*I buy Black Sea Light syrups. They have a huge assortment, but the calorie content is very low. If you don’t have such a syrup, you can simply add a drop of honey aromatics. As a last resort, you can add honey - a couple of tablespoons. But the calorie content with honey will be slightly higher.

Preparation

  1. We measure flour on scales, bran on scales, add sakhzam and salt.
  2. Fry the milk powder in a dry frying pan until brown. The milk will form clumps - that's okay. After frying, grind them in a blender. You can crush them with a mortar; milk powder is quite fragile and easily turns into powder.

    Bake at 180°C for about 15 minutes. It turned out 3 plump, soft, porous cakes. Let them cool down.
  5. Preparing the cream. I decided to use processed cheese as a pp cream. A detailed recipe for its preparation is here. Mix cottage cheese from the briquette, egg and soda. Beat with a blender and heat on the stove in a non-stick pan until the mixture melts.
  6. Let the cream cool slightly, 5 minutes is enough. During this time, we will prepare another cream - curd. We will use it to cover the top and sides of the cake. Take 2-3 tablespoons of processed cheese, mix with soft cottage cheese and sakhzam, you can add a pinch of vanilla. Whip the curd cream.
  7. Let's prepare the cakes for soaking: pierce them with a fork along the entire perimeter to form holes. The cream will pass through them and soak the crumb of the cake inside.
  8. Now we assemble the cake: coat the cake layers one by one with a good layer of melted cheese and place them on top of each other.
    Place in the refrigerator for 15 minutes so that the top layer of cream sets - after cooling, a thin film will appear on which you can spread another cream.
  9. We finish the decor of the honey cake with curd cream - coat it on top and at the ends.
    It is better to level the surface with a wide knife or a special spatula for cream. In the process, I decided to drop a little chocolate syrup onto the snow-white surface of the cream, so I have a cake on top with brown “smears”.

It is the soufflé and chocolate that carry the calorie content of Bird's milk. This is a very high-calorie cake, its caloric content is higher than that of Napoleon, and forms 350 kcal per 100 g.

Napoleon calories

Layered Napoleon cake, smeared with tender custard, is loved by many people. The calorie content of Napoleon, in contrast to the calorie content of Bird's milk, is only 250 kcal per 100 g. Puff pastry contains very few calories, but the bulk of Napoleon's calorie content comes from the cream.

This cake is very tender and airy, but, unfortunately, those cakes that are sold in stores may not be entirely fresh, and will also differ in recipe and, therefore, calorie content. Napoleon cake, made industrially from not the highest quality and natural products, can contain up to 420 kcal per 100 g.

Calorie content of honey cake

Honey cake is a sweet, tender and, unfortunately, very high-calorie cake. It is made on baked cakes, greased and soaked in tender sour cream with honey and condensed milk.

The calorie content of honey cake can be about 424 kcal per 100 g.

Moreover, this cake does not have such a light structure as, for example, Napoleon - it is very dense, therefore, in addition, a small piece of it will be very high in calories.

Cheesecake calories

Cheesecake is made from a soufflé of cheese, sugar, eggs and cream on a base of crumbled biscuits. This is a very tasty and tender dessert; its calorie content ranges from 255 to 380 kcal per 100 g.

Calorie content of Prague cake

Very tasty, but also very high in calories, Prague cake is made from chocolate sponge cake, which is soaked in cognac, greased with chocolate cream and covered with chocolate glaze. The calorie content of Prague cake can range from 380 to 520 kcal per 100 g.

Calorie content of yogurt cakes

The calorie content of cakes with yogurt cream is really low compared to other cakes - it ranges from 90 to 250 kcal per 100 g, so you can allow yourself such cakes throughout the diet.

Calorie content of Anthill cake and others

Anthill cake is made from cookies soaked in sweet condensed milk cream. The calorie content of the Anthill is high - 451 kcal per 100 g. Another cake beloved by many is also high in calories - the Count's Ruins, which contains nuts, meringue and sweet glaze. But the Creme Brulee cake has less calories, it contains about 350 kcal per 100 g.

How to reduce the calorie content of cakes

When preparing cakes, use less fat and sugar, more natural products. Instead of butter, protein or sour cream, prepare light curd cream.

In addition, in order to reduce the calorie content of cakes, the cakes can be layered and decorated with fresh fruits and berries - they are sweet, juicy and contain few calories.

For example, you can put pieces of bananas, strawberries or kiwi between the cake layers and decorate with cherries. Bake unsweetened cakes, they have fewer calories.

Dough

  1. Whisk 250 g of sugar, 2-3 eggs, 2 tablespoons of runny honey and 50-55 g of butter until smooth.
  2. Now place the pan with the contents on low heat and stir the mixture with a spoon or whisk until the sugar is completely dissolved.
  3. Without turning off the heat, add 2 teaspoons of soda to the already hot mixture so that the dough increases in size.
  4. You need to stir while keeping it on the fire for another 1-5 minutes.
  5. Then remove the dough from the stove and little by little add sifted flour (550 g) to it.
  6. Knead the dough with your hands until it stops sticking.
  7. Then divide the mass into 7-8 parts, cover each piece with film and refrigerate for an hour.

Cream with a delicate texture is prepared separately:

  1. Combine 2 eggs and 1 packet of vanilla sugar, mix. Add 50-55 g of flour and 150-200 g of sugar to the resulting mixture.
  2. Then put on low heat and stir until thickened.
  3. Then remove from the stove and combine the hot mass with butter (100 g).
  4. Cover the cream with cling film or paper and wait 10-20 minutes until it cools slightly.

The calorie content of honey cake with custard is high precisely because of the large amount of sugar in the filling, so if you want to eat a dessert with little energy value, choose the first preparation option.

Honey cake - a classic recipe with a little secret

Everyone knows and loves the tender, tasty and fragrant honey cake, but not everyone knows how to cook it. The store-bought version does not always meet our expectations, this is true, but home-baked goods cannot be compared with anything else. If you have never baked a honey cake, this recipe is just for you. I took a lot of detailed photos on how to make honey cake at home.

This is a classic honey cake recipe with a little twist to my liking. For the cake, I always make two creams - sour cream and condensed milk cream.

Sour cream gives tenderness, and condensed milk cream gives an amazing creamy taste. Moreover, it is the taste, and not the feeling that you are eating a colored piece of butter, which is what roses on store-bought cakes are usually made from.

From my detailed recipe you will learn how to make honey cake with condensed milk.

If you still want a classic honey cake, make a cake with only sour cream.

For honey cakes:

  • Eggs – 3 pcs (100 g)
  • Sugar – 300 g (1 glass + 2 tbsp)
  • Butter – 50 g
  • Flour – 550/600 gr
  • Honey – 150 g (4-5 tbsp)
  • Soda – 1 tsp

For sour cream:

  • Sour cream 20% – 500 gr
  • Sugar – 300 g (1 glass + 2 tbsp)

For condensed milk cream:

  • Condensed milk – 360 g (1 can)
  • Butter – 200 gr

Recipe for honey cake in a water bath. Therefore you will need two pans.

A smaller pan - in it we will prepare the dough, and a larger pan in which we will make a steam bath.

The difference in the diameter of the pans should be such that the pan with the dough rests on the pan with water (does not fall through), and the steam escapes freely. You will see how to make a steam bath in the photo below.

You will also need a pan lid to cut out perfectly even cakes. Glass volume 250 ml.

How to bake a honey cake

Before you start preparing the dough, heat a water bath on the stove.

It is best to boil water in a kettle, and then pour as much water as needed into the pan (more on this below).

We begin preparing the fragrant dough for our honey cake.

Beat the eggs with sugar into a fluffy foam.

The more fluffy you beat, the better. The sugar should completely dissolve.

Add honey, butter and soda to beaten eggs. There is no need to extinguish the soda.

Place the pan with the honey mixture in a water bath.

To do this, pour enough water into the lower pan so that it barely touches the bottom of the upper pan and does not splash out over the edges during boiling.

Don't make the heat too high. The water should boil moderately.

We will prepare the aromatic dough for the honey cake for about 15 minutes. The color will begin to change before your eyes.

Stir the mixture with a spatula. Very quickly it will begin to caramelize slightly.

Zapaaah - song! Such a fragrant honey aroma appears in the kitchen! =)

Beautiful caramel stains appear on the surface of the honey mass.

And gradually the honey mass becomes brighter and more aromatic.

At the same time, the mass increases in volume by about 2 times, becomes fluffy and airy.

When the mass increases in volume (after 10-13 minutes), add 1 cup of flour, mix thoroughly with a spatula so that there are no lumps and brew the dough.

Brew - this means do not remove from the water bath for about 2-3 minutes, constantly stirring with a spatula.

The mass will gurgle slightly and acquire a beautiful shade.

Remove the dough from the heat and begin to gradually add the rest of the flour, stirring the dough with a spatula.

Be careful, it's hot!

When the dough becomes difficult to mix with a spatula, transfer it to the flour on the table and knead.

You should get a soft, pliable, not too tough dough.

Divide the dough into 7-8 equal parts, cover with cling film and place in the refrigerator for 30 minutes to allow the honey cake dough to cool slightly.

Now we bake the cakes for the honey cake.

Roll out the ball slightly larger than the diameter of the lid.

Bake the cakes at a temperature of 170-180 degrees for about 2-3 minutes.

Watch carefully, the cakes bake very quickly.

Cut out the hot cake with the lid directly on the sheet and transfer the cake to a flat surface until it cools completely, break the scraps and put them in a bowl. Swollen bubbles can be carefully cut off with a knife.

Attention

Right out of the oven, the honey cake cakes are soft, and after cooling they harden. This is normal and how it should be. Once the cake is soaked, it will melt in your mouth.

Now let’s prepare two wonderful creams for the honey cake: sour cream and condensed milk cream.

Beat sour cream with sugar, adding sugar 1 teaspoon at a time.

And beat the condensed milk with butter. The butter should be at room temperature, but not too soft.

The cake layers and two creams for the honey cake are ready, all that remains is to assemble the cake.

Advice

It so happens that on the eve of the holiday you have very little time and there is no time to tinker with the cake, but you really want homemade cakes.

I can advise you to bake the cakes in advance (1-2 days in advance), and make the cream the day before the celebration and assemble the cake for soaking.

Pre-prepared cake layers can be stored at room temperature (like regular cookies) with the lid slightly opened to allow air circulation to prevent the cake layers from getting soggy.

Pour any cream onto a dish and place the cake on top - this way the bottom cake will be softer, soaked in cream.

Next, assemble the entire honey cake, alternating two creams. It doesn’t matter in what order you grease the cakes.

Another thing is important: more cream means a tastier and more tender cake =)

Grind the scraps from the cakes into crumbs using a blender or knead with a rolling pin.

Sprinkle crumbs liberally over the top and sides of the cake. Leave the honey cake at room temperature for 1.5-2 hours and put it in the refrigerator for 6 hours, or better yet, overnight.

Honey cake with condensed milk and sour cream is a recipe of my culinary fantasy. In any case, I have never come across this option for preparing honey cake before. But, having prepared a honey cake several years ago according to the classic recipe with the addition of condensed milk cream, this is the only way I now cook.
