We start by choosing apples. To prevent the jam from being liquid, you need to choose sour apples. Well, for example, “Simirenko”. Wild game or unripe apples will do. Apples contain a substance called pectin, and sour varieties have the most of it. It is pectin that works as a thickener. Moreover, pectin works as a thickener if it is boiled together with sugar and acid. And it is in sour apples that there is more acid.
We chose the apples, wash them and peel them.
Remove seeds and cut into pieces.
Attention! Don't throw away the skins! The skin contains 10 times more pectin than the pulp. We wrap the peelings in gauze and place them on the bottom of the pan, where we will prepare the jam at the first stage
Pour a glass of water into the bottom of the pan. This is necessary so that the apples do not burn. Next, pour in the apples, leaving a “tail” from the bag of skins. We do not add sugar at this stage. Otherwise it will burn. Now we just need to boil the apples.

Pour our future jam onto a baking sheet, put it in the oven and reduce the temperature to 150*C. Preheating is needed so that the jam quickly warms up and then begins to bake.
After an hour, the jam will have reduced by almost half. We check readiness as follows: drop a little jam on a saucer and turn it over. If the jam does not fall from the saucer, it means it’s ready. Otherwise, put it in the oven for another 10 minutes.
Pour into sterilized jars. And one more important point. If we close the jar now, then as it cools, condensation will form on the lid, which will drip onto the jam and mold may form on it. To prevent this from happening, before closing the jars, add sugar to the jam. Then the condensation will drip onto the sugar and simply form a kind of sugar film on the surface.
