We offer another noteworthy option for preparing delicious openwork pancakes as part of a protein diet a la Dukan. This time we will make them on a kefir basis. Alternation is the stage of the diet when you can enjoy this treat.

- Eggs – 2 pcs.;
- Kefir (low-fat version) – 150 ml;
- Baking soda – ¾ tsp;
- Starch from corn grains - 2 tbsp;
- Boiling water – 1 tbsp;

How to bake “branded” Dukan pancakes based on starch
We combine the products in the following sequence:

How to do:
- Using a fork, beat the chicken egg with salt and sweetener until smooth.

- Corn starch – 2 tbsp;
- Milk – 100 ml;

First, determine how coarse the bran is; the finer it is, the less useful substances it contains. Therefore, it is advised to choose large pieces that have the maximum concentration of dietary fiber. But in order for them not to form lumps, they must be prepared for kneading. Pour grains into a deep saucepan or bowl and pour kefir over them. Then mix well and leave for 1-2 hours to absorb moisture.
Cooking pancakes begins with taking all the ingredients out of the refrigerator. They should come to room temperature for better mixing. After 20–30 minutes, you can begin to beat the egg mass. To do this, remove the yolks, add sugar or salt to the whites, depending on the future fillings, and knead the dough with a mixer. Bring the mixture to a thick foam and peaks, then add 2 tablespoons to the wheat mass, constantly stirring with a spatula. Movement from bottom to top, from the outside to the center, then the dough will become homogeneous faster.
After all the proteins are mixed with bran, add soda and quickly mix the whole mass. Baking soda mixed with kefir reacts, creating carbon dioxide bubbles. This will make the pancakes fluffier. But it is important not to overdo it, so that a specific taste does not appear.
When the kneading is finished, put a frying pan on the fire and put a piece of butter on it, or pour a teaspoon of vegetable oil. It is important to remember that when heated there is no difference between sunflower and olive oil, due to the fact that high temperature destroys all the beneficial substances in them. Only the first bran pancake requires greasing the pan, the subsequent ones move away from the surface on their own.
After the pan has warmed up, pour 2 tablespoons of dough onto it. If the mass is quite thick and does not spread over the entire area, carefully add another spoon. But then the pancakes will turn out thick, more like pancakes than the ones familiar to Slavic people. Each pancake is baked on the first side for 20 seconds, and on the second for 10 seconds. If they acquire dark spots or are overdried, you must either reduce the power of the stove or shorten the frying period.
