Today I wanted fried zucchini, I really wanted it. But since fried zucchini is usually very high in calories, I decided to fry the zucchini without oil. To go with the fried zucchini, I prepared a chicken breast, also fried without oil.

Reference: 100 grams of skinless chicken fillet contains 100 kcal, and squash contains 23 kcal. Add 12 kcal. for spices and garlic. As a result, we get a delicious, satisfying dinner at 185 kcal.

Frying zucchini without oil is very simple, the main thing is to have a good frying pan and everything will work out.

Ingredients

  1. young zucchini - 1 piece
  2. chicken fillet – 120 g
  3. garlic - 1-2 cloves (optional)
  4. coriander, paprika, hops-suneli - a pinch
  5. salt - to taste (optional)
  6. soy sauce - to taste
  7. lemon juice - 1 tbsp.

Cooking method

Prepare all the ingredients for making fried zucchini without oil. Wash the zucchini well and cut into thin slices. Sprinkle with coriander, hops-suneli, paprika and salt. Place the zucchini on a hot frying pan and fry on both sides. Ingredients:

  • Zucchini - 380 g;
  • Chicken fillet (breast) - 250 g;
  • Mustard - ½ tsp;
  • White bread or yesterday's loaf - 40 g;
  • Chicken egg - 1 pc.;
  • Onion - 1 pc.;
  • Garlic - 3-4 cloves;
  • Breadcrumbs - 4-5 tbsp;
  • Unscented vegetable oil - 1 tbsp;
  • Salt - to taste;
  • Ground black pepper - to taste.

How to cook meatballs with zucchini in the oven

1. Grate the zucchini on a coarse grater. Add a couple of pinches of salt and stir. Leave for 10-15 minutes so that the zucchini releases its juice, then squeeze.

2. Meanwhile, cut a slice of white bread into cubes and place in a deep bowl, fill with water and leave to swell for 10-15 minutes. Bread can be taken either fresh or stale.

3. Cut the onion into small pieces, squeeze the garlic through a press.

4. Select a deep bowl to mix all the ingredients. Add the drained bread and mix.

5. Chicken fillet and twist in a meat grinder into minced meat. Add chopped meat and chopped onion and garlic. Mix well.

6. Add tomato paste or ketchup, mustard, egg. Add salt and black pepper to taste and stir.

7. We look at the consistency: if the minced meat turns out to be runny, add breadcrumbs; they can be replaced with semolina or flour. If the mass is thick, additives may not be used. Mix well and place the bowl of minced meat in the refrigerator for 30 minutes so that all ingredients are well saturated with each other.

8. Preheat the oven to 180-190 degrees. Selecting a baking dish. Lubricate the bottom with vegetable oil. We form balls from the minced meat with wet hands and place them in a mold. Pour 100-150 ml of water into the bottom and bake for 40-50 minutes.

Ingredients:

  • Zucchini - 2 pcs.
  • Egg - 2 pcs
  • Flour - 3 tbsp.
  • Salt pepper
  • Vegetable oil
  • Mayonnaise - 100 g
  • Garlic - 4 cloves

Preparation:

1. Cut the zucchini into half-centimeter rings, add a teaspoon of salt and leave to release the juice for 15 minutes.

2. Then roll the zucchini in flour. In order to do this faster and more evenly, you need to put the rings in small batches in a plastic container with a lid, add flour to them and shake several times.

3. Dip the boned rings into a bowl with beaten eggs and immediately place them in a heated frying pan with vegetable oil.

Fry over medium heat for 2-3 minutes on each side until golden brown. Then we put it on a plate and grease each zucchini on top with a sauce made from mayonnaise and garlic mixed together, squeezed through a press.

INGREDIENTS

COOKING

  1. Wash the zucchini and cut into slices. While the vegetables are young, you don’t have to peel them.
  2. Now let's prepare the breading. Place flour, salt and pepper into a strong plastic bag. Focus on your taste. Place the zucchini in a bag, twist it at the neck so that air remains inside, shake well so that all the pieces of zucchini are covered with breading.
  3. Then turn on the oven, pour 2-3 tbsp onto a baking sheet. spoons of vegetable oil. If desired, you can omit adding oil at all, then you will get the effect of frying in a dry frying pan. Place the zucchini on a preheated baking sheet and place in the oven for 15–20 minutes. Halfway through cooking, turn the zucchini over to the other side.
  4. You can prepare sauce for the appetizer. I prefer to cook with sour cream, but you can use mayonnaise. Add chopped garlic and herbs to sour cream to taste. While you were making the sauce, the zucchini arrived in the oven. You can serve, bon appetit!

Ingredients:

  • zucchini zucchini – 2 pcs.;
  • tomatoes – 2 pcs.;
  • garlic – 3 cloves;
  • flour – 2 tbsp. l.;
  • salt;
  • refined sunflower oil – 80 g;
  • mayonnaise – 2 tbsp. l.;
  • dill greens.

Cooking method

  • Wash the zucchini, cut off the stalks. Cut into 1.5 cm thick slices.
  • Lightly salt each circle, roll in flour and place in a hot frying pan with butter. Over medium heat, fry on both sides until golden brown. Place on a paper towel and then transfer to a plate.
  • In a bowl, mix mayonnaise with garlic passed through a culinary press and chopped herbs. There is no need to add salt, as there is enough salt in mayonnaise.
  • Rinse the tomatoes, wipe dry, cut into thin slices. To make the dish look aesthetically pleasing, take tomatoes of the same diameter as the zucchini.
  • Place a slice of tomato on each circle of zucchini and generously spread the prepared sauce on top. Garnish with a sprig of dill.
