Rice flour pancakes with kefir recipe

Fluffy yeast pancakes with kefir (delicious)

Ingredients:

four glasses of flour, two glasses of milk and half a glass of well-soured kefir, one tablespoon of vegetable oil, three chicken eggs, half a teaspoon of salt, three tablespoons of sugar, one teaspoon of dry yeast (fast yeast).

How to cook:

Heat the milk until warm, add kefir to it, add yeast, stir and add all the flour at once. Stir and set aside for half an hour, or maybe an hour. During this time, the dough will rise greatly; it needs to be stirred periodically to allow it to settle.

After an hour, stir the dough, beat in the eggs, add salt, sugar and vegetable oil. Knead the dough thoroughly, it should be homogeneous, soft, without lumps. Transfer it back to a plate sprinkled with flour, cover with a towel and leave to “simmer” for another half hour.

After half an hour, the dough is stirred again, and if desired, add raisins or finely chopped other dried fruits. Next, everything follows the template: heat up the frying pan, pour in oil, place a full tablespoon of dough into the oil. Pancakes are fried until cooked on both sides. Sprinkle the fried and slightly cooled pancakes with powdered sugar or pour melted honey.

To prepare these pancakes, you will need coconut cream (it is thicker than milk), which is sold in supermarkets in the departments of goods for making sushi and other “Asian” food.

So, the recipe:

  • 100.0 coconut cream
  • 1 egg
  • 1 tbsp olive or coconut oil
  • flour to make a dough like pancakes (it took me about 100.0)
  • sweetener optional ()

Let's prepare it like this:

  • The egg must be beaten with a whisk.
  • Add coconut cream and oil, mix well.
  • Then gradually add flour to form a dough of the required consistency.
  • You need to fry in a dry, heated pancake pan. You can make them very thin, or thick, like pancakes, whatever you like.
  • You can eat it with sour cream, honey, ricotta cheese, everything is very tasty! They turn out nourishing and very flavorful.

Rice flour pancakes are unlikely to be recognized as “wrong” by those who are accustomed to their wheat flour counterpart. Gluten-free pancakes inherited almost everything from their predecessors, but acquired another interesting quality - a more finely porous structure, which is why they taste slightly like a biscuit. Try to cook this simple dish, and it will probably appear on your table more than once, or even become a signature weekend dish.

Rice flour pancakes

Ingredients:

  • 100 g rice flour;
  • 1 large egg (or 1 small egg + white);
  • 100 g kefir 2.5%;
  • 50 g sour cream 15%;
  • 1 teaspoon baking powder;
  • Sugar or sweetener to taste.

How to cook step by step:

  1. Pour sour cream and kefir into a bowl, add rice flour with baking powder and sugar. Knead the dough into a tight dough.
  2. Separately, beat the egg with a mixer. Pour into the mixture.
  3. Mix the mixture with a whisk until the consistency is homogeneous (the dough is thick).
  4. Place 1 tablespoon of dough on a hot frying pan (to make the pancakes more fluffy, you can add half a spoon on top). Fry on both sides for 3-5 minutes (until a golden crust forms).

Lush pancakes made with rice flour are ready. Bon appetit! Serve with sour cream, berries or sugar-free jam.

Rice flour pancakes: recipe

We had guests over while creating this step-by-step recipe with photos, so I used double the dosage of each ingredient in the rice pancake recipe. So, break the egg into a bowl.

Add sugar and unsweetened yogurt to this - if you only have sweet yogurt, reduce the amount of sugar to your taste. If you don’t have yogurt at home, but have sour milk or kefir, they will also work.

Use a teaspoon to measure out the baking soda. Then you can pour it into a tablespoon and spread it evenly over its surface, and then quench it with apple cider vinegar (ready store-bought vinegar may contain gluten!) or freshly squeezed lemon juice. At the same stage, you can add lemon zest, grated from the citrus fruit on a fine grater, to the dough for gluten-free pancakes, and the finished dish will acquire a subtle fresh aroma. Pour the dissolved soda into the dough.

Mix all the ingredients (you can use a mixer for this purpose, but I stir with a spoon - it takes literally one or two minutes), and then add the flour, mixing it into the dough one tablespoon at a time until the desired consistency is achieved. The readiness of the dough is determined as follows: take a little dough into a spoon and pour it back into the bowl. The dough should not flow, but fall into soft pieces, i.e. The consistency is somewhat denser than thick sour cream.

Heat vegetable oil in a frying pan. Spoon out the dough and fry the rice flour pancakes on both sides until they acquire a soft golden color (using rice flour will not result in a rich ruddy color). During frying, such pancakes are not particularly “convenient”: to turn them over, it is advisable to use a wide spatula with holes for the oil to drain so that the pancake can completely lie on the spatula. This will require some skill on your part, but you will learn it very quickly, no need to worry.

Place gluten-free pancakes on plates and top with your favorite toppings - sour cream, lemon cream, condensed milk, jam or honey.
