It is important that the lid does not allow air and heat to escape, so it should almost completely match the size of the frying pan.
  5. Roast the chicken on the back for 15 minutes. over medium heat, then turn it over on its belly, reinstall the weight and fry for another 20 minutes. After this, turn it over on its back again, remove the load, but leave the lid, and simmer the bird for 15-20 minutes.

You can easily check readiness with a sharp stick, which you need to pierce the chicken at an arbitrary point: light, translucent juice indicates that the pan can be removed from the heat.
