  2. Add muesli to the chopped dried apricots and knead thoroughly until the mass becomes homogeneous.

1. Prepare the base for the dessert. Break the cookies with your hands and grind them into fine crumbs using a blender (it turns out almost like flour). Add melted butter to the cookies and mix very well.

The ratio of butter to cookies in a cheesecake should be approximately 1:2

6. Take the mold out of the refrigerator and pour the curd filling into it. Place to bake in an oven preheated to 170 degrees. In this case, be sure to place a tray with water on the lower level of the oven so that the curd layer does not crack. Or cook the cheesecake in a double boiler. To do this, soak the dried apricots in hot water for a few minutes, then rinse, squeeze and grind in a blender or meat grinder to a pulp. 3. Now mix the dried apricots and muesli, knead them with your hands so that the mass becomes more or less sticky. 4. Now put the mixture of dried apricots and muesli into transparent bowls or springform molds (it’s good to use salad molds without a bottom) and compact it tightly. 5. After the gelatin has swollen, put the container with it on the gas and begin to heat, stirring constantly, until the gelatin is completely dissolved. No need to boil. Spread the dough in an even layer over the bottom of a baking dish no larger than 20cm in diameter and press down. If you are using a springform pan, wrap the outside of the pan in foil to prevent the cream from leaking out through the cracks.

Peel and core the apples and cut into small pieces. You should get 200 g of pure apples. Cook them with honey over low heat, covered, until softened. You can replace honey with any flavored syrup or granulated sugar. Cool the apples to room temperature.

Beat cottage cheese, eggs and vanilla in a blender until smooth.

Grind the apples in a blender until pureed. Mix the puree with the curd mass and beat again with a blender. Carefully pour the cream onto the oatmeal cake and smooth the top. Bake the cheesecake for 50-60 minutes in the oven at 160 degrees Celsius in a water bath, that is, place a tray on the lower level and pour about 1 liter of hot water into it. Accordingly, the tray with water will need to be under the baking cheesecake.

The cheesecake is ready when the edges of its surface are baked and the center is slightly jiggly. Turn off the oven and leave the cheesecake in it until it cools completely; when the dessert reaches room temperature, put it in the refrigerator for at least 3 hours, ideally overnight.

Dissolve gelatin in water, heat and cool. Mix 3/4 of gelatin water with cottage cheese and stevia. 4. Spread the resulting mixture onto the cooled oatmeal cake and place it in the refrigerator for 2-4 hours. 5. Place the berries on the frozen cheesecake, pour in the remaining gelatinous water and place in the refrigerator again for 2-4 hours.

● 125 ml of natural yogurt ● 9 grams of gelatin ● 75 ml of lemon juice ● 3 tablespoons of honey ● 200 g of low-fat cottage cheese ● 2 egg whites

1. Mix lemon juice with 75 ml of water, add gelatin and soak it for 5 minutes. 2. Then heat this mixture over low heat until the gelatin dissolves, cool. 3. In a bowl, whisk cottage cheese, yogurt and honey. 4. Pour in the lemon and gelatin mixture. 5. Beat the egg whites until foamy, then carefully fold them into the curd mixture. 6. Place fruits or berries (optional) on the bottom of the mold, pour the curd mixture on top and refrigerate for at least 4 hours or overnight.

1. Separate the yolks from the whites. 2. Beat cottage cheese, yolks, yogurt, stevia and 2 tablespoons of starch until smooth. 3. For the base:

  • Dried apricots – 150 g
  • Corn flour – 3 tbsp.
  • Egg yolk – 1 pc.
  • Kefir – 1 tbsp.

For filling:

  • Cottage cheese 0% – 600 g
  • Eggs – 2 pcs.
  • Egg white – 1 pc.
  • Ground nutmeg – 1 chip.
  • Sweetener to taste

To submit:

  • Fresh apricots – 8 pcs.
  • Pour warm water over the dried apricots and leave for 15-20 minutes. Then drain the water, blot the dried apricots with a napkin and place in a blender. Add flour, kefir and yolk to it, bring everything until smooth. Apply the mixture evenly to the bottom of the baking dish and place in an oven preheated to 180˚C for 10-15 minutes.

    It is better to use cottage cheese that is soft and homogeneous, rather than grainy. Separate the yolks from two eggs and add them to the cottage cheese, and beat the whites together with the ones that remained when preparing the base. You should get a fluffy foam. Gently stir it into the cottage cheese, adding nutmeg and sweetener. Spread the mixture onto the prepared base, preheat the oven to 200˚C and place the cheesecake in it. After 8-10 minutes, reduce the heat again to 180˚C and bake the pie for another 15-25 minutes.

    Serve the cheesecake after it has cooled, with sliced ​​apricots on top.

For the crust:

Spread the curd base onto the cookie mixture and bake in a slow cooker. Cooking time - an hour in the "Baking" mode.

Dietary cottage cheese cheesecake will go wonderfully with fresh fruit.

Diet chocolate cheesecake

For the base:

  • Prunes – 150 g
  • Egg yolk – 1 pc.
  • Ryazhenka – 1 tbsp.
  • Rye flour – 3 tbsp.

For filling:

  • Cottage cheese 0% – 600 g
  • Egg white – 3 pcs.
  • Dark chocolate – 90 g
  • Sweetener to taste

  • 200 gr. strawberries;
  • 100 - 150 ml of water;
  • 20 gr. gelatin;
  • Fructose.

We make strawberry puree: prepare gelatin according to the instructions, mix with the prepared puree, add fructose. Spread the mixture onto the cooled crust and put it in the refrigerator. Decorate the diet cheesecake with strawberries with whole berries. Ingredients:

  • 60 g – oatmeal;
  • 10 g – cocoa powder;
  • 2 eggs;
  • Fructose to taste;
  • 1 tsp. baking powder;
  • 30 ml of 1% milk.

Grind oatmeal in a blender, add baking powder, fructose, and a little milk. Low-fat cottage cheese (400 g), mix with 2 yolks and corn starch. Mash the bananas until pureed and add to the curd base. Whip all the ingredients into a homogeneous consistency, place in a mold and bake the diet banana cheesecake until golden brown, at a temperature of 180˚.

Preparing the crust:

  • 100 gr. - oatmeal;
  • 1 egg;
  • 0.5 tsp. baking powder.

Pour boiling water over the oatmeal, let it swell, add the egg, fructose and baking powder. Mix and place in the pan (don't forget the parchment paper). Bake until done, at 200˚

Curd base:

  • 500 g 1.5% cottage cheese;
  • 350 grams of natural yogurt;
  • Zest;
  • Lemon juice;
  • Fructose;
  • 1 p. gelatin.

Mix cottage cheese with yogurt, add fructose, juice and zest 1 pc. lemon. Prepare gelatin (according to the instructions on the bag) and add it to the cottage cheese. Place on the crust, cool, and decorate the diet cheesecake with powdered sugar.

Can cheesecake be low calorie?

The classic recipe includes cream or whey cheese, cottage cheese, heavy cream, and the base is made from shortcrust pastry and crackers. To prepare a diet cheesecake, you need:

  1. Use cottage cheese as a filling. For those who are busy scrupulously counting every calorie eaten, a low-fat product is suitable. To prevent the dish from becoming dry, mix it with a small amount of curd or cream cheese.
  2. Replacing sugar with honey, stevia, a sweetener or banana, figs will significantly reduce the energy value of cheesecake. An unusually sweet dessert, but without added sugar, is obtained by adding pumpkin to it. An additional bonus will be the original, colorful appearance of the dish.
  3. The dietary base for cheesecake is made from oatmeal. You can grind them in a coffee grinder, blender, or use whole ones - then the base will be crispy. A good option for PP dessert is bran. You can experiment with rice, flaxseed, and whole grain flour.

Diet chocolate cheesecake

This chocolate treat does not require baking, so it is easy and simple to prepare.

Ingredients:

  • gelatin - 15 g,
  • milk - 100 ml,
  • low-fat cottage cheese - 400 g,
  • cocoa powder - 50 g,

How to cook:

  1. Soak gelatin in 100 ml of water.
