  2. For the dough, take 250 g of ground almonds. It can be crushed using a blender.
  3. Add the zest of one orange and 75 g of flour, that's 3 tablespoons.
  4. Mix dry ingredients and add caramel.
  5. It turns out to be such almond-caramel crumbs. Place it in the refrigerator for 2 hours.
  6. Take 3 eggs. Separate the yolks from the whites. We don't need yolks.
  7. Beat the whites into a light foam.
  8. Add 120 g of powdered sugar. We continue to beat.
  9. Add nuts to the whites. Not all at once, but a little at a time, stirring constantly.
  10. When half of the almonds have already combined with the proteins, add 1.5 teaspoons of baking powder for the dough. Add the rest of the nuts and mix. The whole mass turns out to be quite thick.
  11. Pour 100 g of corn flour and 20 g of powdered sugar onto the table. Mix them lightly.
  12. Generously grease the baking sheet with vegetable or butter.
  13. Use a teaspoon to form cookies and roll them in flour and powder.
  14. Place on a baking sheet.
  15. Bake for 30 minutes at 110 degrees. The finished cookies are crispy on the outside and slightly chewy on the inside.

Step-by-step preparation

  3. Add vanilla seeds to the whites.
    One pod is enough, but you can safely replace it with vanilla extract or vanilla sugar.
  4. Beat the whites with a mixer. In the process, add 50 g of sugar.
  5. Continue whisking until you get a very stable white foam.
  6. Combine the whipped whites with the dry ingredients in several additions, stirring gently from top to bottom. The finished dough has a porous texture and slides off the spatula.
  7. Cover the baking sheet with parchment.
  8. Place the cookies at a short distance from each other.
    We try to keep them the same size.
  9. Leave the pan for 15 minutes so that the top of the dough dries out a little.
  10. For the cream, melt 160 g of white chocolate in a water bath.
  11. Pour 100 ml of cream into a small saucepan, add a couple of mint sprigs and a few strips of lemon zest.
    Warm the cream thoroughly so that it absorbs all the flavors.
  12. Combine melted chocolate with cream. The color has changed a little, that's how it should be.
  13. Place the cream in the freezer for a few minutes until it cools well and thickens.
  14. When the top of the dough is slightly dry, place the baking sheet in the oven.
    Bake at 150 degrees for 20-25 minutes.
  15. Carefully remove the finished golden, creamy cookies from the paper.
  16. Take the cream out of the freezer and combine two cookies with it. All is ready.
