Today I wanted to repeat it, but instead of pancakes, we will use many people’s favorite, universal product - thin Armenian lavash. After all, you can use it to prepare not only various sweets, but also such quick pies. My recipe today can be called differently: pie, lavash snail or just a quick casserole. And so, we will need quite simple products that we all often have in the refrigerator. And the main thing, of course, is lavash. By the way, you can make lavash with your own hands at home, but that’s a completely different story...
How to cook sweet lavash with cottage cheese in the oven:
This dish is prepared very simply and quickly. First, mix all the ingredients for the filling: cottage cheese, eggs, sugar and vanillin.
Separately combine the ingredients for filling: eggs, sour cream and sugar. Stir until completely combined.
We begin to assemble a lavash roll with cottage cheese. To do this, spread the pita bread on the table and grease it well with the curd filling. We use a third of the filling (since we have 3 pita breads). Then simply roll the greased pita bread into a roll, not too tightly.
And after greasing the baking pan with butter, place the lavash roll along the edge of the pan. Then we do the same with the second and third pita bread and place them one after the other in a circle. It turns out to be a so-called lavash snail.
Pour the prepared sour cream and egg filling on top of the lavash.
Place the baking dish in the preheated oven for 30-35 minutes. The pita bread will brown perfectly and become beautiful. The aroma spreads throughout the apartment is wonderful. Let the lavash with cottage cheese cool slightly; if desired, you can sprinkle it with powdered sugar on top and quickly cut it into portions.

How to make a biscuit roll filled with banana and cottage cheese
Many novice housewives do not really like to prepare sweet rolls from biscuit dough, because... they are afraid that after baking the dough will be difficult to wrap into a roll.
But in fact, preparing such baked goods is not so difficult if you follow a few rules: put the right ingredients in exact proportions, make sure that the thickness of the dough corresponds to that specified in the recipe, bake strictly according to the time (since the overbaked roll will crumble when folded ), and also, as a rule, such rolls are formed before cooling.
Today the site Kastryulkina.ru invites you to prepare a very tasty and appetizing-looking roll from biscuit dough with a sweet filling of cottage cheese and bananas. It's easy and quick to prepare. For the filling, it is better to use soft cottage cheese without grains, then the cream will have a uniform consistency. The bananas must be ripe, but without a dark center, so that the roll, cut into slices, looks beautiful on the table.
For this recipe you will need:
For the test:
- 130 g sugar;
- 120 g flour;
- 4 eggs;
- 30 g starch;
- 5 g soda;
- 2 pinches of citric acid.
For filling:
- 2 bananas;
- 400 g cottage cheese without grains;
- 60 g lemon (or any other) jam;
- 15 g gelatin;
- 100-130 g sugar;
- powdered sugar.

Pour 100 ml of cool water over gelatin and leave to swell.
Place sugar and yolks in a bowl.
Add 20 g of hot water to them and grind everything together well, and then beat with a mixer until light yellow foam.
In another bowl, beat the whites, adding a pinch of salt, to a stable foam.
Combine both mixtures and mix gently (without fanaticism).
Sprinkle the mixture with flour mixed with soda, citric acid and starch.
Stir from top to bottom, being careful to keep the bubbles intact.
Prepare two baking trays, grease them with oil, line them with baking paper and pour the biscuit dough onto them.
The layer of dough should be no more than half a centimeter, otherwise you will not be able to roll the finished cakes later.
Bake them one by one at 180° for exactly 12 minutes. The cakes should not brown!
Spread a clean thin towel on the table, sprinkle it with sugar and place the baked cake on it, paper side up. Carefully remove the paper. If it doesn't come off well, lightly moisten it with a damp sponge and then it will come off the cake without any problems.
While the cake is hot, roll it up and let it cool directly in the towel.
Prepare the curd filling for the roll:
Place sugar and lemon jam in a bowl with cottage cheese.
Stir. Using an immersion blender, beat the cottage cheese and jam mixture well.
From a glass with swollen gelatin, drain some of the water, leaving just a little, and place the glass in the microwave for a few seconds to dissolve the gelatin (you can also use a water bath to dissolve the gelatin).
Add gelatin little by little to the curd mass, continuing to beat it.
Peel the bananas.
Unwrap the sponge cake. Place the cottage cheese filling on it and distribute it evenly over the roll. Place a peeled banana on one edge and roll the sponge cake again.
Do the same for the second roll.
Place them in the refrigerator to set for a few hours.
Dust the cooled rolls with powdered sugar, garnish with lemon marmalade and cut into slices.

Method for preparing lavash triangles with cottage cheese
It is better to take cottage cheese with a higher fat content, then the filling will be softer and juicier. We add only the white to the cottage cheese; we will need the yolk later.
I decided to add raisins and apple to the cottage cheese filling. I soaked the raisins in boiling water for a couple of minutes, peeled the apple and cut it into small cubes. Mix the filling well. You can add sugar to taste, I prefer not to add it.
Take a large sheet of Armenian lavash, straighten it and cut it into 5-6 strips.
Place 1-2 tbsp on the edge of each strip. spoons of filling.
We begin to form a triangle as shown in the photo.
Fold the triangle until the strip of pita bread ends.
When all the triangles are prepared, place them on a baking sheet lined with parchment or a silicone mat.

Curd roll with banana
- banana – 2 small
- cottage cheese – 300 g.
- egg – 1 pc.
- oatmeal – 5 tbsp.
- vanillin, cinnamon, coconut flakes as desired
From the specified amount of ingredients you get two rolls. If you want to make one, then take 2 quail eggs, because... Dividing one egg in half is problematic, or try to do it anyway.
- Grind oatmeal in a coffee grinder. Combine egg, cottage cheese, ground oatmeal and vanillin. Mix well and divide the dough into two equal parts.
- Take a silicone mat, moisten it a little with water so that the dough sticks better and place one part of the curd dough on it. Roll it out with a rolling pin across the width of the banana, not very thin.
- Roll up the roll, placing the banana on the edge. This process may not go completely smoothly as the curd dough may not separate from the mat. But it's not scary. In this case, with wet hands, apply the dough with your hands around the banana, like plasticine.
