Today we are preparing a delicious, light and satisfying dish that is suitable for a family lunch (for the second) or for dinner - turkey with cauliflower in a slow cooker. In addition, the dish is dietary and healthy (of course, if you don’t add a lot of pepper and don’t pour out a ton of oil when frying). After all, both turkey meat and cauliflower are considered dietary foods. They contain many useful substances (vitamins, micro- and macroelements) for the human body. And, importantly, both products are low-calorie.
Now a few words about preparation. I think it's not complicated at all. Naturally, most of you have multicookers of a different model and even a different manufacturer. For cooking you will need two modes. The first is for pre-frying - the mode with the same name; in case of its absence, most often it is “Baking”. The second is for the main process, for extinguishing - the mode is called “Extinguishing”.
How to cook turkey with cauliflower in a slow cooker
1. Prepare everything you need: turkey, the vegetables listed above, salt and pepper, oil for frying and water. And, if you have vegetable broth, then use it instead of water. We rinse the cauliflower very thoroughly (I also soak it for an hour and a half in cold salted water), and then separate it into small heads (if the inflorescences are large, cut them into two or three parts). We also thoroughly rinse the turkey fillet (I used the breast) and dry it with a paper towel. Then cut into small pieces (I do this randomly with kitchen scissors). All that remains is to chop the onion and spinach leaves (I have frozen, no need to defrost), and chop the carrots into thin strips or use a grater.
2. Preparation is complete, turn on the multicooker. First, we need the “Frying” mode (in my model there is a choice of product, I include “vegetables”, since the process occurs more calmly on it, unlike “meat”). So, we poured oil into the bowl and set the mode (I turn it on for 25 minutes), the lid will be open all the time. After a few minutes the oil will warm up. Then lay out the turkey pieces. Fry them for a few minutes and stir constantly (so that they do not stick together).
3. The turkey has changed color and turned white. So it's time to lay out the onions. Stir and continue frying for about six minutes (approximately).
4. Then add the carrots. Stir and fry for about the same time (i.e. about 6 minutes).
5. Add spinach. Mix. We continue to fry for 3 minutes. At this point we no longer need the mode; if the time is not up, we will turn it off ourselves. Next, add salt and pepper to your taste and mix again.
6. Place cauliflower florets on top of the turkey and vegetables. Pour half a glass of hot water or vegetable broth. Close the multicooker with a lid. Now let’s continue cooking in the “Stew” mode, which we turn on for 40 minutes. My MV also has a product selection for this mode. For this dish I put "vegetables".
7. After the signal, open the lid and mix carefully. Leave it on "Warm" if you like. This won’t make things any worse; there’s even a plus – it will stay warm until lunch or dinner.
8. Set the table, place the turkey and cauliflower on plates and... bon appetit!

With mushrooms and vegetables
Cooking turkey fillet this way is especially good in the fall, when you really crave mushrooms and have a rich harvest of vegetables.
Products for cooking:
- turkey fillet (from any part of the carcass) – 500-600 g;
- vegetables (absolutely any, to taste, you can use frozen ones in winter) – 800-850 g;
- mushrooms (honey mushrooms, champignons) – 250-300 g;
- onion – 1 pc.;
- garlic - a couple of cloves (optional);
- Add salt and pepper to taste.
Execution steps:
- Prepare the fillet: wash, discuss, cut, salt.
- Turn on the multicooker, select the “Baking” / “Frying” mode (15 minutes) and, adding oil to the bowl, add the prepared fillet pieces.
- We control the frying process; if you see that the degree of frying is already strong enough for your taste (it is recommended to only slightly brown the meat), then you can add a little water and, closing the lid, wait for the end of the mode.
- In order for the meat to remain more juicy, it is recommended not to lay it out in layers, but to fry it in portions.
- Chop the onion and garlic and add them to the meat at the end of the frying process.
- Grind the mushrooms and vegetables to the desired state (approximately the size of turkey pieces).
- Upon completion of the frying mode, place the vegetables in the bowl with the turkey and, selecting the “Stew” mode (30 minutes), bring the dish to readiness with the lid closed.
Cooking steps
Grease the molds with butter. Place cauliflower in molds, alternating with pieces of boiled turkey. Salt and pepper the dish.
Place tomato slices on top and add a little salt.
Beat eggs with milk (or cream).
Pour the contents of the molds with the resulting milk-egg mixture, sprinkle with grated cheese on top.
Place the turkey and cauliflower casserole in a preheated oven and cook for 25 minutes at 180 degrees. Serve hot immediately to the table. Delicious!

In modern cooking, the number of recipes with the meat of this bird is growing every year and is striking in its originality and simplicity. One of the amazing and satisfying dishes is baked turkey with cauliflower in the oven. The first oven recipe you will read is very unusual. There is not an ounce of flour in the baked goods. Bran, cottage cheese and eggs are put there. It turns out not only low-calorie, but also very tasty, which is very important for people who eat dietary products. It is recommended to use the product prepared according to the following option in the morning or for lunch.
Ingredients:
- eggs – 8 pcs.;
- ground coriander – 1 teaspoon;
- low-fat cottage cheese – 240 g;
- salt – 2 tsp;
- oat bran – 375 g;
- dry yeast – 4 tsp;
- wheat bran – 265 g.
Cooking method:
- Using a meat grinder, mill or other suitable object, grind and mix the two types of bran. Place them in a deep bowl.
- Add yeast, eggs, mix everything thoroughly.
- Add grated cottage cheese. Add coriander and salt. Knead the dough.
- Line one deep silicone mold with parchment. Place the mixture on it, smooth it out and let it sit for about half an hour.
- Preheat the oven to 180 degrees. Place the pan on a baking sheet and cook for an hour.
- Moisten the crust of the finished loaf with warm water. Cover the pan with a towel. It is recommended to cut dietary baked goods after they have cooled completely.
Benefits and harms
Turkey is considered a large poultry. Its meat is very popular in the USA, and it is widely used in dietetics. Poultry is rich in a unique complex of substances vital for the human body: iron, phosphorus, magnesium, calcium, proteins and vitamins B and PP. The product is hypoallergenic and is included in the diet of children from 6-8 months. There are few contraindications for turkey meat, but they do exist - it is not recommended to eat it in large quantities for people suffering from kidney failure and hypertension.
The loin part of the bird is the most healthy and has a light color compared to other parts of the carcass. In most cases, doctors include it in the diet of people suffering from anemia, cardiovascular diseases, or patients after surgery.
How not to make a mistake when choosing meat?
Recipes with lean poultry meat are very varied and easy to prepare. But before you start cooking this or that dish, take the choice of product very seriously:
- the carcass should be well-fed and fleshy, and all its parts should be clean, with no dark spots;
- the meat should be light, the skin should have a yellowish color;
- Water should not ooze from the meat;
- no unpleasant odor;
- The product should be purchased chilled.
With mushrooms and vegetables
Necessary:
- turkey (fillet) – 800 gr.;
- fresh champignons – 500 gr.;
- tomatoes – 2–3 pcs.;
- onion – 1 pc.;
- potatoes – 2–3 pcs.;
- zucchini – half a medium-sized fruit;
- seasoning, salt, pepper - to taste.
- Cut the poultry fillet, potatoes and zucchini into cubes. In this case, the turkey slices should be slightly larger than the vegetable slices.
- Finely chop the onion.
- If the champignons are whole, chop them into medium sizes.
- Turn on the multicooker and select the “Frying” mode. First, fry the meat with mushrooms, then gradually add vegetables in the following order: onions; potato; zucchini
- Add seasoning, salt and pepper.
- Cook the ingredients for 15 minutes, stirring them occasionally.
- Cut the tomatoes into strips and add to the multicooker bowl.
- We leave the tomatoes on the top layer, this is necessary so that their juice can saturate the dish.
- Turn on the “Baking” program for 40 minutes.
- 10 minutes before the end, mix all ingredients.
Now you can enjoy your culinary masterpiece.
Tip: If the champignons are semi-finished, you need to wait until they are completely defrosted, then dry them a little. Excess liquid from mushrooms will spoil the taste and aesthetic properties of the dish.
Recipes with turkey fillet
Turkey fillet baked with cauliflower in the oven. To prepare this dish you will need:
- fillet – 500-600 g;
- green beans and cauliflower (half a fork);
- soy sauce – 3-4 tablespoons;
- green peas and sesame;
- salt, pepper, spices - to taste;
- olive oil.
We wash the meat and cut it into pieces of different lengths. Place in a large bowl and pour over oil and soy sauce. Sprinkle with peas, salt and pepper. Marinate for an hour.
Divide the cabbage into inflorescences and boil in water until half cooked along with the beans (you need to add a little salt). Place meat on a greased baking sheet, cabbage and beans on top. Sprinkle with sesame seeds and put in the oven. Bake for 45-50 minutes.
Serve hot with a side dish (mashed potatoes, rice) or as a separate dish.
Another original dish that is distinguished by its juicy taste and unique aroma is fried turkey meat with broccoli. To prepare this dish you will need the following ingredients:
- fillet – 400-500 g;
- one onion and green peas (you can use frozen);
- olive oil;
- broccoli – 250-300 g;
- cream (10%).
Wash the meat and chop it finely, fry in a frying pan until golden brown. Finely chop the onion and fry it in olive oil in a large cauldron. Add peas and broccoli florets to the onion, then simmer over medium heat for about 15 minutes. Add meat to the vegetable mixture, salt, pepper and pour cream. Mix everything, close the lid and simmer for 20 minutes.
For a large family, an excellent dish would be turkey goulash with sauerkraut. This dish turns out to be very satisfying and healthy. The following ingredients will be required:
- turkey meat;
- potatoes – 5-6 pieces;
- sauerkraut – 500 g;
- onion, carrot;
- tomato paste – 2-3 tablespoons;
- vegetable oil;
- salt, pepper, spices - to taste.
First, prepare all the ingredients. We wash the vegetables under warm water, remove peels and husks, wash the meat in the same way, remove bones and skin (if you are not using fillets).
Cut tomatoes and onions into small cubes, peppers and carrots into thin strips. If you don’t have fresh tomatoes on hand, then using tomatoes in their own juice is a good alternative. Next, we separate the cauliflower into inflorescences. If the family doesn’t like the taste of cabbage, then you can cut it into small pieces, so it will be invisible, and the dish will not lose its benefits. I prefer big pieces.
Dry the meat with paper towels and cut into medium pieces.
Note: All vegetables can be fried in one large frying pan, perhaps it will be even more convenient for you, but I use two medium frying pans. In a frying pan, over low heat, heat 1-2 tablespoons of vegetable oil. Add onions, carrots, and red peppers. Fry the vegetables until the onions are lightly golden and the carrots are barely soft. Fry for about 10-15 minutes.
At this time, in another frying pan, over high heat, heat 1 tbsp. l. oil, add the meat and fry until it turns light, about 5 minutes. This way the turkey will not have time to “release” its juices and will remain very tender and juicy. After the time has passed, add cabbage, salt, and your favorite spices to the meat and stir gently. Simmer everything for about 4 - 5 minutes. If you cook in one frying pan, then the sequence is approximately the same: after 15 minutes of simmering the vegetables, turn up the heat to maximum, add turkey meat (fry for 5 minutes), then plus cabbage, tomatoes and spices.
Cover with a lid if it does not have a plastic handle or tighten the cauldron with foil. If you have oven-safe pots, feel free to use them. But in this case, put them in a not yet preheated oven. Place the dish in the oven for 40 minutes. 180 -190 °C. After the time has passed, remove the lid/remove the foil and leave in the oven for another 10 minutes so that the meat and vegetables brown a little.
Dukan bread recipe in the oven
- Cooking time: 65 min.

- Calorie content of the dish: 1469 kcal.

The recipe for Dukan bread in the oven is easy; it will take a little more than an hour to repeat it. Baked goods prepared in this way can be eaten at all stages of the diet, but during the “Attack” you should not add grains to it. The bread is suitable for making light sandwiches. It is prepared using kefir with the addition of bran, eggs, and seeds. If desired, you can add chopped herbs to the dough.
Ingredients:
- oat bran – 8 tbsp. l.;
- ground pepper - a pinch;
- flax seeds – 1 tsp;
- wheat bran – 4 tbsp. l.;
- soda – 1 tsp;
- eggs – 2 pcs.;
- sesame seeds – 1 tsp;
- salt – 2-3 pinches;
- low-fat kefir – 1.25 cups.
Cooking method:
- Grind the bran. Combine them with eggs, salt and pepper.
- Dissolve soda in kefir to extinguish it. Adding the fermented milk product gradually, knead the dough.
- Immediately place the mixture into the mold and let it sit for a while.
- Preheat the oven to 180 degrees.
- Sprinkle the workpiece with two types of seeds. Place in the oven. Cook for 40 minutes.
