- Salt the potatoes immediately . Salt the potatoes immediately after placing them on the tray. Make sure the holes in the salt shaker are clean. Invert the salt shaker over the potatoes. Don't shake or move it because whenever you turn it over correctly, it will release the correct amount of salt.
When packing semi-finished products into baskets manually:
For four baskets - for one basket of finished product, turn the salt shaker 2 times.
For six and eight baskets - for one basket of finished product, turn the salt shaker over once.
When packing semi-finished products using a filling machine:
350 and 450 grams - for one basket of the finished product, turn the salt shaker over once.
700 grams per basket of finished product, turn the salt shaker twice.
Salt the potatoes in the corner of the packaging tray farthest from the fryer.
- Turn the potatoes over . Scoop up a scoopful of potatoes and “free flow” dump them onto the tray. Do this with the finished batch of potatoes 2-3 times. Stir the potatoes carefully to avoid damaging them.
- Move the cart . Remove the empty basket that has drained frying oil and place it on a rack or in a filling machine.
PACKING OF READY FRIES
- Pack the finished potatoes into bags/boxes of the desired size. Insert the scoop into the appropriate size bag/box. Starting at the front edge of the filling tray, scoop out the desired amount of potatoes. Gently shake the filled scoop from side to side so that all the slices are directed vertically to the bottom of the bag or box. Raise your hand with the scoop to a vertical position and let the potatoes slide into the bag. Do not force the potatoes into the bag or knock the bottom of the bag against the tray. Place the bag of potatoes on the bin, then remove the scoop.
- Place the potato bags in a storage bin. Place the bags of cooked potatoes on the storage bin (in a row away from you and away from the edge of the packaging tray), ensuring that the potatoes are properly rotated according to the “First In, First Out” rule.

PACKING IN BASKETS

- Prepare the baskets. Before you start packing the potatoes, remove any remaining cooked potatoes from the baskets.
- Fill the baskets. Close the hopper with a lid. Secure empty baskets to the top rail. Set the desired potato weight based on production needs. Remember that the thawing time for raw potatoes in the bin is 30 minutes. If a filling machine with a built-in freezer is used, the shelf life in it is 2 hours.
- Observe the shelf life. After expiration of the shelf life, raw potatoes should be discarded.
- Fill the baskets. In two batches, evenly fill at least 4 baskets from one package/bag of frozen potatoes.
- When the influx of visitors is low. During periods of reduced demand, cook more frequently, dividing one bag of potatoes into 6-8 baskets. Remember that the thawing time for raw potatoes on the rack is 30 minutes. After expiration of the shelf life, raw potatoes should be discarded.
DUTIES AT THE STATION
- Clean as you work. Use a dry, disinfected rag (or paper towel) to keep the station clean. Pay special attention to the cleanliness of mirrors and glass.
