Add a tablespoon of lemon juice to marshmallows of the same color and heat in the microwave (10-20 seconds) or in a water bath until they increase in volume. Advice. If you want to tint the mastic with food coloring, it is better to add it after you have taken the swollen and melted marshmallows out of the microwave. At this point you need to add the dye and mix the mass well with a spoon.

Then add the sifted powdered sugar in portions and stir the mass with a spoon or spatula. When it becomes difficult to stir with a spoon, put the mass on a table sprinkled with powdered sugar and continue kneading with your hands until the mastic stops sticking to your hands.

Wrap the resulting mastic in cling film or a thin plastic bag (so that the film fits tightly on all sides to the mastic and air does not get inside the bag) and put in the refrigerator for 30 minutes. Advice. The mastic can be stored in the refrigerator, wrapped tightly in cellophane, for up to 6 weeks; You can also store mastic in the freezer, wrapped in several layers of cellophane and wrapped in foil - mastic can be stored in the freezer for several months; Ready-made dried figures from mastic should be stored in a tightly closed box in a dry place - such figures are stored for several months. The product is sprinkled with powdered sugar and starch so that the pieces do not stick together.


  • First you need to prepare invert syrup. Dissolve sugar in water. Stirring constantly, bring the mixture to a boil. Add citric acid to the boiling mixture, stir, cover tightly, reduce heat and leave the mixture to simmer for 45 minutes. When the syrup is ready, it should be a beautiful golden-transparent color.
  • It will take approximately 1 hour for the syrup to cool. Next, dilute the baking soda in a small amount of water and add it to the syrup. If you did everything correctly, foam will appear. After 15 minutes, when the syrup is completely ready, the foam will go away. You can store the prepared liquid in a jar in the refrigerator. Don't be afraid, it won't harden, it will just become thick. If necessary, it can be used to prepare a variety of desserts and baked goods.
  • When the invert syrup is ready, you can start making marshmallows. Soak gelatin in 1.5 tbsp. water for 20 minutes.
  • Pour the remaining water into a deep saucepan, add sugar, prepared syrup and salt. Mix the mixture thoroughly and place the pan on the fire. Bring the mixture to a boil, remembering to stir constantly. After boiling, reduce heat and simmer for about 8 - 10 minutes without stirring.
  • Heat the gelatin swollen in water in the microwave or in a steam bath until completely dissolved. Pour the dissolved gelatin into a separate container and beat with a mixer. Pour the hot syrup into the gelatin mass in a thin stream, whisking constantly. Increase the speed and beat the mixture for 15 minutes.
  • While stirring, the mixture will begin to resemble marshmallows. It will stick to the whisk and stretch. Ready marshmallows can be placed in the freezer and taken out as needed. If you want to use the delicacy not for decorating baked goods, but as a delicacy, take the prepared mass, cut it into pieces and roll them in a bowl with powder and starch (1:1).

  • powdered sugar – 0.5 cups;

  • gelatin – 20 g;
  • soda - on the tip of a knife;
  • sugar – 400 g for syrup and 400 g for marshmallows;
  • salt on the tip of a knife.

Cooking steps:

  1. Prepare the syrup. Take a saucepan with a thick bottom, dilute sugar in water. When the water boils, add citric acid. Close the pan and simmer the liquid for 45 minutes over low heat. The syrup should be bright yellow in color.
  2. After the syrup has cooled slightly, dissolve soda in a dessert spoon and pour the solution into the pan. The resulting foam disappears after a few minutes. This indicates the syrup is ready. Even if the foam remains, remove the pan from the heat. If the syrup is cooked for more than 10 minutes, it turns not white, but beige.
  3. We take half of the resulting liquid, and pour what is left into a jar, which should be stored at room temperature.
  4. Pour gelatin into a glass, fill it halfway with water and leave. After this, we begin to heat the gelatin in a water bath until it is completely dissolved. But don't boil! Leave the resulting mass in the pan so that it does not thicken while preparing the syrup.
  5. Take another pan, mix the other half of the water, syrup, salt and sugar in it. Bring to a boil, continuously stirring the mixture with a spoon. After it boils, stop doing this and boil for 8 minutes.
  6. Cover the baking dish with foil or cling film and grease with vegetable oil.
  7. Turn on the mixer at minimum speed and beat the gelatin, gradually pouring in the syrup. We increase the speed and continue to do this until the mass thickens and begins to increase in size. Now you can add dye.
  8. Pour the mixture into the mold, cover with foil and leave for 6 hours.
  9. Pour sifted starch mixed with powdered sugar in equal parts onto the table. We spread the mass. Remove the foil and cut into pieces, which are then rolled in starch and powdered sugar.

The treat is ready! The dessert should be stored at room temperature in a sealed container.

What do you eat marshmallows with?

Children love to feast on cute sweet figures just like that. A small bag of marshmallows bought in a store is eaten in literally five minutes. But for adults, there are many ways to use sweets.

Let's talk about how to make mastic.

  • Warm the candies in the microwave or in a water bath. While they are heating, pour a little water, milk or citric acid solution into the mixture. To prevent the future product from being brittle and sticky, add a little butter.
  • When the mixture is heated, stir it with a spoon, gradually pouring powdered sugar into it. It will be better if you use powder and starch in equal parts. Please note that the more starch, the worse the taste of the product, but the quality of the resulting mastic is better. Therefore, you can dilute powdered sugar and starch in a 3:1 ratio.

  • vanilla sugar - 0.3 tsp;

Dissolve gelatin in half a glass of water. Leave to soak for 15 minutes or longer. To prepare the syrup, you need to mix 1 cup of sugar, corn syrup, half a cup of water and a pinch of salt.

Boil the syrup until the sugar is completely dissolved. After this, you need to keep it on the fire for about 8 minutes until it thickens, and then pour the resulting syrup into the gelatin in a thin stream. Then the mixture is whipped with a mixer and takes the form of a thick white mass. Vanilla is added at the end. If you add vanilla paste, the spice grains will be visible in the cut cubes. After this, the mass must be lightly beaten again.

The baking dish is covered with parchment and sprinkled with powdered sugar. The mass is evenly laid out on it, which is also sprinkled with powder on top. You can use a mixture of powder and cornstarch. You have to spread it quickly, because the mass thickens. The workpiece is left to harden overnight at room temperature. 12 hours is the optimal time for cooking. Then the marshmallows are cut into cubes.
