How to make delicious pp-meatballs

This dish is somewhat reminiscent of pp cutlets, but the preparation of meatballs is a little simpler - they are either baked in the oven or stewed. That is, there is no need to turn anything over or cook in several batches.

Meatballs are prepared from minced chicken, turkey, beef, rabbit and even fish. The main thing is that there are no bones or skins in the meat or fish - clean fillet. And so that the meatballs fit not only into the pp, but also into the weight loss menu, do not forget to trim off any fat.

Chicken meatballs in the oven

Chicken fillet is the ideal meat for pp-meatballs. In this recipe, it is supplemented with vegetables, herbs and cooked in the oven, that is, the dietary qualities here, as they say, are level 80! With a low calorie content, the nutritional value of meatballs remains high, that is, after a lunch of 3-4 meatballs and a serving of buckwheat porridge, you will not feel hungry for a long time.

Ingredients:

  • chicken fillet – 400 g
  • Savoy cabbage – 60 g
  • potatoes – 1 pc.
  • dill – 1 bunch
  • chicken egg – 2 pcs.
  • salt – 0.5 tsp.
  • spices to taste – 1 tsp.
  • sour cream 15% - 100 ml
  • tomato sauce – 100 ml
  • water – 1.5-2 tbsp.

Recipe:

Cut the chicken fillet into pieces, before doing this, cut off the fat, if any, remove the bones (sometimes breasts with the remains of the keel are sold).

Chop the cabbage. I have Savoy here, but by and large you can have a wide variety - from cabbage to cauliflower and broccoli. Replacing cabbage will not affect either the KBJU or the taste.

Rinse the dill in cold water and finely chop. Reserve often for gravy and place the rest in a bowl. You can replace a bunch of fresh with 3-4 tbsp. frozen.

Add salt and spices to the prepared products.

Peel the potatoes and cut into cubes.

Grind the contents of the bowl in a chopper, adding eggs. It’s very convenient to put everything into a blender with good blades and puree. You can also mince it.

Mix sour cream with tomato sauce. Pour the mixture into the mold, add water.

Form meatballs with wet hands. Place the meat balls in the mold and pour the sauce over them. Sprinkle dill and salt on top.

Bake dietary meatballs from minced chicken for 25 minutes at 180 degrees, covered with foil. Then remove the foil and cook for another 15-20 minutes.

Dietary beef meatballs

And these are meatballs that could be called classic if the rice were not brown, but white. The taste is almost indistinguishable from the usual ones “like in kindergarten”, but they are much healthier and tastier.

We will need:

  • beef or veal - 300 g
  • 1 egg
  • 0.5 tbsp. brown rice
  • spices and salt - to taste
  • 2 large onions
  • 2 small carrots
  • milk - 1 tbsp.
  • water - 1 tbsp. for gravy and 1 tbsp. for cooking rice.
  • fresh or frozen tomatoes - 3-4 pcs.

Cooking process:

  1. We wash the rice and add a glass of water and cook. Here are details about cooking brown rice, but we don’t need it to be completely cooked, so we just cook it until all the water has evaporated.
  2. We clean the onions and carrots.
  3. Pass the meat, 1 onion and 1 carrot through a meat grinder.
  4. Salt and pepper the minced meat, add any spices you wish, beat in the egg, pour in the cooled rice and mix everything well.
  5. We form balls and place them in a deep frying pan in one layer.
  6. Chop the remaining onion into cubes and place on top of the meatballs. Three carrots on a fine grater and also pour into the frying pan.
  7. We do the same with tomatoes.
  8. Fill everything with a glass of water, add a little more salt and, covering with a lid, cook the meatballs over medium heat for 20 minutes.
  9. Then pour a glass of milk and simmer on low for another 10-15 minutes. It turns out very juicy and appetizing.

Steamed meatballs recipe

Steamed meatballs are easy to prepare and look delicious. This recipe is for a slow cooker, but if you don’t have such a device, then simply bake it in the oven or deep frying pan under a lid, as in the previous versions. And we will make them from rabbit, although any meat is quite suitable.

How to cook “Dietary meatballs from minced chicken”

1. Before starting cooking, rice must first be boiled until half cooked. For dietary cutlets, it is better to put onions and carrots raw in the minced meat, and you can also fry them a little in butter.

2. Add onions and carrots to the minced meat, as well as egg, rice and salt. Season to taste and mix the mixture well until smooth.

3. Form meatballs and place them in a baking dish. Prepare the sauce separately.

4. Bring tomato juice (or fruit drink) to a boil, add spices (bay leaf, peppercorns or a mixture of peppers).

5. Pour the sauce into the mold, place the dietary chicken meatballs in an oven preheated to 180 degrees. If you decide to cook the meatballs on the stove, place them in a non-stick pan and pour a little sauce over them. Simmer for about 25 minutes over low heat. If you decide to bake the meatballs with sauce, leave them in the oven for 20 minutes. During this time, the sauce will be absorbed and the meatballs will turn out very juicy.

6. Serve the meatballs hot along with a side dish. Boil mashed potatoes or any porridge, pour gravy over the side dish and serve along with pickles or fresh vegetables. Bon appetit!

What you need to know about dietary nutrition?

As already mentioned, for many people, diet and hunger strike are synonymous words. Yes, of course, a dietary diet implies some restrictions and refusal of certain foods, but meat treats cannot be completely excluded.

Meat primarily contains protein, which is considered a building block not only of muscle tissue, but literally every cell in our body.

Meals should be complete, so you can add dietary chicken meatballs in the oven to your menu. Yes, it is best to cook meat treats in the oven. In this case, the dish will not contain excess fat.

Of course, preparing a dietary dish from pork tenderloin or lamb is something fantastic. It is better to give preference to turkey and chicken breast. Veal is also suitable.

Important! Industrially produced semi-finished minced meat has a questionable composition, so you cannot be 100% sure of its quality and freshness. It is better to buy, for example, chicken fillet or veal and grind it in a meat grinder.

Cooking features:

  • minced pork and lamb are not suitable for preparing low-calorie dishes;
  • there is no need to fry the meatballs before baking in the oven;
  • do not use fats and refined oils;
  • exclude high-calorie ingredients from the composition, for example, hard or processed cheese;
  • Add cereals or vegetables to the minced meat, which serve as a source of carbohydrates.

Separately, let's talk about sauces. Of course, it’s unlikely that anyone will like eating unleavened meatballs. So it’s not far from psychological breakdowns. Even diet meatballs can be juicy. The easiest way to make tomato sauce is using fresh tomatoes or tomato paste.

On a note! In this case, it is better not to choose pasteurized tomato juices, since you can doubt not only their quality, but also the authenticity of information about nutritional value and component composition.

Dietary meatballs from minced chicken in the oven

So, the dish will turn out to be low-calorie and healthy only if it is cooked in the oven. No oil or fat, put all this aside for now. We will have a healthy and incredibly tasty dish.

On a note! When baking dietary meatballs in the oven with gravy made from sour cream or other fermented milk products, try to choose ingredients with a minimum percentage of fat content. Yes, forget about mayonnaise and industrial sauces.

  • chicken fillet – 300-400 g;
  • garlic cloves - two pieces;
  • salt;
  • herbs and spices - to choose from;
  • onion - one head;
  • pasteurized cow's milk – 100 ml;
  • greens - one bunch;
  • bread slices - three pieces;
  • Russian cheese – 150 g;
  • cream with a minimum fat content - 450 ml;
  • chicken egg - one piece;
  • carrots - one root vegetable.

Chicken meatballs with buckwheat

You will need:

  • 300 g boiled buckwheat
  • 1 large onion
  • 1 egg
  • 1 carrot
  • 500 g minced chicken
  • pepper and salt to taste
  1. Place the cooled buckwheat in a deep container, add the minced meat and grate some onion. Mix well. Then add the egg, salt and pepper and mix thoroughly again.
  2. Make balls the size of a chicken egg from the minced meat. Place in a large frying pan, add warm water and add salt.
  3. Cover the preparations with grated carrots and finely chopped onions. Simmer over medium heat for 20–30 minutes.

Chicken meatballs in a slow cooker with tomato cream sauce

To soften the sour taste of tomato sauce, add sour cream to it. In this recipe, use a fermented milk product with a high percentage of fat content, since liquid will be added to the sauce. Meatballs are prepared without adding grain; mashed potatoes or rice porridge are suitable as a side dish.

Take the following amount of ingredients:

  • minced chicken – 450 g;
  • onion head – 1 pc.;
  • medium chicken egg – 1 pc.;
  • spices for meat, ground black pepper, salt - a pinch;
  • breadcrumbs - 3 tbsp. l.;
  • olive oil - as much as needed;
  • warm water – 2 multi-glasses;
  • tomato paste – 2 tbsp. l.;
  • sour cream – 170 ml;
  • wheat flour – 2 tbsp. l.

Step-by-step process for cooking meatballs in a slow cooker:

  1. Chop the onion using a meat grinder and add to the minced meat. Beat the egg into the mixture, add spices, breadcrumbs and salt. Mix the minced meat well with your hands and beat for 5-7 minutes. Let it sit in a cool place for 30 minutes, then make the meatballs. To prevent the meat from sticking to your hands, moisten them with water before forming balls.
  2. Dip the finished meatballs in flour and then fry in a slow cooker in vegetable oil until a crust appears. Use the “Baking” or “Frying” function for this. While the meatballs are cooking, combine the ingredients for the sauce. Pour water into a deep container and add sour cream and tomato paste. Salt the sauce to taste.
  3. Pour the gravy into the multi-bowl, change the mode to “Stew”. Cook chicken meatballs for 40 minutes. To obtain a thick sauce, open the steam vent while simmering. After the signal, leave the dish to soak in the spices for 10-15 minutes with the lid closed. Serve the meatballs with vegetables and fresh herbs.

You will need:

  • 500 g minced chicken
  • 50 g flour
  • 2 medium onions
  • bunch of cilantro or parsley
  • 2 eggs
  • 4 cloves garlic
  • salt and pepper to taste
  1. Mix meat and finely chopped onion in a deep container. Chop the garlic and herbs, mix with the eggs and add to the minced meat. Stir in flour, salt and pepper.
  2. With wet hands, form “balls” and place in a double boiler. Cook for 25–30 minutes.

Meatballs with tomato paste

You will need:

  • 500 g minced chicken
  • 2 tbsp. l. tomato paste
  • 3 tbsp. l. whole grain flour
  • 2 onions
  • 1 carrot
  • 1 bay leaf
  • 1 tbsp. l. olive oil
  • pepper and salt to taste
  • 500 ml water
  1. Dice the onion (put half of one chopped onion aside), peel and grate the carrots. Season the minced meat with vegetables and mix thoroughly. Add salt, pepper and mix again.
  2. Form meatballs from the minced meat, roll in flour and fry in a deep frying pan until tender. Preheat it and grease it with oil.
  3. Add the remaining onion to the finished balls and lightly fry.
  4. Pour the tomato paste diluted in water over the meatballs, add salt and pepper. Simmer all this for 40–50 minutes over low heat.

Calorie content per 100 g - 71 kcal.

Chicken meatballs in a slow cooker - a traditional recipe

To make the meatballs juicy, use chicken meat from different parts of the carcass. Ham works well. The sirloin part is best used for steamed meatballs. Minced chicken fillet quickly becomes dry, so it cannot be cooked for a long time. For a flavorful gravy, use tomatoes and onions.

According to the recipe, prepare the following amount of ingredients:

  • minced chicken – 0.5 kg;
  • large onion – 1 pc.;
  • rice cereal – 200 g;
  • wheat flour - for breading;
  • chicken eggs – 2 pcs.;
  • ripe tomatoes – 0.5 kg;
  • any vegetable oil - 3 tbsp. l.;
  • garlic – 2 cloves;
  • fresh herbs – 20 g;
  • spices for chicken, salt to taste.

How to cook chicken meatballs in a slow cooker:

  1. For the recipe, you can use ready-made minced chicken, but it is best to use the chicken legs and grind it by hand along with the fat. Beat the finished minced meat well with your hands. Take some of the minced meat in your hand and forcefully lower it back into the container. Add spices, mix well, set aside for 15-20 minutes.
  2. During this time, prepare the remaining products. Rinse the rice with cold water until the color of the liquid becomes clear, then boil it until half cooked. It is not recommended to add raw cereal to minced meat, since chicken meat cooks quickly and the rice does not have time to cook. Cool the porridge, mix with minced meat.
  3. Dice the onion very finely. The tomatoes will be used for the sauce, so the skins should be removed. Boiling water will help you do this easily. Make a small cut on the top of each fruit, then lower it into the hot liquid for 3-5 seconds. Remove the tomatoes with a slotted spoon, let cool and remove the skins with your hands. Cut the tomatoes in half, remove the stem, and cut the pulp into small pieces.
  4. Add the onion to the minced meat, beat in the eggs. Add salt to the mixture and mix very thoroughly with your hands so that the ingredients are evenly distributed throughout the minced meat. Wet your hands and form balls of minced chicken. Each should be larger than a tennis ball.
  5. Turn the multicooker to the “Frying” or “Baking” option, pour vegetable oil into the bowl. Fry each meatball with the multicooker lid open until desired crust on all sides. Do not use butter for frying as it burns quickly.
  6. Add tomatoes to the fried meatballs. Instead, you can add tomato juice, tomatoes sealed in their own juice or tomato paste. In the latter case, dilute 3 tbsp. l. concentrated paste should be used for every 250 ml. water. Pour liquid into the bowl only when it is hot.
  7. Switch the multicooker menu to the “Stew” function. Close the lid and set the time for 30 minutes. Cook the dish for 20 minutes, then add chopped herbs and garlic. Continue simmering the meatballs until the multicooker beeps.
  8. Since the meatballs already contain rice porridge, they can become a separate dish. You can serve it with vegetable salad or pickled cucumbers. Don't forget to generously drizzle the meatballs with the sauce in which they were cooked.

Cheese meatballs with tomato sauce in the oven

You will need:

for meat balls

  • 400 g beef
  • 0.5 cups grated hard cheese
  • 2 cloves garlic
  • 1 small onion
  • 1 egg
  • pepper mixture
  • a mixture of your favorite herbs
  • salt

for tomato sauce

  • 700 g tomatoes in their own juice
  • 3 sprigs of dill
  • 2 cloves garlic
  • pepper mixture
  • 1 bay leaf
  • fresh herbs to taste
  • salt
  1. Sauce . Grease a saucepan or frying pan with oil. Fry the garlic (whole or cut into several pieces) for 2-3 minutes.
  2. Puree the tomatoes with a fork and add to the garlic along with the juice. Cover with a lid and bring to a boil, add whole sprigs of dill and bay leaves and keep covered over low heat for another 8-10 minutes. A couple of minutes before cooking, add salt and pepper. Fish out the dill and bay leaves and remove the sauce from the heat.
  3. Meatballs . Pass the meat through a meat grinder along with garlic and onions. Beat the egg into the minced meat, add cheese, herbs, salt and pepper. Stir.
  4. Pour the sauce into a deep baking dish. Form small meatballs the size of a nut and place in the pan at a distance of about 2 cm from each other. Bake for 15 minutes in an oven preheated to 190 degrees. Then sprinkle the balls with cheese and return to the oven for another 10 minutes.
  5. Serve the meatballs with cheese sauce and chopped herbs.

Chicken meatballs in a slow cooker from fillet in tomato sauce

Meatballs from the sirloin part of the carcass are the most tender. To avoid drying out the meat, strictly follow the specified recipe and use a slow cooker for stewing. To complement the meat dish, prepare a flavorful sauce with basil and dill.

For the recipe, take the following ingredients:

  • chicken fillet – 500 g;
  • breadcrumbs - 5 tbsp. l.;
  • chicken egg – 1 pc.;
  • sunflower or olive oil – 3 tbsp. l.;
  • tomato juice – 500 ml;
  • medium onion – 2 pcs.;
  • garlic cloves – 3 pcs.;
  • fresh basil and dill - to taste;
  • ground pepper mixture, salt to taste.

Step-by-step description of cooking meatballs in a slow cooker:

  1. Wash the chicken fillet well in cold water, be sure to cut out the film and veins. Since you will be making minced meat from the meat, then these parts should be removed. Otherwise, they will ruin the taste of the dish and its consistency. Dry the chicken to remove any remaining moisture and cut into large pieces.
  2. Remove the skins from the onions, cut 1 onion into 3-4 parts and grind in a meat grinder along with the chicken fillet. Try to alternate meat with onion parts to get a uniform consistency.
  3. Pour a small amount of boiling water over the breadcrumbs and leave to soak for 5-7 minutes. Then add to the minced meat with onions. Beat the egg there, add spices and salt. Mix the minced meat well, close the container or cover with cling film. Place in the refrigerator for 30 minutes to allow the mixture to absorb the aromas and spices.
  4. Tomato juice for use in gravy should not be raw. If you have just twisted tomatoes, then boil the juice for 15-20 minutes on the stove. Add spices, finely chopped garlic and salt to it. If you are using dried basil and dill, then add the herbs to the tomato juice at this stage.
  5. Cut the second onion into 4 parts, then into strips. Heat the vegetable oil in a multicooker bowl on the “Frying” mode. You can enable the “Bake” option instead. Fry the onion in oil until translucent, then pour the tomato and spices into the multibowl. In this mode, bring the liquid to a boil.
  6. Using wet hands, form large balls of minced chicken and carefully place them in a bowl. Close the multicooker lid and switch it to the “Stew” function. Cook the meatballs for no more than 30 minutes, since you used chicken fillet for the minced meat.
  7. To get a thicker meatball sauce, open the steam vent while cooking. This will allow the liquid to evaporate faster. If you want to add fresh herbs rather than dried ones, then place them in the multicooker bowl 5-7 minutes before the end of stewing instead of adding them to the minced meat. The meat dish does not contain cereal, so prepare mashed potatoes or rice porridge for it.

Fish balls with rice

You will need:

  • 600 g pollock fillet or any other fish
  • 200 g zucchini
  • 1 carrot
  • 1–2 small onions
  • 0.5 cups rice (preferably brown)
  • 1–2 tbsp. l. tomato paste
  • a pinch of dried thyme
  • pepper, salt, any herbs to taste
  • olive oil for frying
  1. Pass the fish through a meat grinder or grind in a blender. Mix minced meat with boiled rice.
  2. Grate the zucchini on a medium grater, chop the greens and mix with the minced meat. Add salt and pepper.
  3. Form the meatballs and place them in a frying pan or deep baking dish, greasing the container with oil. Bake at 180 degrees for 20–25 minutes.
  4. Grate the carrots on a coarse grater, dice the onion and fry with butter, tomato paste, thyme, salt and pepper. Add a little water and simmer for 3-5 minutes.
  5. Transfer the stewed vegetables to the meatballs, add water to cover the balls. Return to oven for another 20 minutes.

The calorie content of the dish per 100 g is 99 kcal.

PP dinner - fish meatballs with vegetables!

Ingredients: fish (we have pollock fillet) - 600 g zucchini - 200 g rice (preferably brown) - 0.5 cups onion - 1-2 pcs. tomato paste - 1-2 tbsp. l. carrots - 1 pc. thyme (dried) to taste herbs, salt, pepper to taste olive oil

Preparation: Cook the rice. Grind the fish fillet in a blender or meat grinder, add rice, herbs and grated zucchini. Mix the mixture well, add salt and pepper. Form round meatballs, place them in a baking dish, grease with olive oil. Bake at 180 C for about 20 minutes. Fry finely chopped onion and grated carrots, mix with tomato paste, salt, pepper and add a little thyme and water. Simmer for 5 minutes. Pour the vegetable sauce into the dish with the meatballs. Add a little water to cover the meatballs. Cooking for another 20 minutes!
