How to make dough from whole grain flour for pies and pies

To knead the dough, first make a dough. Its preparation begins by crumbling fresh compressed yeast into a deep bowl. Add all the sweet ingredient to them – sugar.

Fill the contents in a bowl with warm water. Attention: the water temperature should not be more than 40 degrees! Mix the ingredients.

Add approximately 2 tablespoons of regular wheat flour to the resulting yeast mixture. Mix. Cover the bowl with a napkin and put the dough in a warm place for 15 minutes.

The dough for yeast dough bubbles vigorously, which means it’s ready. Break one egg into it. Add salt. Mix.

We begin to pour two types of flour into the resulting mass: regular and whole grain.

Start kneading the dough first in a bowl. We continue kneading on the table, adding more flour if necessary.

To make the dough “grow”, put it in a warm place (40 minutes - 1 hour).

We use ready-made yeast dough from whole grain flour for its intended purpose: we make delicious homemade pies or pies.

Not so long ago, white refined flour was so expensive that only wealthy people could afford it. The poor received whole grain flour, from which they baked their own bread. Today the situation has changed radically. High-grade flour can be bought for pennies in any supermarket, while you can still try to find whole-wheat flour, and it costs much more. Attitudes towards it improved after nutritionists explained the difference between the varieties.

How to make sourdough bread from whole grain flour

wholemeal bread

Whole grain bread is baked not only with yeast, but also with sourdough. Sourdough can be made from any product: raisins, hops, rye flour.

Why did bakers start baking sourdough bread? After all, using yeast is very convenient and easy to make dough. It turns out that when baking bread, the yeast does not die completely. Once in the human body, they continue to multiply.

Our ancestors knew about the harmful effects of yeast on the body. The bread was baked using sourdough in a sponge manner. During the fermentation of the dough, fungal cultures managed to multiply and die.

Number of products:

  • 380-400 grams of whole grain flour;
  • 250 ml water;
  • 15 ml vegetable oil;
  • 4-5 grams of table salt;
  • 4-5 grams of granulated sugar;
  • 10 grams of butter;
  • 150 grams of sourdough;

Operating procedure:

Pour water heated to 35-40 degrees into a bowl, add starter, salt, sugar, butter and stir.

wholemeal bread

Pour sifted coarse flour into the liquid in small portions. Stir with a spatula. After pouring half the amount, cover the bowl with a towel and leave to stand for 15-20 minutes.

Then also stir in the remaining flour in parts. Knead the dough “wet”, a little sticky to your hands. We divide it into parts and transfer it into molds for further rise.

wholemeal bread

Place the molds in a warm place and cover the top with a cloth. Leave the bread alone for 1.5-2 hours. It is better to light the oven in advance. We bake whole grain bread at a high temperature of 200 degrees.

Freshly baked bread cannot be cut while it is hot. It is necessary to cool it, otherwise the pulp will stick together.

A quick way to bake bread with whole wheat flour

wholemeal bread

For those who find the above method of baking whole grain bread without yeast troublesome, there are other methods. You can make unleavened dough using kefir and soda or baking powder.

Nutritionists recommend this bread with the addition of oatmeal or rye flour. This improves the taste of the products and is healthier for the human body.

Number of products:

  • 210 grams whole grain flour;
  • 110 grams of rye flour;
  • 65 grams of oat flour;

  • 250 ml kefir of any fat content (not fresh);
  • 25 grams of granulated sugar;
  • 7-8 grams of table salt;
  • 6-7 grams of soda;

Operating procedure:

Pour all the flour into the bowl for kneading the dough. Add salt, sugar, soda. Stir so that all components are distributed evenly throughout the mass.

wholemeal bread

Add vegetable oil to kefir, mix with a tablespoon and pour into a bowl with the dry mixture.

Knead the dough for 6-7 minutes with your hands in a bowl, then on a cutting board. The dough should become soft and not sticky to your hands. If necessary, add a little flour.

wholemeal bread

Transfer to a bowl or leave to “distance” a little on the board. Cover the top with a kitchen towel. Proofing time is 20-30 minutes.

Divide the dough into two parts, shape it into a round or elongated shape, make cuts with a knife and bake in the oven or slow cooker.

In the oven, bread made from a mixture of whole grain and rye flour is baked at a temperature of 190-200 degrees. In a slow cooker you will have to turn the bread.

For a multicooker, select the “baking” mode and set the time to 30 minutes. At the end of the process, take out the bun, turn it upside down and turn it on again for 30 minutes.

Cool the baked buns under a towel.

Yeast pies

There are real wars going on on the Internet about the benefits and dangers of yeast - some say that they are almost life-threatening, offering sourdoughs in return, and others claim that there is as much danger in them as in sourdoughs. Let's get rid of the controversy, and rather, let's prepare real yeast pies! As a filling, I offer 2 options - green onions and a boiled egg or chicken with cheese.

Nutritional value per 100 g:

  1. Calories: 125
  2. Proteins: 9
  3. Fats 5
  4. Carbohydrates: 12
Products for the test:
  • 1 egg
  • glass of wheat flour
  • half a cup of rice flour
  • salt - a little
  • low-fat milk - 100 ml
  • 20 g fresh yeast
For filling:
  • bunch of green onions
  • 4 boiled eggs

or

  • 200 g chicken fillet already prepared (you can boil, bake or even use leftover shish kebab)
  • 100 g grated cheese.
Step-by-step preparation:
  1. Heat the milk until warm (so you can put your hand down). Add 2 tbsp there. wheat flour, crumble the yeast and mix well. After 20-30 minutes, the yeast should come to life - “the cap will grow.”
  2. Add all other ingredients for the dough and knead. Cover with a towel and set aside to let it rise. We won’t wait for it to grow 2 or 3 times, an hour will be enough for us. During this time it should grow a little.
  3. In the meantime, we are making the filling: in one plate we mix chopped eggs with onions, and in another - finely chopped chicken and grated cheese.
  4. Lightly grease your hands with oil and form the filled pies. The dough is very tender and sticky, but that’s how it should be.
  5. The top of the pies can be greased with milk or egg yolk diluted with 1 tbsp. water - a delicious blush is guaranteed.
