Preparing a lavash roll

Do you know what the most harmful drink is? Tea. You always want to grab a bun, a piece of candy, or better yet, both. But rolls made from thin unleavened dough with cottage cheese can be an excellent substitute for all these unhealthy goodies - they go well with tea made from ginger, honey and lemon.

Lavash snack with cottage cheese and herbs

To prepare this delicious dish, we need very little time. And the ingredients for the dish are simple and affordable; they can always be found in the refrigerator or the nearest supermarket. You will get an original, tasty and healthy snack that you won’t be ashamed to serve to your guests.

What is necessary:

  • cottage cheese 9% – 300-340 g;
  • garlic to taste;
  • dill, basil – 60-70 g each;
  • thin pita bread;
  • walnuts – 45-60 g;
  • sour cream – 110-120 ml;
  • grainy mustard, salt, spices.

How to cook:

  1. We need to wash the greens well and dry them thoroughly. The more of it there is in the filling, the brighter the dish will turn out. You can use not only parsley and basil, but any greens that you have on hand.
  2. The prepared greens need to be finely chopped, sprinkled with salt, and mixed - this way they will release juice and fully reveal their taste and aroma.
  3. Fry the nuts in a frying pan without oil, chop the garlic and nuts using a blender. Mash the cottage cheese well with a fork. If yours is very dry, you can add a little milk: it should be a smooth, homogeneous mass.
  4. Let's prepare the sauce - mix sour cream with mustard, add the nut mixture.
  5. All that remains is to assemble our appetizer. Unroll the sheet of dough, brush it with sauce, and place the curd mixture and herbs on top. The filling should not be distributed close to the edges, otherwise it will start to fall out.
  6. Roll up the roll, carefully wrap it in cling film, and put it in the refrigerator for an hour.

In addition to cottage cheese and herbs, you can add olives, black olives, and bell peppers to this appetizer. But it’s better to leave the tomatoes for baked pita bread, but more on that later. I like to use soft spreadable cheese instead of sour cream sauce. Try it too, you will have two quick snacks in your collection.

By the way, it is not necessary to cook the cottage cheese wrapped in pita bread. Simple cottage cheese with garlic and herbs is also an easy and healthy snack.

Baked roll

If you bake the roll a little in the oven, you will get a wonderful hot appetizer. You can also fry it in a frying pan: it turns out delicious, but high in calories, and we don’t need that. So we'll bake it.

What is necessary:

  • Armenian lavash;
  • quail egg – 4-5 pcs.;
  • tomatoes – 150-180 g;
  • sesame seeds (you can use flaxseed, it turns out very fragrant) – 25 g;
  • leek – 80-90 g;
  • spinach – 70-75 g;
  • milk – 170-180 ml;
  • fine-grained cottage cheese – 320-340 g;
  • salt, bell pepper petals.

Step by step recipe:

  1. Finely chop the greens, peel the tomatoes, cut into small pieces of arbitrary shape. Mix vegetables with cottage cheese, add milk. If you like, you can add a little garlic.
  2. Move the eggs with a fork, pour into the curd mass, add salt, pepper petals, sesame seeds.
  3. Place a sheet of unleavened dough on foil, lay out the filling, and roll it up. And wrap it in foil.
  4. Let's place our dish in the oven, the temperature should be about 180 degrees. After a quarter of an hour, carefully open the foil and bake for another 5-7 minutes. You can sprinkle the dish with grated cheese, but even without it it turns out very tasty.

Why should tomatoes be added to baked rolls? In a cold appetizer they will release juice and the dough will become soggy – it won’t be very tasty. But their juice will come in handy in a baked dish.

Useful tips

In such recipes, you can completely do without baking and frying by filling a pita roll or envelope, for example, with salted curd mass with herbs, cheese, finely chopped boiled eggs with mayonnaise or some other filling that does not require cooking. All cottage cheese-based fillings proposed in the recipes can be safely reformatted by changing or adding any other ingredients, because the fresh taste of lavash allows you to realize any gastronomic fantasies - the fillings can be snack or sweet.

In addition, it is worth taking advantage of a huge assortment of other fillings; for example, you can prepare a magnificent lavash roll with red fish. I also recommend trying to make lavash sandwiches and lavash pie. Another win-win option is lavash pizza. By the way, this kind of “Armenian lavash”, used in all these recipes, does not necessarily have to be purchased, you can successfully prepare it yourself - it’s not at all difficult, and it will turn out much tastier than store-bought.
