of foam usually forms. This is a soluble protein, but many harmful substances contained in meat also dissolve in it. Therefore, the foam, especially after the first boil, must be removed. If after the first removal of foam a lot of it forms again, the procedure should be repeated. Also, this simple action will help keep the broth clear and prevent cloudiness (this rule should especially be followed when cooking chicken jellied meat).
  3. The calorie content of broth is usually calculated based on the 1:1 ratio of meat and water. However, if the amount of water is at least twice the amount of meat, the calorie content of the broth will noticeably decrease. Thus, to prepare a less calorie broth, you should take as much water as possible and as little meat as possible.
  4. Most of the fat in the broth comes from the skin and fat of the chicken. Therefore, when preparing a broth with a reduced calorie content, all veins and skin (and especially the fat itself) should be removed. Broth cooked with pure fillet will have less calories.
  5. If the broth is cooked not only on fillets, but also on bones, it should not be cooked for long. With prolonged cooking, the broth may become heavier and more suitable for preparing jellied meat, but this will negatively affect the preparation of dietary dishes.

  • Proper, tasty and rich broth can only be obtained from real chicken - one that did not grow in poultry farms, but walked on green grass and basked in the sun. When discussing the benefits of the dish, we, of course, had in mind real chicken.
  • One kilogram of chicken component and two liters of clean water is the most optimal ratio of products for preparing healthy broth.
  • Do you want a rich stew? Then take the entire bird carcass, including bones and wings.
  • Need a gentle and ultra-diet broth? Use only breast without skin and do not add bones. Breast fillet will give the lowest calorie broth.
  • A lot of spices have no place in a delicate chicken broth. Limit their quantity and you will preserve the taste of the dish and its aroma.
  • It happens that you still have to use a carcass from the store to prepare the broth. To minimize the risks associated with the presence of antibiotics and hormones that may be in such a bird, as well as the calorie content of chicken broth, the first water that boils must be drained.

Do you want the broth to satisfy your taste needs in addition to its benefits? For 300 grams of chicken (pulp or all elements) you need 2 liters of clean water. Vegetables: carrots, celery, bay leaf and a few black peppercorns (better to chop, it will be tastier). Then remove the foam from the boiled meat, remove it constantly, otherwise it will spoil the transparency of the broth. After removing the foam, add vegetables and seasoning to the bowl with the chicken. If the vegetables themselves are not needed in the dish, but a healthy and tasty broth is needed, you can add them whole. After the stew is cooked and the chicken meat is cooked, you can remove the vegetables from the dish.

Preparing the broth from the moment it boils takes about 40 minutes. Leave a gap between the pan and the lid to allow excess steam to escape, this will help the broth stay within the confines of your pan. To obtain a clear decoction, do not allow the liquid to boil very rapidly. It is advisable to strain the finished aromatic broth to remove flakes and other small possible particles. If there are no contraindications from doctors, then you can add the greens that you like to your recipe. The finished product can be stored in a cold place for about five days. But remember that every next day leaves less and less chance for the beneficial elements from chicken broth to enter your body. And after five days, the broth becomes unusable and even dangerous.

How to properly prepare broth?

To prepare, take a medium-sized domestic chicken:

  1. We rinse the carcass, place it in a pan and fill it with cold water, which should be 1.5-2 times more than the weight of the chicken.
  2. Place the pan on the stove and cook over low heat. Cold meat leaches more slowly, resulting in a cleaner, richer-tasting broth.
  3. After the water begins to boil, set the temperature to the lowest heat and cook for 3-4 hours. Cooking time for domestic chickens depends on their age. For the oldest age group it will take about 4 hours.
  4. The rising foam during boiling must be constantly collected.
  5. Meanwhile, peel the vegetables: leeks, carrots, parsley root. Cut them into small pieces. Towards the end of the broth cooking time, load the vegetables into the pan, add salt and place the onion halves separately. The longer the broth simmers with vegetables, the more flavorful it will be.
  6. We take the carcass out of the pan; you can later use it to prepare, for example, chicken fricassee.
  7. Strain the broth through a sieve. It can be consumed with or without vegetables. The cooled broth can be stored in the refrigerator for 4-5 days.

The calorie content of one serving of such broth will be 226 Kcal.
