Potatoes should be boiled until half cooked, and carrots and cabbage should be blanched in boiling water for 5 to 8 minutes. Next, to cook carrots in the oven with vegetables, you need to beat the eggs with spices and salt with a fork, add sour cream and grated cheese (1/2 of the norm). To prepare this casserole, you can use a regular baking sheet or a wide baking dish (a square one is more convenient).

Lubricate it generously with vegetable oil. Place all previously prepared vegetables into the mold and mix a little so that they are evenly distributed, level and lightly press with your hands, but do not compact them. Pour the cream cheese mixture over the contents of the baking sheet and place it in the oven. Set the temperature to 240 degrees and wait thirty minutes. Next, sprinkle the remaining grated cheese on top of the vegetables and continue baking, lowering the temperature to 200 degrees. When the top of the casserole acquires a golden and ruddy crust, it can be considered ready.

Serve the carrot casserole with vegetables while still warm. If desired, you can eat it with hot sauces: mayonnaise with garlic, ketchup or adjika. Potatoes for this dish can be pre-boiled “in their jackets”. Broccoli can be replaced with zucchini.

Baked carrots in the oven with cheese and garlic

To get delicious carrots in the oven you will need:

  • 2-3 fresh carrots;
  • 0.25 tbsp. grated cheese (preferably hard cheese, but if you don’t have it, then you can use any);
  • 1 tbsp. l. garlic powder;
  • 1 tbsp. l. vegetable oil;
  • salt and pepper to taste;
  • 0.25 tbsp. fresh or dried parsley or other herbs you like.

For the sauce you will need:

  • 2 tbsp. l. neutral yogurt
  • 1 tbsp. l. lemon juice
  • salt, pepper, garlic to taste

Carrots with cheese and garlic recipe

Rinse the carrots thoroughly; if you want, you can peel them. In general, you can use unpeeled carrots in this recipe.

Cut the prepared carrots into even long strips. To do this, first cut the root vegetable in half, and then cut each half, holding it with a fork.

Place the carrots in a bowl, add oil, salt, grated hard cheese (or parmesan powder), salt, pepper and garlic powder.

Parsley can be used fresh, chopped very finely, or dried. But whole garlic is not suitable for the recipe - it will burn.

Stir the seasoned carrots until the spices and oil are evenly distributed throughout the carrot strips.

Place the carrot sticks on the parchment paper, leaving a small space between them so that the carrots bake well in the oven.

Bake the carrots with cheese and garlic in an oven preheated to 200 degrees for 30–35 minutes, turning occasionally and checking the carrots for doneness. If the fork fits freely into the carrots and the flesh has become dark and golden in color, the baked carrots are ready.

It’s very tasty to eat these sticks with sauce. Regular yogurt, without sugar or additives, is best for the sauce. Add lemon juice and spices to it. Leave the carrot snacks to cool for a few minutes before you are ready to serve. Baked carrots in the oven are a very light snack that is extremely difficult to put down. And the garlic sauce complements them perfectly.
