Festive salad with raw pumpkin, persimmon and baked beets

Prepare a salad of raw pumpkin with beets; it perfectly cleanses the body of toxins.

  • 150 gr. beets;
  • 150 gr. pumpkins;
  • 1 tablespoon raisins;
  • 2 tablespoons of sour cream.

To make this salad, you need to use sweet butternut squash and bright burgundy beets.

We peel the vegetables and grate them on a coarse grater; it’s even better to use a grater for Korean salads. Pour boiling water over the raisins, let them stand for about 15 minutes. Then drain the water and rinse the berries well. Then place them on paper towels to dry.

Mix pumpkin, beets and raisins, season with sour cream. Instead of sour cream, you can use natural yogurt.

This snack option is sure to please guests who adhere to the principles of healthy eating.

  • 100 gr. raw pumpkin;
  • 2 small beets;
  • 2 tangerines;
  • 1 persimmon;
  • 5-6 walnuts;
  • 100 gr. salad mix;
  • 2-3 sprigs of fresh dill.

Refueling:

  • 2-3 tablespoons of olive oil;
  • 1 tablespoon honey;
  • 1-3 tablespoons of soy sauce;
  • 1 pinch of nutmeg;
  • 1 pinch of ground black pepper;
  • 1 pinch of salt optional.

You need to prepare the beets in advance. Wash the root vegetables, wrap tightly in foil and bake in the oven until cooked. We recommend using baked beets rather than boiled ones, this will significantly improve the taste.

Grate the pumpkin into thin strips using a special shredder. Sprinkle the pumpkin with nutmeg. Cut ripe persimmons into small cubes. Peeled tangerines - in circles.

Peel the cooled baked beets and cut into thin slices. Finely chop the greens. Mix all salad ingredients. We wash the lettuce leaves, dry them, and place them on a plate. Place a heaping of the prepared vegetable mixture on top.
