Cottage cheese bagels. Soft curd bagels for babies from 1 year!
This is a healthy, tasty, quick to prepare and convenient dish that a child will willingly eat.
They have many advantages: firstly, of course, cottage cheese. Not all parents are lucky enough to have children who love dairy products, but we all know that cottage cheese is a powerful source of protein and calcium.
If the child does not like it in desserts, you can offer it in the form of baked goods. Secondly, bagels are not fried, unlike cottage cheese pancakes, but frying means sunflower oil brought to a heat, that is, a fried crust, a load on the pancreas, carcinogenic substances. Thirdly, there are no leavening agents (not even soda) in the recipe, and the bagels are moderately sweet.
This is a great snack for a child at school, during a long walk or on a trip.
Ingredients: 180 g cottage cheese 1 egg 1 tbsp. l. sugar pinch of salt 4 tbsp. l. flour (with Gorka).
For the dough, take dry low-fat cottage cheese. If the curd is soft, wrap it in several layers of gauze and place under a press to release the whey. Mix cottage cheese with egg, sugar and salt. You should not put more sugar in the dough than indicated in the recipe - the bagels may not rise and will be sticky inside. If you want to sweeten the dish, it is better to sprinkle the finished bagels generously with powdered sugar. Add flour. Determine the final amount of flour based on the type of dough. It should not stick to your hands, but cottage cheese should predominate, not flour.
Divide the dough into pieces, roll them into sausages and connect the ends of each into a bagel.
Bake bagels with cottage cheese on a baking sheet with parchment at 180 s. Dip the bottom side of each piece in flour to prevent the baked goods from sticking.
The bagels will rise well in the oven due to the egg and softening of the cheese. When the surface is lightly browned, remove the pan from the oven and remove the cookies to a wire rack.
While still warm (but not hot), sprinkle the cottage cheese bagels with powdered sugar. Recipes@Momgodess.
Step-by-step recipe with photos
Baking with curd dough is distinguished by the amazingly delicious aroma of baked dairy products. In addition to bagels, you can bake bagels, filled pies, and flat cookies from cottage cheese.
The exact number of products depends on the size of the cottage cheese bagels. For example, these are 7 cm in diameter. They are porous in the fracture, but their structure is soft, not dry.

Ingredients
- homogeneous cottage cheese from 9% - 200 g;
- egg - 1 pc.;
- sugar - 4 tbsp. spoons (or to taste);
- baking powder - 1/2 teaspoon;
- flour - about 1 cup (how much dough will take);
- vanillin - a pinch;
- refined sunflower oil (for deep frying) - 1.5-2 cups.
How to make donuts from cottage cheese
- Mix the egg with sugar and beat with a whisk until light foam is obtained.
- Add homogeneous cottage cheese with a high percentage of fat content to the liquid mass, rub the mixture intensively with a fork.
- Combine flour with baking powder and gradually sift into the curd mass. Add a pinch of vanillin to obtain a light aroma.
- Knead the donut dough by hand - it should be soft, pliable and slightly sticky. If the cottage cheese is too wet or a large egg is used, the amount of flour will have to be increased. But in any case, you shouldn’t compact the mass too much, otherwise the donuts may turn out “rough.”
Cottage cheese donuts recipe with step-by-step photos are ready! Bon appetit!
History of origin
Bagel is a traditional flour product that is very popular in Russia. According to many historians, bagels were invented not in Russia but in Israel. These original flour products were written about as early as 1616 in Jewish documents.
Remember the song “Odessa Bagels”, dedicated to Jewish bagels?
Curd bagels. Ingredients:
- cottage cheese in briquettes - 2 pieces (200 g each).
- chicken eggs - 2 pcs.
- Corn flour - 5 tablespoons.
- Rice flour, whole grain - 5 tablespoons.
- Coconut sugar - 1 tbsp.
- salt - 1 pinch.
- Agave syrup - 2 tablespoons.
- 2 tsp. poppy (for decoration).
Preparation:
Grind cottage cheese with egg. Salt, add coconut sugar (we wrote about it in detail), corn and rice flour.
Knead the dough.
Usually, 10-12 tablespoons of flour is enough, but if the cottage cheese was very wet, you will need more. In terms of consistency, the finished dough should be homogeneous, moist, but not very sticky to your hands and confidently come together into one whole.
So, divide the resulting dough into equal parts, roll them into sausages, and then give them ring-shaped shapes and make bagels.
Bake cottage cheese bagels
in the oven at 180 - 190 degrees for about 20 minutes until browned.
When ready, drizzle with agave syrup and sprinkle with poppy seeds.
Bon appetit! Stay healthy and stay in shape.

Bagels for children recipe. Homemade bagels with poppy seeds like in childhood
Do you have nostalgia for the delicacies from your childhood? I definitely have... for example, bagels with poppy seeds. So soft, fragrant... now (for some reason) these are no longer on sale.
But wherever ours was missing: a recipe for bagels was found, prepared according to it, and here they are, and they taste very, very similar!
how to make homemade bagels
Ingredients :
Preparation:
1.
To knead the dough, first mix the sifted flour with salt, sugar and dry yeast. Then add warm water (about 37 degrees). And knead the dough. At the beginning it will be quite tight and unruly - don’t be alarmed, continue kneading until smooth.
2.
Next, add butter softened at room temperature and continue kneading. You will notice that the dough becomes softer and more pliable, but quite elastic and not too sticky to your hands and surface. Place it in a large bowl to rise. Be sure to cover it from wind and drafts.
3.
In a warm place, the dough will rise (double in volume) in 45-50 minutes.
4.
Place the poppy seed bagel dough on our work surface and divide into 8 equal pieces. And you don’t need more, otherwise they won’t be bagels, but bagels... First, let’s roll each piece into a ball, then make a hole in the center and start stretching it a little, giving it the shape of a donut. Set the formed bagels aside, covered to prevent drying, for ten to fifteen minutes.
5.
In the meantime, put a pan of water on the fire and wait for it to boil. Add salt and soda. Dip the bagels one by one into boiling water. First, for 30 seconds with the beautiful, outer side, and then turn it over and scald the other side for 30 seconds. And then carefully remove the bagels with a slotted spoon.
6.
Shake off excess water and place on a baking sheet lined with baking paper. Again, don’t be put off by their unattractive, wrinkled appearance; as they bake, the bagels will flatten out and become beautiful.
Why do you need such an incomprehensible action as scalding? And it is needed in order to stop the rise of the dough during baking - the shape of the bagel is preserved, and does not turn into the usual fluffy baked goods. With all this, the middle turns out soft and airy, and the crust remains crispy.
When all the bagels are scalded and placed on a baking sheet, they should be greased with the yolk beaten with milk and sprinkled with poppy seeds.
7.
Place in an oven preheated to two hundred degrees. We will bake for about twenty minutes until beautifully golden brown. Let the bagels with poppy seeds cool a little and you can treat them to your family. Enjoy!
Deep-fried curd rings. Curd rings
INGREDIENTS
- 250 g cottage cheese
- 1/4 tbsp. Sahara
- egg - 2 pcs.
- milk - 5 tbsp. l.
- vegetable oil in the dough - 6 tbsp. l.
- corn starch - 6 tsp.
- 2 tsp. baking powder
- 1 packet vanilla sugar
- 2 tbsp. flour, possibly less, because it depends on the moisture content of the cottage cheese
- powdered sugar - for dusting
- frying oil
STEP-BY-STEP COOKING RECIPE
Step 1
Mix everything. The dough should be dense and non-sticky. Roll out the dough thick - about 1 cm high. If you have time, you can cool it before rolling it out. We cut the rings into 2 cups - for the outer circle a large one, for the inner recess the smallest one you can find, so that the walls are not too thin.
Step 2
You can give the ring the appearance of a heart.
Step 3
We don’t heat the deep fat - I fried it at 2-2.5 (my divisions go up to 3). Throw the cut out rings into the deep fryer (from one serving you get 20 pieces), fry on both sides. Sprinkle with hot powdered sugar
Step 4
It looks like this inside.
Helpful advice
I also added raisins, but I strongly do not recommend doing this - the dough did not accept them at all, the berries dangled like elastic balls, fell off, and when frying, a bunch of them fell into the oil, which made it burn more.
