Preparation procedure:

  1. Mix granulated sugar with flaxseed flour and, stirring constantly, pour boiling water into them. Upon contact with hot water, the flour will brew and you will get something like a thick flour jelly in the container.
  2. Add the starter with a glass of plain water and stir well again. The dough is unlikely to be homogeneous - this is normal.
  3. Add wheat flour, citric acid, salt, soda and mix well with a mixer. After 1-2 minutes of beating, the dough will reach a homogeneous consistency.
  4. Fry pancakes according to the standard algorithm. Don't be alarmed by the slight grayish tint.

  • Milk (water, kefir, whey) – 400 ml.
  • Chicken eggs – 2 pcs.
  • Wheat flour - 0.8 cups;
  • Flaxseed flour - 0.2 cups;
  • Vegetable oil – 2 teaspoons;
  • Salt – 1 pinch;
  • Sugar – 1 teaspoon;
  1. In a bowl, beat eggs with sugar and salt. Pour warm milk.
  2. Add flax and wheat flour. Whisk thoroughly until lumps disappear.
  3. Before frying, stir another teaspoon of vegetable oil into the dough.
  4. Heat the frying pan, grease it with oil if desired, pour in a thin layer of dough, fry for 1 minute on both sides until golden brown as in the photo.

It is advisable to grease the finished pancakes with melted butter so that they remain elastic and soft for as long as possible.

With pumpkin and flax seeds

  • Fresh pumpkin – 200 g.
  • Wheat flour – 240 g.
  • Milk (water) – 2/3 cup;

  • Lemon juice – 1 teaspoon;
  • Sugar – 1-3 teaspoons

  1. Cut raw pumpkin into cubes and puree using a blender. You can boil it, and then mash it with a masher. Choose what is most convenient for you.

  3. Stir pumpkin puree into milk, add sugar, salt, cinnamon, wheat flour and soda slaked with lemon. At the end, add flax (drain the water first). The dough should be thick like rich sour cream.
  4. Heat a frying pan, grease with vegetable oil, pour a spoonful of pancakes, fry them until golden brown, 2 minutes on each side.

Pancakes made from flax and buckwheat flour

  • Milk (can be sour) – 150 ml.
  • Flaxseed flour - 2-3 tbsp. spoons;

  • Salt – 1 pinch;
  • Sugar – 2 teaspoons;
  • Soda – 0.5 teaspoon;
  • Vanillin – 1 pinch;
  • Vegetable oil – 1 tbsp. spoon (plus for frying);

How it is prepared

  1. Mix two flours in a cup, add sugar, vanillin and salt.
  2. Pour milk, kefir into a bowl, add flour mixture, soda.
  3. Whisk thoroughly until any lumps of flour dissolve. Leave for 5 minutes.
  4. Fry as usual: in a hot frying pan on maximum heat for 1-2 minutes on each side.

Now let's move on to the flaxseed flour itself. It is also useful because it contains a lot of protein (25 to 30%), fiber, minerals and B vitamins.

  • When mixed with liquids, flaxseed meal becomes very sticky and sticky. Therefore, it is often used as an egg substitute when kneading dough. Maybe someone is allergic to eggs.
  • Flax flour, unlike wheat flour, does not contain gluten (wheat protein, to which some people are allergic), and it also contains fewer carbohydrates (about 9%), which again makes it popular in all kinds of weight loss diets.

What can we say about the taste of baked goods made with flax? It’s all an acquired taste. For example, I am not a fan of flax, but others, on the contrary, like this specific aroma and unusual taste. I advise you to try it yourself and draw your own conclusions.

How to prepare pancakes from flaxseed flour at home step by step

If you want to maximize the beneficial properties of flax pancakes, you can prepare them with only one type of flour. Such pancakes can safely be called a complete fitness dish, since their calorie content is not high at all.

  1. First, prepare a deep bowl, since we will knead our dough in it.
  2. We break the chicken eggs, use the shell halves to separate the yolks from the whites and add the latter to our container. The yolks can be left for something else, for example, for greasing baked goods.
  3. Pour milk into our bowl, add flour, granulated sugar, salt and a pinch of cinnamon. Using an immersion blender or mixer, beat the dough until it becomes completely homogeneous.
  4. Set the container aside for half an hour so that it can brew properly. After the specified time, prepare the frying pan: grease it with a little oil and set it to warm up over low heat.
  5. Mix the infused dough well and pour a small amount of it into the frying pan with a ladle. Distribute the mixture evenly over the surface of the pan, fry for a couple of minutes until browned, then turn over.
  6. Fry the pancake on the other side, then place it on a flat dish and repeat the procedure in the same way with a new portion of dough.

These flaxseed flour pancakes will turn out even more flavorful if you add vanilla or vanillin to them. By the way, in order to minimize the calorie content of the treat and increase its benefits, you can exclude sugar from the ingredients altogether or replace it with natural honey.

Ingredients for pancakes:

Diabetic

The following pancakes are prepared without sugar, they will be useful for diabetics. But it’s also good for ordinary healthy people to eat them; they have an excellent taste, despite the fact that there is no sugar in the recipe.

  • 1 egg
  • half a glass of milk
  • one glass of kefir
  • 1 tablespoon vegetable oil
  • 2 tablespoons flaxseed meal
  • 3 tablespoons wheat flour
  • half a teaspoon of salt
