An interesting recipe for meatballs in a slow cooker

After a wonderful assistant appeared in my kitchen - the PHILIPS HD3077/40 multicooker, the daily process of cooking became completely uncomplicated and, most importantly, not so tedious, and the time was significantly reduced. Now your favorite dishes have become even tastier, and, just as importantly, much healthier.

Until recently, I cooked mainly soups and porridges in the multi, and now, having understood all the intricacies of this smart technique, I moved on to more serious dishes. One of my favorite recipes is country-style meatballs in a slow cooker; my husband and daughter are also delighted with them. This dish from traditional Ukrainian cuisine is well suited both for every day and when guests come; a dietary option is also possible if you steam it.

In general, the birthplace of meatballs is France; initially they were prepared from a single piece of meat and beaten for greater softness. Gradually, due to the lack and high cost of suitable raw materials, they began to be prepared from minced meat and minced meat, and the name, although it lost its original meaning, remained the same. I admit, I haven’t tried French meatballs, but believe me, the Ukrainian version is not inferior to its foreign relative!

For village-style meatballs we will need the following ingredients:

  • minced meat 450 g
  • mushrooms 250 g
  • onion 2 pcs
  • chicken egg 1 pc
  • tomato paste 2 tbsp.
  • flour 4-5 tbsp.
  • olive or sunflower oil 2 tbsp.
  • salt, pepper, seasonings to taste
  • sour cream and herbs (dill, parsley) for serving

Steamed chicken cutlets in a slow cooker or double boiler

Anyone who discovered dietary cuisine discovered that it can be not only simply beneficial for health, but also incredibly tasty. Even healthy people will enjoy steamed dietary chicken cutlets if they are prepared according to proven recipes.

Any steamed chicken cutlets are a dish that both an experienced cook and an amateur can do.

How to cook delicious steamed cutlets

Delicious steamed chicken cutlets can be prepared in different ways - simply from minced meat, with the addition of vegetables or cereals, cottage cheese, cheese, mushrooms.

But the main key to success is quality meat.

Most often, chicken breasts are used for this dish - fillets are easy to work with, they are more dietary, and are also suitable for those losing weight. If desired, the calorie content of breast cutlets can be no more than 120 kcal per 100 g, which is very, very little for meat dishes.

In addition to fillet, red meat cut from the legs, the fleshy part of the wing, is also perfect. In this case, the minced meat is higher in calories, but its taste is brighter and juicier.

Preparing minced chicken for making cutlets couldn't be easier. Just cut the breasts into small pieces (up to 1 cm), add finely chopped onion - this type of minced meat is called minced meat (here, by the way, is a recipe for unsteamed chicken cutlets made from minced minced meat).

You can
pass the onion and fillet through a meat grinder , you get a classic version.
But if you don’t like finely chopped cutlets, then it’s better to beat the ingredients in a vegetable cutter or blender . This way you will better feel the meat in the dish.

When the minced meat is ready, add pepper and salt to the mixture. Then you can start cooking, or you can freeze the mass.

Steamed dietary cutlets have many advantages:

  • useful for children;
  • low in calories;
  • easy to prepare;
  • can be quite varied, depending on the recipe.

Recipe with potatoes for a slow cooker

When I want an easy dietary dish without much hassle, I always remember that you can cook steamed chicken cutlets in a slow cooker. It's very simple and time-saving. Having loaded the minced chicken into the bowl, or rather into the steamer basket, I can easily get on with other things.

Another advantage of this recipe is the ability to prepare a duet dish. This means that the water that is poured into the bowl to create steam can be used to add potatoes as a side dish. Any porridge will also work because cooking it also creates steam. I always save time this way.

This recipe contains potatoes to make the minced meat softer and juicier. But to prevent the minced meat from being too liquid, the potatoes should be squeezed out . Although this ingredient is added optionally.

Ingredients:

  • chicken fillet – 700-800 g
  • potatoes – 1 pc.
  • onions – 1 pc.
  • chicken egg – 1 pc.
  • vegetable oil
  • pepper, salt - to taste.

Cooking method

Grate the potatoes on a coarse grater. Squeeze out the juice.

We will not add raw onion, as it makes the minced meat very liquid. Therefore, chop the onion finely and sauté it in a bowl with a small amount of vegetable oil. We use the “Frying” program for about 5-7 minutes.

Pass the chicken fillet through a meat grinder.

Add squeezed raw potatoes and sautéed onions to it.

Beat in one chicken egg. Sprinkle with salt, pepper and other spices to taste. You can use dry herbs.

Mix the resulting minced chicken thoroughly. Then beat it against the sides of the bowl to obtain a homogeneous mass.

Pour water into the multicooker bowl to the bottom mark or higher. Grease the steamer basket with vegetable oil. With wet hands, form cutlets of the same size as in the photo and place them in a basket. Place over the bowl and close with a lid. Select the “Steam” program in the menu and the cooking time is 30 minutes.

After the signal, carefully remove the basket from the bowl.

The cutlets turned out tasty and juicy. And most importantly, they are dietary - without frying, without bread in the composition.

From the specified amount of products you get 8 cutlets. This means that the dish needs to be cooked in two approaches or the second part of the cutlets should be frozen.

To speed up the cooking process, you need to put water in the multicooker bowl in advance (setting the “Steam” program for 30 minutes), and in the meantime, prepare the minced meat. The time countdown in this mode starts from the beginning of the water boiling.

Steamed cutlets with oat flakes

It's no secret to any mother that children hate oatmeal.

But if you show your imagination and combine minced chicken with oatmeal, you get a very tasty and healthy meat dish.

This amount of food also makes 8 cutlets.

We will cook them in a double boiler. Although a slow cooker is also quite suitable.

By the way, these steamed minced chicken cutlets also belong to pp-recipes, that is, to proper nutrition.

What you need:

  • 30 g butter
  • half a kilo of minced chicken (preferably from the breast)
  • 1 onion
  • bunch of fresh herbs
  • 1 egg
  • 150 ml milk
  • 4 tbsp. l. oatmeal
  • flour - as needed
  • salt and pepper for taste;
  • a couple of glasses of water (for a double boiler or multicooker).

Preparation step by step:

  1. Pour hot milk over the cereal for 20 minutes until it swells
  2. Combine minced meat, chopped onion, chopped herbs and other ingredients in a bowl, add salt and pepper.
    If the mass turns out to be runny, add 2-3 tbsp. flour.
  3. Mix everything well.
  4. Form cutlets with wet hands, place them in a steamer, you can first grease them with vegetable oil
  5. Cook chicken cutlets in a steamer for 25-30 minutes.

Juicy steamed chicken cutlets with cheese

These steamed chicken cutlets are not just tasty and dietary, but also delicious in a restaurant style.

What you will need:

  • 1 kilogram of minced chicken
  • 1/2 tsp. salt;
  • 1/4 tsp. ground black pepper
  • 2 tbsp olive oil;
  • any hard cheese - 200 g
  • dill - 1 bunch
  • 1 egg
  • 2 slices white bread
  • 2 slices black bread
  • garlic - 2 cloves
  • 3 tbsp. flour

How to do:

  1. Cut the crusts off the bread and soak in warm water for 5-7 minutes.
  2. Beat an egg into the minced meat, add spices, salt, grated or pressed garlic, and squeezed bread. Mix everything until smooth.
  3. Grate the cheese and mix with chopped dill.
  4. Using hands dipped in oil, form cutlets - 3 tablespoons of minced meat should be flattened into a flat cake about 1 cm thick, place 1-2 tsp inside. cheese filling, combine everything so that the cheese and herbs are inside the meat mass.
  5. Roll raw cutlets in flour and steam for 25 minutes.

Tips and secrets

It is better to serve steamed cutlets with sauces: for children or those who are watching their weight, you can make low-calorie spicy tzatziki, and for men, serve something more spicy.

You can cook steamed cutlets not in a steamer, but in an ordinary pan, tying it with gauze and securing it well, for example, with an ordinary rubber band. This method was also used by our mothers and grandmothers when they prepared delicious steamed dumplings and flatbreads.

Well, if you don’t have a double boiler or multicooker, but have a microwave, then you don’t have to bother with saucepans and gauze. Here's a great video showing how to make steamed cutlets in the microwave. You can cook any cutlets this way, the recipes for which are described above. However, the version from the video can be prepared not only in the microwave.
