If you find some sour milk in the refrigerator, do not rush to pour it into the sink. You can use it to make a very healthy homemade cheese with a delicate creamy taste. It will be an excellent replacement for store-bought analogues and is perfect for creating various sandwiches. To prepare this sour milk dish you will need:

  • 4 large spoons of sour cream;
  • liter of sour milk;
  • 4 chicken eggs;
  • a teaspoon of natural lemon juice;
  • dill greens.

Combine sour milk and lemon juice in one saucepan. All this is sent to the stove and heated over moderate heat. Eggs, beaten with sour cream and salt, are poured into warm milk and boiled together for twenty-five minutes. Shortly before the completion of heat treatment, chopped dill is added to the boiling mixture.

  • 500 milliliters of sour milk;
  • a glass of high-grade flour;
  • a pair of eggs;
  • ½ teaspoon baking soda;
  • salt and sugar.

Milk is combined in one bowl with eggs and soda. The resulting mass is lightly whisked and then mixed with sugar, salt and oxygen-enriched flour. The container with the finished dough is placed in a bowl of hot water, covered with a towel and left for fifteen minutes. After a quarter of an hour, spoon it into hot vegetable oil and fry for several minutes on each side.

1. Homemade cottage cheese

If you have 1.5-2 liters of milk left, you can make wonderful cottage cheese. It will yield approximately 200 - 400 g. To do this you will need sour milk, two saucepans for a water bath, a colander and gauze. Pour the milk into a smaller saucepan and place it in a water bath. When the water boils, watch the milk. The milk will begin to curdle, separating into flakes and whey.

It is important not to overheat the milk, otherwise the cottage cheese will turn out dry. Once the whey has separated, remove the pan from the milk and set aside. Drain the resulting mixture into a colander lined with gauze and wait until it cools. When the liquid has drained, wrap the curd in cheesecloth and hang until the whey stops dripping.

2. Delicious pastries

You can prepare many delicious dishes from sour milk: fluffy pancakes, pancakes, pies, bread. The dough made with sour milk turns out airy and rises quickly. We recommend pancakes with sour milk.

Ingredients:

Milk 500 ml. Wheat flour 1 cup Chicken egg 2 pcs. Soda 1/2 tsp. Salt, sugar to taste

Lactic acid, acting on the fibers of meat, makes it unusually tender. In the Caucasus, meat has long been marinated in sour milk, and Georgian kebab is considered the most delicious. You can use any meat and any spices.

The simplest recipe is meat, onions, salt, pepper and sour milk. Salt and pepper the meat, cut the onion into rings. Place the meat and onions in a bowl, pour in sour milk to cover all the meat and refrigerate for at least 2 hours. Fry on skewers or in a frying pan and enjoy the tasty and tender meat.

  • 300 grams of any berries;
  • a couple of glasses of sifted flour;
  • a pinch of vanillin.

Beat the eggs with sugar and then combine with sour milk. The resulting liquid is mixed with vanillin, baking powder and oxygen-enriched flour. Part of the finished dough is poured into a greased mold. Place the washed berries on top and cover them with the remaining flour mixture. Bake the homemade pie at medium temperature for no longer than forty minutes.

Pancakes with sour milk

You will need: 400 g flour, 60 g butter for greasing pancakes, 20 g lard, 4 large eggs, 2 cups sour milk, 4-5 tbsp. medium-sized sugar, 2 tbsp. ghee for dough, 1 pinch of salt.

How to cook pancakes with sour milk. Melt the butter. Separate the egg whites from the yolks, grind the yolks with sugar, pour in some of the milk, add warm butter, add all the sifted flour and knead a medium-thick dough, gradually add the rest of the milk, kneading a homogeneous dough, thus bringing the dough to the desired thickness - the consistency of liquid sour cream. Cool the egg whites and beat with salt, mix them into the dough. Heat a frying pan, grease it with a piece of lard, pour out the batter with a ladle and fry thin pancakes. Grease the finished pancakes with butter, stacking them on top of each other.

At the very end, the remaining milk, soda and vegetable oil are added there. The batter is poured in small portions onto a hot frying pan and fried on each side. The finished pancakes are stacked on a plate and greased with butter or stuffed with various fillings.

Mastava

This is a national Uzbek dish with sour milk. It is a meat soup with the addition of rice and a large number of various vegetables. To prepare it you will need:

  • half a kilo of lamb;
  • 4 tomatoes;
  • 100 milliliters of sour milk;
  • a couple of large spoons of rice;
  • 6 potatoes;
  • one medium carrot and one onion;
  • small turnip;
  • dill, parsley and cilantro;
  • ground red pepper, salt and vegetable oil.

First you need to deal with turnips, onions and carrots. They are washed, cleaned, crushed and lightly fried in a small amount of vegetable fat. Pour vegetable oil into a separate thick-walled pan, heat it thoroughly and add pieces of lamb to it. As soon as the meat is browned, add water and boil it, not forgetting to remove any foam that forms.

After an hour, fried vegetables are loaded into the pan with meat, and after another fifteen minutes - fresh tomatoes. Shortly before the completion of heat treatment, chopped potatoes and washed rice are added to the future Uzbek soup. All this is boiled until the vegetables are soft, sprinkled with chopped herbs and removed from the stove. Before serving, mastava is seasoned with sour milk.

Flatbread

This sour milk dish can be a replacement for your usual bread or an excellent addition to tea. It can be eaten with soups or dipped in jam or honey. To make these versatile flatbreads you will need:

  • 200 grams of wheat flour;
  • 250 milliliters of sour milk;
  • 70 grams of butter;
  • ½ teaspoon each of soda and salt;
  • vegetable oil (for frying).

Sour milk is combined with soda and salt, and then mixed with melted butter and oxygenated flour. The finished liquid and viscous dough is poured in portions onto a hot, greased frying pan and fried on each side. The browned flatbreads are placed in a stack on a plate and served to the table.

Potato soup with leeks

To prepare 4 servings of soup you will need:

  • 400 grams of potatoes;
  • 100 grams of leeks;
  • 2 eggs;
  • 30 grams of butter;
  • 100 ml sour milk;
  • 700 ml water;
  • salt and black pepper to taste.

Boil the eggs hard and set aside.

Place chopped leeks in a pan of salted water and boil for 5 minutes. Then add diced potatoes and black pepper to it. When the potatoes are ready, season the soup with butter and turn off the stove.

When serving, place half an egg on each plate and add sour milk.

Homemade cottage cheese

This is a classic example of a simple and healthy dish made from sour milk in a slow cooker. Such cottage cheese does not contain a single gram of harmful additives, which means it is ideal for baby food. To prepare it, you only need 1 liter of sour cow's milk.

The main and only ingredient is poured into the multicooker bowl and cooked in the “Warming” mode for an hour. Then the contents of the cooking container of the device are thrown onto a sieve lined with clean gauze and put aside. After a few hours, the fabric is tied into a bag and lightly squeezed to get rid of the remaining whey.

Manna

This recipe for a sour milk dish will certainly arouse considerable interest among lovers of home-baked goods. Manna prepared in this way has a pleasant taste and retains its original freshness for a long time. To create it you will need:

  • a glass of semolina;
  • ½ teaspoon of soda;
  • a glass of sour milk;
  • 3 eggs;
  • a glass of sugar;
  • 170 grams of good butter;
  • a glass of wheat flour.

Semolina is poured with sour milk and left for at least an hour. Then they add eggs, soda, sugar, ghee and oxygenated flour. The finished dough is intensively whipped with a mixer and poured into a greased multicooker container. Cover the device with a lid and activate the “Baking” mode. After about an hour, the browned manna is removed from the multicooker bowl and served. If desired, steamed raisins, any berries, pieces of fruit, grated chocolate, chopped nuts or any other fillers can be added to the dough from which such a pie is baked.

What can you make from sour milk for dessert?

One of the simplest and most delicious desserts based on sour milk is fruit pie. It can be prepared at any time of the year using seasonal fruits and berries. In addition, this dessert is very easy to prepare. So, you will need:

  • 1 tbsp. sour milk;
  • 1 tbsp. Sahara;
  • 2 tbsp. wheat flour;
  • 2 eggs;
  • 1 packet of vanilla sugar;
  • 1 tsp. soda;
  • fruits or berries - bananas, apples, pineapples, cherries, etc.

Prepare all the ingredients and start cooking.

  1. Separate the whites from the yolks.
  2. Beat the egg whites with the sugar until stiff peaks form. To do this, you need to beat them with a mixer for quite a long time.
  3. Lightly beat the yolks with a fork.
  4. Carefully combine the whites with the yolks so that the whites do not fall off.
  5. Add sour milk, vanilla sugar and soda to this tender mass.
  6. Add the sifted flour in small portions, kneading each portion thoroughly. You should have a fairly runny dough.
  7. Grease a baking dish with vegetable or butter. Sprinkle it with a thin layer of crushed crackers or regular flour.
  8. Place a layer of fruits or berries.
  9. Pour the dough into the mold.
  10. Bake the pie in a hot oven until done. The finished pie can be sprinkled with powdered sugar.

To make the dessert more festive, you can use any cream, for example custard, or you can simply spread jam on top of the pie.

Recipe for cream dessert with sour milk

You will need: 500 ml sour milk, 1 cup sour cream, 1 orange (zest), 2/3 cup sugar, 1 tsp. gelatin.

How to prepare cream dessert with sour milk. Mix sour milk with sour cream, add sugar, orange zest, gelatin dissolved in 0.5 cups of water, mix, beat until thickened, placing the bowl with the ingredients in a large container filled with ice. Place the cream in bowls, place a mug of orange on top, sprinkle with powdered sugar, and refrigerate for 2 hours before serving.

Cucumber soup

This easy sour milk first course is perfect for a summer lunch. It is served cold and prepared without any heat treatment at all. To make this soup you will need:

  • a couple of fresh cucumbers;
  • a large spoonful of chopped walnuts and vegetable oil;
  • a clove of garlic;
  • 100 milliliters each of filtered water and sour milk;
  • ½ boiled egg;
  • salt and fresh dill.

Washed cucumbers are peeled, cut into small cubes and placed in a suitable saucepan. Garlic, crushed with salt, chopped dill and vegetable oil are also added there. All this is poured with sour milk and filtered water. The fully prepared cucumber soup is cooled in the refrigerator and only then placed into portioned plates. Immediately before use, it is sprinkled with chopped walnuts and decorated with pieces of boiled egg.

Cupcake recipe

By far, baking is the most popular way to use sour milk. To make a cupcake with sour milk, you will need: - 3 glasses of sour milk; - 2 cups sugar; - 1 glass of semolina; - 3 cups flour; - 4 eggs; - ½ tsp. soda; - any fruits, berries or nuts.

Mix dry ingredients in a deep bowl: flour, baking soda and granulated sugar. Pour semolina with sour milk and set aside for 15-20 minutes to swell. Then connect all the components. Pour the swollen semolina into the flour mixture, add fruits, berries or nuts of your choice. These can be pitted cherries and raisins, dried apricots, canned pineapple pieces, black and red currants, plums, apples, chopped walnut kernels, etc. Beat the eggs into the prepared mass and mix everything thoroughly. The dough should be the consistency of thick sour cream. Pour it into a silicone or heat-resistant mold and place it in an oven preheated to 200°C. Cake baking time is 50-60 minutes.
