- Then skim milk, warmed to room temperature, is added to the dough, and everything is stirred again.
- The last ingredient to add to the pie dough is baking powder. You can use the ready-made version in bags, you can use ordinary soda, or you can use baking powder. This will help give the finished pie a loose and somewhat airy texture.
- The apples are washed, cut into halves, cores and seeds are removed and cut into beautiful thin slices.
- For baking, you can use a silicone mold or a detachable mold so that after baking the cake can be easily removed from it.
- Since there is not a drop of fat in the dough according to the recipe for making apple pie from corn flour, it is better to grease the mold from the inside with melted butter or vegetable oil.

I want to share my corn pie recipe with you!
I’ve recently fallen in love with corn baking, so when I found this recipe I couldn’t pass it up!
The pie is prepared very simply, it turns out tender, soft, crumbly!
Why "universal"? Because you can experiment with any fruits and additives, you can put them under the dough, in general, as your imagination tells you!

Maybe, looking at the photo, someone will think: “Charlotte and Charlotte.” Maybe a charlotte, but not quite ordinary, both in terms of preparation technology and structure: thanks to corn flour, the pie turns out to be very tender and bright yellow, and the caramelized apples are so soft, juicy and fragrant that this pie simply melts in your mouth.
I found the recipe from Yulia Vysotskaya, originally it was pear, but I baked it in the fall, there were a lot of apples at that time, it was necessary to use them somehow, so the pie became apple :) You will have to tinker with it a little longer than with charlotte, but it's worth it.
Ingredients: apples - 1 kg honey - 50 g butter - 250 g sugar - 1 glass lemons - 2 pcs. eggs - 4 pcs. corn flour - 130 g wheat flour - 40 g baking powder - 1 tsp.
Grate the lemon zest on a fine grater and squeeze the juice out of half a lemon. Wash the apples, peel them, remove the core and cut into large cubes. Sprinkle the sliced apples with lemon juice to prevent them from browning.
Melt 80 g of butter in a frying pan, add honey and, stirring, bring to caramel state. Place apples in honey caramel, mix well and simmer over low heat for several minutes until soft.
Beat 170 g butter with sugar until fluffy. Continuously whisking, add eggs to the butter mixture one at a time. Continuing to beat, add corn and wheat flour with baking powder. When the dough becomes homogeneous, add apples, zest and mix (by hand).
Line the bottom of the mold with baking paper, grease the mold with butter and place the dough into it. Bake in an oven preheated to 175C for 50-60 minutes (use your oven as a guide and determine readiness with a wooden skewer; it should come out dry from the center of the pie).
The cake turns out tender, feels very light, and has a wonderful bright yellow color. In general, I really liked baking with corn flour; it is airy, light, slightly grainy, with a unique taste.

Option 3: Corn charlotte made from two types of flour
If wheat flour makes a fluffy charlotte, then wheat-corn baked goods will be both airy and crumbly at the same time. Corn flour does not contain gluten, that is, gluten. Finished baked goods may crumble. To make the perfect sunny bake, we mix two types of flour. The filling will be traditional apples. The amount of ingredients is calculated for a 23 cm mold.
Ingredients:
- corn flour - half a glass;
- wheat flour - half a glass;
- three eggs;
- sugar – 180 gr;
- baking powder – 8 g;
- five apples;
- cinnamon - two pinches;
- powdered sugar;
- oil drain – 10 gr.
How to cook
Take a fireproof pan, grease it with butter and sprinkle with a little flour. You can also use semolina and breadcrumbs for these purposes.
Now let's prepare the filling. Core the apples. It is better to cut into small thin slices or small squares.
Place the apples in the bottom of the pan. Sprinkle with cinnamon if desired.
Preheat the oven to 200 C.
Now let's prepare the dough. In a bowl, thoroughly mix the eggs and granulated sugar. Take a mixer and beat until fluffy. This will take about three minutes.
Mix corn and wheat flour and baking powder into a fluffy mixture. You need to mix carefully, but you need to knead all the lumps and get a homogeneous dough.
Pour the dough over the apples and spread over the entire surface with a spoon.
The charlotte needs to be baked for half an hour. Then pierce the dough with a toothpick. If you get a golden brown crust, but the dough inside is not baked, cover the charlotte with foil. Change the temperature to 180 C and bake until the crust is dry.
Turn off the oven, open the door and let stand for about a quarter of an hour.
If you immediately take the charlotte out of the oven, the dough will fall due to the sharp temperature change.
When you cut into the delicious and sunny charlotte, you will see how wonderful your dough turned out. The texture is delicate and soft, slightly crumbles, and the color is simply stunning.
If you have poppy seeds in your kitchen, sprinkle a couple of spoonfuls on top for a great garnish.

Everything will work out quickly and easily if you accurately measure all the ingredients of the recipe.
You can prepare this pie using a rolling pin, but then you will have to add flour, otherwise the dough will not roll out well. More flour means a less tasty cake. Therefore, it is better to cook it with your hands without a rolling pin, using your grandmother’s method.
Shortbread apple pie
Ingredients:
For the test:
- Premium wheat flour – 1 cup – 150 g
- Corn flour – 1 cup – 150 g
- Baker's margarine (or butter) 72% – 150 g
- Sugar – 100 g
- Egg – 1 pc.
- Turmeric – 0.5 teaspoon
- Cinnamon – 0.5 teaspoon
- Soda – 1 teaspoon, do not extinguish
For filling:
- Medium-sized apples – 2 pcs.
- Sugar – 2-3 teaspoons
- Cinnamon – ¼ teaspoon
For decoration:
- Walnuts – 6-8 pcs.
Preparation:
1. Melt margarine or butter in a bowl over a water bath; heat only until soft.
Water bath (photo) is the same as in the cookie recipe.
2. Remove from the bath, add sugar mixed with spices (turmeric, cinnamon). Mix.
3. The mixture should not be too hot, it is better to wait a few minutes to prevent the egg from curdling. Add the egg. Mix.
4. Mix the flour in a dry bowl, preferably with a whisk.
5. Add flour and soda to the bowl, knead the dough, it will not be very plastic, this is normal.
6. Divide the dough in half with a knife. Place half in the mold. Use your hand to spread evenly over the bottom of the pan.
You can first cover the bottom with baking paper; it is not so convenient to spread the dough on it, but then it will be much easier to take out the pie. Although, if the bottom crust doesn't leak, the pie won't stick. But no one is immune from leaks.
7. Wash the apples, cut into 2 parts, core, cut into thin slices, place in one layer, for example, with scales. Sprinkle with sugar mixed with cinnamon.
Advice:
You shouldn’t lay out the apples in a thick layer; it’s better to leave them, otherwise the pie may turn out too wet and fall apart when you take it out.
If there are a lot of apples, let them cool in the pan. To serve this pie hot, it must be cut into a mold.
For the same reason, it is better to use apples of less juicy varieties. I always use Golden apples.
To prevent the pie from getting soggy from the juicy apples, you need to sprinkle starch on the base of the pie and just a little on top of the filling.
I baked in a rectangular pan 21 x 26 cm, the height of the cake is about 3 cm.
In a round pan with a diameter of 24 cm, the pie turns out higher, but a thin layer of apples is enough for it.
8. From the second half of the dough, take pieces of dough with a teaspoon and knead them into thin cakes with your hands. Cover the apples with these flatbreads and create a top layer of dough. You can leave the windows.
9. Peel the walnuts, chop them finely, sprinkle on top of the pie. By this time, the dough becomes thicker and more flexible, because corn flour absorbs moisture from fat.
10. Press the nuts tightly with your hand and slightly level the surface of the pie; use your finger to press the edges of the pie along the contour.
11. Bake in a preheated oven at 180-200 degrees for 20-25 minutes. As soon as the pie smells, control the process so that it doesn’t burn.
12. If you do not use baking paper, it is better to take out the cake when it has completely or almost cooled down in the mold.
The pie is very tasty. It keeps well for several days, so it can be prepared in advance.

The latter is very beneficial for health due to its composition: rich in proteins, vitamins, valuable carbohydrates, trace elements, minerals and dietary fiber. - kefir – 500 ml,

- vegetable oil – 100 ml,
- sheep cheese – 200 g,
- butter (for the pan),
- sour cream (for serving).
Quench baking soda in kefir (fat content does not matter).
Add eggs to kefir one at a time, mixing the contents thoroughly each time.
Sift the corn flour and add it to the kefir-egg mixture.
Add sheep cheese, grated on a coarse grater, to the main ingredients. Mix the mixture thoroughly. The dough should turn out runny. Leave for 10 minutes to allow the cornmeal to swell.
Grease the bottom and sides of the baking dish well with butter. Fill with dough and smooth out.
Bake in a preheated oven at 180-190 0C until done, this will take about 20-30 minutes (depending on your oven).
Check the readiness of the cheese pie: pierce it with a wooden stick, and if it turns out to be dry, the pie is ready. If the stick is wet (with dough), place the mold in the oven for a few more minutes; the pie is not ready yet.
Serve corn pie with cheese warm, with sour cream.

Any flour is definitely not suitable for tender, airy sweet baked goods. The most universal coarse flour is corn flour. There is even an old recipe for biscuit dough made from it. Its taste is not as intrusive as that of buckwheat or rye flour.
You can add 10% corn flour to the dough for white buns, no one will notice it, they will become a little drier, and if you add the same amount of whole wheat flour, the buns will not be fluffy, everyone will notice it.
That’s why I advise everyone to use cornmeal flour first of all for sweet baked goods. It is a living product, high in fiber and gluten-free. This is a very healthy food product.
Our recipe contains 50% coarse corn flour and 50% premium wheat flour. The pie can no longer be called a carbohydrate dummy.
But due to its high calorie content, it is, of course, not suitable for a low-calorie diet. But sometimes you can treat yourself. It's very easy and quick to prepare. If you add more honey it may burn.
If you do not advertise that it contains corn flour, not everyone will distinguish it from an ordinary apple pie made from premium flour.

Ingredients:
- Premium wheat flour – 1 cup
- Corn flour - 1 cup
- Honey – 1 tablespoon
- Butter 82.5% – 50 g
- Sugar – 50 g
- Salt - a pinch
- Eggs – 2 pcs.
- Kefir – 1 glass
- Soda - 1 teaspoon dissolved in a tablespoon of vinegar
- Cocoa – 1 level tablespoon
- Medium apple – 2 pcs.
- Sugar for sprinkling - 2 teaspoons
- Cinnamon for sprinkling - ¼ teaspoon
- Walnut – 1-2 pcs.
Preparation:
1. Melt butter and honey in a bowl over a water bath until soft. Remove from heat.
2. Mix butter and honey, add sugar, salt, mix.
3. Add eggs, mix.
4. Mix corn and wheat flour. Add flour and kefir to the liquid mixture in portions, knead the dough.
5. Add soda dissolved in vinegar. Mix. The dough should have the consistency of thick caramel, i.e. pour out slowly. If the dough is too thick, add kefir or water.
6. Place approximately ⅔ of the dough into a greased pan (I have an old Teflon frying pan without handles), level it with a spoon.
7. Core the apples and cut into thin slices. Place on the dough in one layer. The remaining apple pieces can be cut and placed in the free space.
8. Mix 2 teaspoons of sugar with cinnamon and sprinkle on apples.
9. Add cocoa to the remaining dough and mix. If it’s too thick, add a little kefir or water until it reaches the consistency of thick caramel and pour over the apples.
10. Sprinkle pieces of nuts on top. It’s better to press down the nuts with a spoon to hold them tighter.
11. Bake at 180-200 degrees. Check for readiness with a match. Cooking time is about 25 minutes.
12. The cake tastes better and softer the next morning.
How can you change the recipe:
1. You can do the second layer with cocoa differently: Add more nuts (4-5 pieces) and cocoa, for example, a heaped tablespoon. You can add a little more instant coffee. Then taste and add sugar to taste. It will turn out like in the photo.

She didn't add any liquid and baked it as is. I found the pie too heavy, but her family loved it. A matter of taste.
5. If you change the proportion towards increasing the amount of corn flour, it will be tasty, but the taste will be somewhat unusual. I do not advise.
