Banana is an ideal and self-sufficient ingredient, and its taste will completely overpower the taste of any additives. But you can use a little cinnamon or nutmeg to slightly highlight the rich aroma and dominant taste of the fruit.
I suggest you start with this simple banana muffins recipe. In America, it is customary to call this type of dessert muffins, but for us, “cupcake” sounds more familiar. You can prepare it in portion molds (paper, silicone) or take a standard rectangular mold to get a classic rectangular cake.
I offer one of my favorites, the most delicious banana muffin recipe in silicone molds with step-by-step photos.
Ingredients:
- sugar –150 g;
- medium-sized eggs – 2 pcs.;
- flour – 100 g;
- bananas – 2 pcs.;
- butter – 100 g;
- baking powder – 5 g;
- powdered sugar.
The peculiarity of banana muffins is their porosity and airiness. When ready, they literally spring under your fingers and seduce with their warm and rich aroma. To obtain exactly this result, you need to strictly adhere to the proportions of ingredients and cooking rules.
In a glass container, mash the bananas with a fork or masher.
To speed up the process, you can use a blender, then the consistency of the fruit puree will be homogeneous. But if you, like me, like it when you come across small pieces of banana, then you can do it by hand, and it’s quite easy.
Experienced pastry chefs recommend sprinkling banana puree with lemon juice to prevent the dough from darkening. However, the darker fibers of the banana also add charm to the finished cake, contrasting with the light batter and thus creating a certain pattern.
In another bowl, combine the eggs with sugar and beat with a mixer. Start at minimum speed and gradually increase it.
On average, beat the sugar-egg mixture for 2-3 minutes. This stage is the most important in the recipe and cannot be neglected. The airiness of the baked goods depends on how the mixture turns out. We do not need to achieve a steep consistency, as when preparing classic meringue, when we get a standing foam. As soon as you see small bubbles on the surface and an increase in the volume of liquid by 2-3 times, it’s time to move on to the next step.
Melt the butter in a water bath or in the microwave and leave until warm. Many chefs recommend not heating the butter, but rather melting it at room temperature. To do this, you need to take it out of the refrigerator in advance and wait for it to bloom. According to professionals, this oil makes baked goods softer and more pliable. Add the oil mixture to the banana puree and mix slowly.
In a separate container, mix the dry ingredients: flour and baking powder. I always add a pinch of salt to desserts to get a more intense flavor. Gradually mix the flour with banana puree and egg mixture.
Do not pour out the dry ingredients at once, add them in portions in 2-3 doses. At this stage, it is important not to overbeat the dough and make it homogeneous, so I recommend using a silicone spatula for mixing. The result is a sticky, aromatic dough that resembles a pancake mix in consistency.
Place the dough in silicone (or any other) molds, pre-greased. Fill the mold with banana dough only a little more than the middle, keep in mind that during the cooking process the dessert will increase in size.
Place the cupcakes in an oven preheated to 180°C and bake for 30-35 minutes. Don't let the cupcakes sit longer. Banana dough is very dense, viscous, and cracks on the surface of the cake will not appear, like with other baked goods. The moist banana pulp holds the dough in the mold. Check the readiness with a wooden skewer by piercing the dough.
After cooling on a wire rack, slightly stretch the silicone to the sides and remove the cupcakes. If you wish, you can sprinkle the finished dessert with cinnamon or powdered sugar.
From the specified amount of ingredients I got 10 cupcakes.
Option with chocolate
Banana muffins with chocolate are a great option to cheer up anyone with a sweet tooth. The exquisite taste of cocoa and soft banana puree create an unforgettable dessert. For preparation you need:
- 100 g butter;
- 1-2 eggs;
- 2 bananas;
- a glass of sugar;
- 1.5 cups flour;
- 50-60 g cocoa powder;
- 1 teaspoon baking powder;
- half a teaspoon of soda.
In this recipe, you need to mix banana puree with cocoa, and then knead the dough according to the previous recipes, add the remaining ingredients to the banana mixture with eggs and flour. (When making the dough, try to avoid any lumps inside the mixture). By the way, butter can be replaced with vegetable oil. Fill the molds and bake the cupcakes for 15 minutes. To make banana-chocolate muffins have a more pronounced taste, you can grease them with 100 g of melted milk chocolate after baking. You can also make delicious sweet fudge. For it you need to take dark chocolate, condensed milk, a little butter and honey. Soften the chocolate in a water bath along with the butter, and then add the rest of the ingredients. - you need to take the time to beat the egg-sugar mixture to get air bubbles. This is the main secret of banana muffins;
- if you bought too small bananas, then increase their number to 4.

A simple dessert made with kefir
Kefir muffins will turn out not only tender, but also soft. Sugar is not needed for cooking; bananas make the baked goods sweet. This will spoil the beauty and taste of the dessert.
Ingredients:

- raisins – 50 g;
- baking powder – 5 g;
- kefir – 210 ml;
- flour – 280 g.
Preparation:
- Mash the bananas. Place raisins in kefir. Add baking powder. Mix with pulp. Add flour.

- flour – 300 g;

- natural cocoa powder – 80 g;
- soda – ½ teaspoon;
- sugar – 250 g;
- yogurt – 270 g;
- butter – 100 g;
- eggs – 2 pcs.;
- banana – 2 pcs.;
- chocolate drops – 100 g.
In a glass container, mix the dry ingredients: flour, cocoa, soda, baking powder, sugar. In another bowl, mash the banana with a fork or masher until smooth and add two eggs.
Add melted butter and yogurt to the egg-banana mixture. Choose a natural dairy product without additives, as the cupcakes will have a rich taste due to chocolate and fruit. Add chocolate drops to the well-mixed mixture, which can be replaced with finely crushed chocolate.
Gradually add the resulting fruit puree into the dry mixture, stirring with a silicone spatula. Place the finished dough, which will be quite thick and stiff, into silicone molds and place in the oven. Cupcakes should be baked for about 20 minutes at 200°C. Readiness is checked in the same way as in the first recipe, with a toothpick. When pricking the dough, it should be almost dry.
Classic version
This traditional banana muffin recipe doesn't require much effort to prepare the treat. One of several ways to make delicious cupcakes is offered, for example, by Yulia Vysotskaya. To create muffins you will need:
- 2 ripe bananas;
- 200 g flour;
- 150 g sugar;
- 2 teaspoons baking powder;
- 2 chicken eggs;
- 100 g butter.
First you need to peel the bananas and puree their pulp using a fork or whisk. Then grind the butter in a bowl with granulated sugar. Add the egg to the resulting mixture and beat, add banana puree. After adding flour and baking powder, knead the dough to medium thickness. Then fill the molds with dough. (If you are using silicone containers, greasing is not necessary). Place banana muffins in an oven preheated to 180°C for 15-20 minutes. Dessert from Yulia Vysotskaya is ready!
Cake with cottage cheese and banana
If you want to make a more nutritious dessert, then be sure to try the cottage cheese version of banana muffin. The creamy taste and delicate consistency of the dough will definitely appeal to you and your children.
Ingredients:
- sugar – 200 g;
- fat cottage cheese – 200 g;
- eggs – 3 pcs.;
- butter – 100 g;
- medium-sized bananas - 2 pcs.;
- baking powder – 1 teaspoon;
- vanillin and powdered sugar.
In a glass container, mix eggs, sugar, vanillin and beat with a mixer until the mixture doubles in size. Add the pre-melted butter to the sugar-egg mixture and beat thoroughly again with a mixer.
In a separate bowl, mash the cottage cheese with a fork or through a sieve to remove large lumps and add the diced bananas. Pour the egg mixture into this container and mix gently with a silicone spatula.

Why buy baked goods at the store when you can make them at home? In addition, it will not contain harmful additives. To prepare muffins according to the classic recipe, we will need the following ingredients:
- Eggs – 2 pcs.
- Bananas – 180 g.
- Butter – 45 g.
- Sugar – 60 g.
- Baking powder – 1 pack.
- Wheat flour – 250 g.
How to cook:
- Remove the peel from the bananas and mash the pulp with a fork.
- Grind soft butter with sugar.
- Add chicken eggs, beat until smooth. Add banana, stir well.
- Add flour and baking powder and mix. Distribute the mixture among the molds. Bake for 35 minutes at 190 degrees. Remove the delicious banana muffins while warm and sprinkle with powdered sugar.
Banana cake - step by step recipe in the oven
List of ingredients:
- salt - 6 g;
- three bananas;
- premium flour - 220 g;
- granulated sugar - 0.2 kg;
- egg - 2 pcs.;
- soda - 11 g;
- piece of butter - 50 gr.
Step by step steps:
- Pour the flour into the bowl through a sieve.
- Add a pinch of soda, salt and sugar here.
- Separately, whisk the eggs and pour them into the flour.
- Mash the bananas and melt a piece of butter.
- Place both ingredients into the flour mixture. Mix all the products together and make a dough.
- Turn on the oven, set its temperature to 180 degrees.
- Take a cake pan, grease the sides and bottom with oil, and dust with flour.

- The banana cake is baked for 60 minutes.

Meatless muffins with banana
Eggless banana muffins can easily be baked during Lent. There are no animal products in the recipe. And to improve the taste, you can add dried fruits.
Required:
- Sunflower oil – 0.5 tbsp.
- Bananas – 2 pcs.
- Cane sugar – 1 tbsp.
- Flour – 270 g.
- Soda – 1 tsp.
- Dried cranberries - to taste.
How to cook:
- Combine banana pulp and cane sugar and mash with a fork.
- Suppress baking soda with vinegar. Add it to the dough along with vegetable oil.
- Add sifted wheat flour and dried cranberries into the mixture.
- Place about 2 tbsp in each pan. test. Bake lean banana muffins for about half an hour at 180 degrees. The baked goods are very tender and aromatic.
Cottage cheese - banana cake
You will need:
- bananas - 2 pcs.;
- flour - 0.25 kg;
- granulated sugar - 0.2 kg;
- margarine - 0.1 kg;

- baking powder - 15 g;
- cottage cheese - 0.2 kg;
- vanilla to taste.
Cooking method:
- Combine raw eggs, vanillin and sugar. Grind the products using a mixer.
- Melt margarine in the microwave or in a frying pan and transfer to the first container.
- Turn on the mixer again and mix the mixture.
- Chop fresh bananas into cubes and mash with a fork.
- Grind the cottage cheese in another bowl with a fork.
- Combine bananas and cottage cheese.
- Pour the contents of the first bowl into the curd-banana mixture. Mix the ingredients with a spoon.
- Add flour combined with baking powder and knead the dough.
- Transfer it to a cake pan.
- Cook in the oven for 45 minutes.
- Serve a lush warm cake sprinkled with powdered sugar. Enjoy your tea!
