Properties and calorie content of yeast dough

Yeast dough is prepared using special culinary yeast, which, when interacting with flour and water, is capable of forming abundant bubbles of carbon dioxide. Thanks to this, it turns out tall, fluffy and soft. In addition to the main ingredients, sugar, dried fruits, milk and various fats are also sometimes added to the dough, which increase the calorie content of yeast dough, so you should not abuse such additives.

Yeast dough can be bread and butter, as well as prepared in a sponge or straight way. The last method allows you to spend less time preparing the dough, but it does not always guarantee the expected result. The calorie content of yeast dough always depends on its composition, however, if you do not use additional additives, then on average this figure is about 230 kcal per 100 g. This figure is quite high, but this does not mean that a small amount of dough cannot be used in your diet at all .

Sour cream dough recipe

Thanks to sour cream, the dough will be especially soft and tender. Baked goods made from it will remain fresh longer. The recipe is ideal for cake and soft pie.

Ingredients:

  • flour – 320 g;
  • sea salt – 2 g;
  • spread – 150 g;
  • granulated sugar – 20 g;
  • sour cream – 120 ml;
  • soda – 0.5 tsp;
  • egg – 1 pc.

Cooking method:

  1. Place the chilled spread and sour cream in a blender bowl; when the mixture is whipped, pour in the egg.
  2. Add sugar and salt. Add soda, instead of which you can use the same amount of baking powder. Be sure to extinguish the soda.
  3. Continuing to beat, gradually add flour. Take out the homogeneous dough and wrap it in a bag. Place in the refrigerator for half an hour.

Calorie content of yeast-free dough, its preparation and types

In modern cooking there are more than enough varieties of yeast-free dough. This includes choux pastry, shortbread, biscuit, and even puff pastry. All of them have an airy and porous structure, which is achieved by adding various baking powders and helps it bake well. The calorie content of yeast-free dough does not change.

As mentioned earlier, disintegrants can be chemical or mechanical. The main representative of chemical leavening agents is baking soda. It is capable of releasing carbon dioxide when heated and thereby imparting porosity to the finished dish. The mechanical method of loosening the dough involves beating it or rolling it out.

So, for example, sponge dough is prepared by beating, and puff pastry is obtained by rolling, the calorie content of which is a little high, especially if you add butter to it. Almost all types of yeast-free dough use additional additives: eggs, sugar, milk, dried fruits and various fats. The choux pastry also has a special composition, in which a lot of eggs and butter are usually placed, which are brewed in a special way in boiling water.

The calorie content of yeast-free puff pastry and choux pastry is quite high, so nutritionists do not recommend such products for frequent consumption. On average, the calorie content of yeast-free dough prepared in the simplest way (as for pancakes) is about 180-190 kcal, while the most calorie-rich is shortbread dough, the calorie content of which can reach 400 kcal per 100 g.

Remember, no matter how many calories there are in the dough, it is better to consume it infrequently and in moderation, even if you do not have problems with excess weight. This especially applies to shortbread and puff pastry, the calorie content of which is about 330-340 kcal, and if we consider a finished dish made from it, for example, a cake, then the calorie content of the dough can reach 390-420 kcal.

But what should those who watch their figure and cannot afford to eat such a high-calorie product as dough do? In this case, you can use a diet dough recipe, the calorie content of which is not so high. To prepare it, use water, a small amount of yeast and flour, as well as a pinch of salt and sugar (if it is a sweet dough). How many calories in this type of dough will depend only on the amount of added sugar. The calorie content of the dough itself without added sugar will be low (up to 150 kcal), because the remaining ingredients in its composition are not very high in calories.

When consuming dough and dishes containing it, it is important to remember about a sufficient level of physical activity in order to burn off the extra acquired calories. Therefore, exercise regularly if you want to occasionally treat yourself to something “yummy” and not lose the attractiveness of your shape.

“Flour is bad for your figure!” But are dough products really that bad for maintaining normal weight? Store shelves are overflowing with a variety of cookies and pastries, almost every home has a package of flour, and most housewives know at least a couple of recipes for delicious dough products. It is believed that all this contains a lot of fats and carbohydrates, but is there at least one type of dough that is preferable to choose if you want to lose weight?

Preparing the dough

The ingredients usually include flour, eggs and sugar. Yeast, milk and butter are also present in different variations. Shortbread dough is the most high-calorie dough,

since it contains just more oil than other types. There is no oil in lean dough, which is why there is so little fat, and when using yeast you can also do without it.

The flour should be sifted before preparing the dough.

- this way it will be more fluffy due to the large amount of oxygen. Premium flour contains the most gluten, so it is great for baking pies, cookies and bread.
Sugar helps the yeast work more actively and also holds the flour particles together. It is important to dissolve the sugar properly,
so sometimes it is recommended to even add powdered sugar. It is customary to use milk or fermented milk products as a liquid, less often water. Yeast also works better in a dairy environment.

Butter or sunflower oil and margarine make the dough more tender and give baked goods a pleasant aroma. Egg whites help make the dough looser. The yolks act as a kind of glue and make the dough structure homogeneous. It is dangerous to break eggs directly into the dough; it is better to do it in a mug first so as not to accidentally add a spoiled egg to the mixture. In the lean version, baking powder or soda dissolved in vinegar is added instead.

Calorie content of dough

Like other complex dishes, the energy value of the dough depends on the ingredients that go into it. The lean dough contains no ingredients of animal origin (eggs, milk and butter). Yeast also often does without oil, hence the low calorie content.

Margarine is often included instead of butter in puff pastry. The calorie content of the product then changes. It is used as a basis for obtaining crispy products, so it is important to follow the cooking recipe. There is unleavened puff pastry, the calorie content of which is approximately 225 kcal. Its difference lies in the absence of yeast.

According to the recipe, there are two types of puff pastry. This changes the calorie content slightly. There are classic and simplified options. The first method is used to obtain various products, but it is also more difficult to prepare. In addition to the homemade product, there is also a store-bought one. Its calorie content is indicated on the packaging.

This dough has one advantage. Unlike those prepared with butter or margarine, the preparation with vegetable oil does not need to be placed in the cold first.

Harm

You should not consume such products in large quantities. The calorie content of puff pastry is considered to be the cause of weight gain, which leads to obesity.

The products contain harmful substances, for example, margarine, which negatively affects the condition of the heart, increases “bad” cholesterol, and because of this, blood clots appear in the blood vessels. Therefore, excessive consumption of puff desserts leads to heart attacks and strokes. But with moderate consumption there will be no harm to the body.

Modern housewives use sour yeast dough to bake various pies and kulebyak. Airy, tender dough - it cannot leave anyone indifferent. Of course, the calorie content of yeast dough is quite high. 100 grams contain 274 kcal, so it is especially not recommended to overindulge in such products, as this risks gaining excess weight. But sometimes you definitely need to treat yourself to aromatic pastries!

Flour products contain a lot of carbohydrates and fats, and therefore their calorie content is high, but the calories in this type of dough can be reduced if you add a small amount of fats, or eliminate them altogether. The oils that make up the dough only make the consistency heavier and prevent the dough from breathing and rising.

Yeast dough is the most common option for making dough at home. Butter dough is also considered no less popular. Products made from it are tasty, but also more nutritious! The calorie content of yeast dough is 390 kcal per 100 g.

Of course, the caloric content of yeast dough is very high, but it is still worth eliminating it from your diet forever. Consume everything in moderation, and then your weight will be normal!
