Recently we have fallen in love with rice pancakes. They have a slightly different taste than wheat ones, the texture is also different) But especially for those who are on a gluten-free, casein-free and sugar-free diet, this is an ideal option.
In terms of composition, I will say this: I have full BGBKBS here, because the flour here is gluten-free - rice. As for sugar and casein, you can add sugar rather than honey, or make it with milk or kefir rather than water.
But I’ll be honest: they are already beautiful! Very tasty and tender pancakes;) This recipe requires more eggs than the usual wheat pancakes. Because they have to “bind” your batter since rice flour does not contain gluten (which is what gluten is) and the pancakes will tear and break.
Preparation:
The water should be a little warm if you add ghee. To prevent the oil from hardening. If you use olive oil, you don’t have to heat the water.
The cooking process is quite simple, and such pancakes are always obtained!) Add eggs to warm water and stir thoroughly with a whisk. Next, add salt, liquid honey and oil. If your honey is hardened, then keep it in a water bath for a while. It is better not to heat it in the microwave. Firstly, because it is undesirable to keep honey at high temperatures if this is not possible, and secondly, the microwave oven itself is not the best thing.
Mix well and add flour little by little.
The consistency of the dough is standard: like liquid sour cream.
All that remains is to add oil and mix everything well again. Now let the dough sit for about 15 minutes. Heat the frying pan at maximum heat and heat it up, because the frying pan for any pancakes must be very hot. Before preparing the first pancake, be sure to grease the pan with a thin layer of olive oil or ghee/butter. There is no need to do this anymore. Pour and carefully distribute the dough throughout the pan, making a circular movement with the pan away from you. Pry the edges with a spatula as you see that they begin to brown, and this happens very quickly.
Turn over and bake the second side.
If you added 3 eggs, not 4, and something is wrong, that is, you cannot turn the pancake, or it sticks or breaks, then add another egg. And stir the dough thoroughly. If this happens even if 4 eggs are added, then you can try adding a little more oil. There shouldn't be any problems. Especially if you are confident in your frying pan and have already cooked wheat pancakes in it. Good luck!)

Ingredients:
2 duck breasts with skin 100 ml soy sauce 20 g fresh ginger 1 chilli pepper 4 tbsp. l. plum jam syrup a few stalks of green onions 1/2 tsp. starch 1 tsp. sesame oil
For pancakes: 150 g finely ground rice flour 3 tbsp. l. sesame seeds 3 eggs (it would be great if they were duck, but chicken would also be very tasty) 330 ml sparkling water 1 tbsp. l. vegetable oil 1/2 tsp. sesame oil salt
Recipe for rice pancakes with duck:

and put it to marinate in soy sauce, to which we add ginger, a few rings of chili pepper and a teaspoon of sesame oil. Marinate for a couple of hours, turning several times. |
While the breast is marinating, prepare the pancakes.
Mix all dry ingredients and add half the specified volume of water. Stir thoroughly so that no lumps remain. Add the remaining water and oil, stir with a large spoon. Before baking each pancake, shake the batter, as the sesame seeds will constantly sink to the bottom.
Place the pancakes in a stack. We grease each pancake with a culinary brush, which we dip in vegetable oil flavored with a few drops of sesame. To prevent the pancakes from breaking when wrapped, they need to lie in close contact with each other for at least half an hour. It is better to cover the stack with some kind of plate and put it in a warm place.
Roast duck:
Now back to the duck breast. Remove it from the marinade and dry it with a paper towel. We'll save the marinade; we'll need it later.
Heat a frying pan and place the breast skin side down on it. Fry for about 3 minutes over medium heat, turn over and fry the same amount on the other side. Using tongs or tweezers, brown the breast on all sides. We transfer it to a fireproof form and place it in an oven preheated to 150 degrees for 15-20 minutes.
While the duck is in the oven, make the sauce.
Strain the marinade and pour into a small saucepan. Bring to a boil over low heat, skim off the foam, add plum jam syrup and starch diluted in a minimum amount of water. Cook constantly stirring until the desired consistency is obtained. Try it, if necessary, you can add a little more starch or soy sauce. If you don't find the sauce spicy enough, you can put a couple of chili peppers in for a few minutes, then take them out and throw them away.

Remove the duck breast from the oven, let it rest a little, then cut it into thin slices. We cut the green onions at an angle into centimeter-long feathers.
