Oatmeal cake

Cooking time: 40 minutes

Ingredients (4 servings):

  • Egg - 3 pcs
  • Sugar - 1 glass
  • Hot water - 3 tbsp. spoons
  • Hercules oat flakes “Uvelka” – 90 g
  • Wheat flour “Uvelka” – 70 g

Preparation:

1. Separate the egg whites from the yolks.

2. Dry the Uvelka oat flakes in a frying pan until golden brown.

3. Combine the yolks and half the sugar with boiling water and beat until thick foam is obtained.

4. Beat the whites until stiff, adding the remaining sugar, then combine with the beaten yolks.

5. Add flour and oat flakes to the resulting mass while whisking continuously (leave some of the flakes for decoration). Place the finished mixture in a greased pan and bake at 240–250 °C.

6. Release the finished cake from the mold, cool, cut into two layers and glue with jam. Cover the surface with jam or cream and sprinkle with the remaining oatmeal, which can be mixed with chopped nuts.

Bean cake with chestnut cream

Cooking time: 1 hour 10 minutes

Ingredients (4 servings):

  • White beans “Uvelka” – 1 cup
  • Eggs - 3 pcs
  • Sugar - 2/3 cup
  • Vanilla sugar - 1 teaspoon
  • Breadcrumbs - 3 tbsp. spoons
  • Cognac - 1 tbsp. spoon
  • Chestnut - 200 g
  • Honey – 100 g
  • Egg yolks - 1 pc.
  • Sour cream – 100 g
  • Butter - 60 g
  • Vanilla sugar - 1 teaspoon

Preparation:

1. Boil the beans until tender and pass through a meat grinder. Separate the egg yolks from the whites, mix with half the sugar and vanilla sugar, mash until foam forms, then mix with the beans. Add cognac, breadcrumbs, stir.

2. Beat the egg whites, gradually adding the remaining sugar, until stable foam, then mix into the bean mixture.

3. Place the prepared dough into a greased pan and bake for 45–50 minutes at 210°C.

4. For the cream: peel and boil the chestnuts until tender, then rub them hot through a sieve or pass through a meat grinder. Add egg yolk, honey and sour cream, beat. Beat the butter with vanilla sugar and mix with the chestnut mass.

5. Cut the bean sponge cake into 2-3 cake layers, brush them with the prepared cream and place one on top of the other.

Cake with rice and chicken fillet

Cooking time: 1 hour

Ingredients (4 servings):

  • Chicken fillet - 1 piece
  • Medium grain rice “Uvelka” – 2 cups
  • Water - 3 glasses
  • Boiled carrots - 2 pcs.
  • Eggs - 6 pcs
  • Milk - 2 tbsp. spoons

Preparation:

1. Boil the chicken, separate the flesh and cut it into small pieces.

2. Cut the carrots into thin slices, cut out shapes with a mold, place them on the bottom of a frying pan, previously greased with vegetable oil. Place chicken meat on top.

3. Cook the rice in salted water, drain in a colander.

4. Beat eggs with milk and salt.

5. Place the rice in an even layer on the chicken, pour in the egg mixture and bake at 170°C until the mixture thickens.

6. Place the cake on a plate and decorate with herbs.

For a no-bake oatmeal cake we will need:

  • 800 grams of oatmeal cookies;
  • 500 grams 9% cottage cheese;
  • 1 cup of sugar;
  • 175 grams of butter;
  • 4 tbsp. oatmeal;
  • 2 tbsp. cocoa;
  • 2 tbsp. raisins (optional).

To start the process, we lay out oatmeal cookies around the perimeter of our future lazy cake. And the tighter the better.

Actually, you can do this on a regular tray wrapped in foil. But when it comes to cakes, I am a known coward and overcautious person. Therefore, until the very last stage, I did everything in the form, just in case... Now set aside 25 grams of butter and 1 tablespoon of sugar. This is for later.

Now is the time for the curd cream. For it, we need to beat butter, cottage cheese and sugar in a mixer or blender, and then divide the resulting mass into two parts. Add cocoa to one part, raisins to the other (if we have them). Cover the cookies with one of two types of curd cream. I started with white. We lay out the cookies again... ...which we cover with the second type of cream. For the third and last time, lay out a layer of cookies and distribute all the remaining cream more or less evenly on top. And now let’s remember our little “stash” :)) Heat the oil in a frying pan, pour oatmeal into it, and add a spoonful of sugar. And fry it all until golden brown. All we have to do is wait for the cereal to cool and sprinkle it on the top and sides of our wonderful cake. Now it is vital for him to spend at least two hours in the refrigerator. Oatmeal is one of the most healthy and low-calorie dishes. It contains vitamins A, E, groups B, K, as well as micro and macroelements. But eating oatmeal for breakfast, lunch and dinner is not only boring, but also harmful. Therefore, an alternative option, and even in the form of a dessert, will certainly appeal to many adherents of a healthy diet.

The oatmeal cake turns out to be not only healthy, but also very beautiful; it is not a shame to serve it to the table if guests come over. An added bonus is the ease of preparation and long shelf life, if you have the willpower not to eat it in one sitting.

How to make oat cake

  1. Rinse dried fruits well under running water, but do not need to soak them.
  2. Pour oatmeal into a large deep container, enamel or glass. Pour kefir over them. If desired, you can take kefir of any fat content.
  3. In a separate bowl, mash the cottage cheese with a fork. If the cottage cheese is homemade and therefore wet, then you don’t need to put it in a colander to dry it; the whey will not interfere with baking the cake.
  4. Place cottage cheese in a bowl with cereal and kefir. Pour 1 egg here.
  5. Quench baking soda with vinegar. The original recipe calls for these very products; if you wish, you can try replacing them with baking powder. Also pour the slaked soda into the bowl with the dough.
  6. Mix all ingredients well (without a mixer, with a spatula) and leave to stand. The flakes should be saturated with moisture and swell. This will take 20-30 minutes.
  7. While the dough is rising, you need to prepare the dried fruits. First, they need to be dried from moisture. To do this, just put them in a colander for a while. Secondly, dried apricots and prunes need to be chopped. The pieces should be about the same size as raisins. Both cut perfectly with a sharp knife.
  8. When the oatmeal swells (the flakes should become soft and resemble thick porridge), add dried fruits to the dough.
  9. Line a metal pan with parchment paper (no need to grease with vegetable oil). The springform pan is very easy to use: the cake turns out smooth and beautiful. Place the dough in the mold and level it so that the thickness of the dough is the same over the entire surface. If this is not done, then the cake will burn in the “low” areas, and remain raw in the “high” areas.
  10. Preheat the oven to 180 0 C. Place the mold with the dough in it for 30 minutes. The baking time is approximate, since it depends on the diameter of the mold (the larger the diameter, the thinner the cake, the faster it will bake), and on the oven itself. Important: if you check readiness with a toothpick or wooden skewer, it will still be wet even after half an hour, this is not an indicator. The dough will only become dry after a few hours of cooling.

The finished cake does not need to be removed from the mold until it has cooled completely. This will take several hours. Only in this case will the oatmeal become crispy and the dough will not stretch, as if it was not baked completely. It's best to leave it overnight.

The cake easily comes off the parchment paper and is removed from the pan.

An oatmeal cake without flour and sugar will not get any worse if you diversify its taste: you can add nuts (peanuts or walnuts), cocoa, dates, berries, banana, cinnamon, honey. Even though there is no sugar in the recipe, the cake still turns out sweet and tender.
