Technological map for preparing the dish “Chicken Tobacco”

Description of the breed

Birds of the Cornish breed are white in color. The feathers fit tightly to the body. The physique is massive: wide back and chest. Muscles are visible on the limbs. Chickens are short. Roosters are taller, their necks are longer, their limbs are strong and widely spaced. The metatarsus are massive, bright yellow. The head is proportional to the body. Roosters have a large leaf-shaped comb with teeth on their heads. Males have well-developed earrings.

  • Males always guard females. Feeding begins only after his family moves away from the feeders. A family is usually formed of 20 females and 1 male. 2 roosters do not get along in the same family. They constantly have fights over chicken.
  • The hens sit well in the nest.
  • You can get 150 eggs from them per year, weighing 62 g.
  • The breed is a late ripening breed. The hen lays her first clutch at 8 months.
  • The young grow quickly. At 2 months, a chicken normally weighs 1.3 kg. Chickens are raised for meat. They are slaughtered at the age of 4-5 months.
  • The weight of an adult rooster is 5 kg, a chicken weighs 4.5 kg.
  • Both cockerels and chickens are used to obtain meat. Some females, which are highly egg-laying, are left to produce offspring.

Chickens differ in color by gender. Hens have dark stripes on their backs. Cockerels have yellow down. At 10 days, individuals can be distinguished by their plumage by examining the feathers on the wings. In chickens they have different lengths. Cockerels have the same feathers.

Experts advise purchasing young animals at the age of 10 days. They are already accustomed to the food and to certain living conditions. The survival rate of Cornish chickens is 98%. The indicator is considered high.

Grilled chicken: tasty and healthy!

If you grill the meat of this bird, this will help preserve its usefulness, as well as reduce the calorie content of the fried product - 100 grams contain 200 kcal.

This is the only way, you don’t need to run to the supermarket for chicken now. This will only make everything worse, since harmful fat often accumulates on the skewer for preparing them, which many of us want to get rid of.

Cooking this dish at home is both cheaper and healthier.

So let's get started. First you need to get rid of the feather covering, and then singe the skin with a candle. If you have a plucked carcass, then you don’t need to do any of this.

When preparing the meat, do not forget to turn on the oven to preheat. Place the chicken carcass on the grill, and place a container under it for oil, into which excess fat will drip during cooking.

To check the meat for doneness, pierce it with a fork. If it is pierced without effort and liquid comes out, then the meat is ready. Bon appetit!

What do you need to remember?

Chicken meat is very healthy for the body, but you just need to cook it correctly. If you like fried foods, then cooking in a frying pan can be replaced with an oven, which will allow you to preserve all the beneficial properties of this product. Do not overuse fried meat, remember that everything has its own measure.

Eat chicken for your health!

Specifics of baking whole gherkins

  1. Since chickens of this breed are small in size and weight, the duration of their baking is most often 30-40 minutes, unlike broilers and domestic chickens, which should be cooked for at least 1-1.5 hours.
  2. Almost all marinades for regular chicken are suitable for pickling gherkins. Recipes for baking mixtures can be found here, for example. The following spices are combined with tender meat: turmeric, rosemary, paprika, pepper, thyme, hops-suneli, utskho-suneli, Provencal herbs, dry adjika, coriander, marjoram, garlic, ginger, etc. Marinades are prepared on the basis of oil, kefir, tomato or simply rub the carcasses with dry seasoning.
  3. To make the gherkins even more juicy and tender, before cooking they are soaked in cold drinking water with the addition of salt and sugar. For 2 liters of liquid take 3.5 tbsp. l. salt and 2.5 tbsp. l. granulated sugar. Soaking duration is 20-30 minutes.
  4. Small gherkins (weighing 350-400 g) can be served in portions.
  5. Small carcasses can be stuffed with rice, buckwheat, dried fruits, potatoes and other fillings.

Georgian chicken tabaka recipe with recommendations from professionals

As previously stated, this dish is cooked in a frying pan, and for a person who has no idea about the subtle differences between national cuisines, the algorithm and final result are absolutely identical to what you get if you simply fry the chicken without a side dish.

However, there are a number of features that make it possible to confidently distinguish between truly similar, but far from identical dishes. And first of all, this applies to the frying pan. It must be stone or cast iron, with thick walls and bottom, and have a diameter of at least 25 cm, otherwise the bird will not lie down correctly. Experts call the optimal figure 35 cm. Today, such dishes can be found even among the offers of domestic manufacturers, the cost varies between 1000-3500 rubles.

Georgian chicken tabaka recipe

Compound:

  • Young chicken carcass - 800 g
  • Ground black pepper - 1 tsp.
  • Coarse salt - 1 tsp.
  • Butter - 30 g
  • Lemon - 1 pc.
  • Garlic cloves - 3 pcs.

Preparation:

  1. Choose a bird that is not too large, based on the size of your frying pan: ideally, no parts should be cut off from the chicken. Wash it, make a central cut along the abdominal cavity, beat it with a wooden hammer from all sides so that the bones begin to break.
  2. Squeeze the lemon juice into a small bowl: professionals advise dividing it lengthwise - surprisingly, much more liquid comes out this way. Throw salt and black pepper into the same bowl, as well as peeled, chopped and pressed garlic.
  3. Rub the outside of the bird with the resulting marinade, leave in the refrigerator for 1.5-2 hours. Ideally, the chicken should be marinated for 10-12 hours, i.e. refrigerate it overnight, first wrapping it in cling film. Such a long process determines the subsequent aroma and tenderness of the meat.
  4. Heat a frying pan, put butter in it, wait until it melts. Then place the bird cut side up in the pan and place the lid on it. If you don’t have a special frying pan, take a lid for it that is smaller (literally 2-3 mm) in diameter, and place a weight on top in the form of a stone or a large container of water. It is important that the lid does not allow air and heat to escape, so it should almost completely match the size of the frying pan.
  5. Roast the chicken on the back for 15 minutes. over medium heat, then turn it over on its belly, reinstall the weight and fry for another 20 minutes. After this, turn it over on its back again, remove the load, but leave the lid, and simmer the bird for 15-20 minutes.

You can easily check readiness with a sharp stick, which you need to pierce the chicken at an arbitrary point: light, translucent juice indicates that the pan can be removed from the heat.

Gherkins (chickens) wrapped in bacon and baked with potatoes

Ingredients for 2-3 servings:

chilled chicken carcass weighing 700-1000 g – 1 pc.raw smoked bacon – 8-10 strips
potatoes – 4-6 tubersgarlic – 4-5 cloves
crushed pepper - a pinchvegetable oil – 1 + 1 tsp.
thyme, rosemary – 2-3 sprigs eachfine salt - a pinch
lemon juice – 1 tsp.

Bacon-wrapped chicken and potatoes recipe:

-1-
Wash the gutted gherkin under the tap. Remove moisture from the surface. Prepare a simple oil-based marinade (1 tsp) by mixing your favorite spices. Two or three types will be enough. I used finely chopped 1 clove of garlic and coarsely ground pepper mixture. Add lemon juice. Add a little salt to the marinade and stir until it dissolves.

Brush the top and inside of the chicken with the marinade. Cover with cling film. Refrigerate for 1-2 hours. You can marinate longer if time permits, but no more than 3 hours. It is also permissible to start baking immediately, without marinating.

-2-

Inside the carcass, place 1 whole garlic clove, a sprig of fresh rosemary (or 0.5 tsp dried), 1-2 stems (a pinch of dried leaves). You can also place half of the lemon, cut together with the peel, from which the juice has been squeezed.

-3-

Secure the skin at the hole with toothpicks or sew it with kitchen thread. Cross your legs and tie them.

-4-

Wrap the smoked bacon strips around the chicken, intertwining them.

-5-

Wash the potatoes. Be sure to clean old tubers with sprouts and spots on the skin. You can leave the young potatoes in their “jacket”. Cut into slices. Mix with salt and dry spices (I only used pepper). Drizzle with a teaspoon of oil. If desired, season with a little thyme and rosemary leaves separated from the branch. Mix with your hands. Place the potatoes in an ovenproof dish. Place chicken on top. Peel the remaining garlic (2-3 cloves) and place it whole around the gherkin chicken.

Place the mold in a heat-resistant bag (sleeve). Place in an oven preheated to 200 degrees. Bake for 20-25 minutes (depending on the weight of the carcass). Then remove the bag. Return the chicken to the oven for 10-15 minutes. The bacon will brown, become crispy, and the potatoes will reach perfect condition.

-6-

The chicken turns out to be tender, juicy, and flavorful. Potatoes are soft on the inside and crispy on the outside. Let the dish rest for 10 minutes to allow the juices to disperse, and serve.

Fried fish - pleasant taste and full of benefits

Another delicious dish is fried fish of various types. Fish products have long become part of the cuisines of all peoples of the world. The calorie content of raw fish, depending on the variety, varies from 80 to 300 Kcal per 100 g. With different processing methods, the energy value of this product will also differ. As for fried fish, the average energy value is 180 Kcal per 100 g. More precise values depend on the type and variety of fish.

Fried pollock, whose calorie content is 108 kcal, is an almost universal fish in cooking, having white meat, one of the lowest calorie content and an affordable price. In its raw form, its caloric “weight” is only 72 Kcal. The rest “come” during the frying process from oil.

Other types of fish are no less tasty and nutritious than pollock. The calorie content of all of them in their raw form is significantly different from that in the fried state.

The benefits of eating fish of any kind cannot be overestimated. It is a source of polyunsaturated fatty acids, protein, vitamins and microelements necessary for the body, the most important of which are calcium, phosphorus, and magnesium. River, sea, and ocean fish contain useful substances that are absolutely necessary for the normal functioning of the nervous, endocrine, immune and other systems of the body. Many lean fish are part of medical and weight management diets.

Fish is good to eat in any form. But everyone chooses their favorite way of preparing it. Those who are watching their figure and counting every calorie should avoid frying fish and prefer stewing and steaming.

Fried eggs - a dish for bachelors

One of the easiest to prepare and most common fried dishes is a fried egg. This dish, called scrambled eggs, can be prepared even by a person far from culinary. But not many bachelors think about how many calories are in a fried egg. For other people monitoring the nutritional value of foods, this information is important.

The energy value of a raw egg is 157 Kcal per 100 g of product. When frying in a frying pan with vegetable oil, its energy intensity increases almost 2.5 times. The calorie content of a fried egg is already 350 Kcal. If you fry a chicken egg in butter or lard, its caloric “weight” will be even higher.

A fried omelette, which is prepared by adding milk to the eggs, “weighs” about 184 Kcal per 100 g. This figure may increase depending on the presence of additional ingredients.

Energy value of products added to omelettes in cuisines of different countries

Scrambled eggs and omelettes contain all the benefits of chicken eggs. They are rich in lecithin, calcium, selenium, iron, lutein, potassium, and vitamins. The beneficial substances in these dishes help the normal functioning of the immune and nervous systems.

How to cook chicken gherkins

Today, gherkins are defined as any small chicken weighing approximately 400 grams. Keep in mind that one of these is only enough for one person. And if you are treating a man with a good appetite, then reserve two carcasses per serving.

Typically, such a bird is marinated or soaked in brine so that the meat is saturated with salt and the aroma of spices. However, you need to keep in mind that this bird is very tender and young, so you should not marinate it for more than an hour.

It also cooks quickly - it only takes 30-40 minutes for the meat to cook in a frying pan, on the grill or in the oven. Also, gherkin chickens have very tender and thin bones, and if you spread the bird out and lightly beat it, much like in the Tobacco Chicken recipe, you will get a crispy chicken that can be eaten without leaving any bones.

Baked potatoes, fresh or stewed vegetables, and rice are suitable as a side dish for this dish.

Chicken gherkins in the oven with rosemary and garlic

This is the simplest and fastest recipe. But, nevertheless, it is very tasty - you will definitely like the combination of juicy tender meat and crispy, aromatic crust. The taste and smell of garlic and rosemary goes well with chicken.

For this dish take:

  • One carcass per serving;
  • 3 cloves of garlic and 3 sprigs of rosemary per 1 bird;
  • 50 grams of butter;
  • Salt, sugar to balance the taste, ground pepper.

First of all, mix the marinade, which will saturate the meat and make it even more tender and juicy. In 1.5 liters of water, dissolve 3 level tablespoons of salt and approximately the same amount or slightly less sugar. Completely immerse the meat in the brine and keep it in it for no more than half an hour, then rinse with clean water and pat dry with a towel.

Rub the marinated carcasses with pepper and a little salt outside and inside. Melt the butter in a frying pan and fry half the garlic and half the rosemary until the butter darkens. Grease the carcasses with oil, and place the remaining garlic and rosemary inside the birds. Place them in a heat-resistant form.

Bake in the oven at 200 degrees for 30 minutes or until the meat runs clear when pierced. While baking, pour the rendered juice over the meat. If you want a crispy crust, place the baking sheet under the grill for 5 minutes, turning on the fan mode.

Serve your gherkins on a bed of vegetable stew or a mix of fresh lettuce leaves.

How to cook chicken gherkins with ginger and soy sauce

A dish with an oriental mood will turn out if you cook it in the oven under the grill with traditional seasonings for this cuisine, for this you will need:

  • Chickens - 3 pieces;
  • Spices - nutmeg and ginger powder, salt and pepper;
  • 50 ml unsalted soy sauce;
  • 50 ml vegetable oil to your taste;
  • 7 cloves of garlic;
  • Half of one lemon.

The meat will absorb the flavors of the spices best if it is lightly pounded. To do this, cut the carcass along the breast and flatten it, lightly pound it with a meat mallet. Next, the bird needs to be marinated. To prepare the marinade for chicken gherkin, mix half a teaspoon each of nutmeg and dried ginger, squeeze in the garlic, squeeze out the juice of the lemon, soy sauce and your choice of vegetable oil, salt and a little pepper. Rub this mixture onto the meat. Marinate it in the refrigerator, covered, for an hour and a half.

Place the carcasses on a baking sheet and place in an oven preheated to 200-220 degrees under the grill. After 20 minutes, turn them over to the other side so that the crispy crust appears there too, and bake for another 20 minutes. Serve with rice and vegetables and a glass of red wine.

Stuffed chicken gherkin in the oven

This dish is ideal for a holiday table - it is both a hot dish and a side dish, and it looks great. You can also serve one bird per serving.

For this you will need:

  • 2 birds;
  • 150 grams of long grain rice;
  • 300 grams of sweet pumpkin or 1 apple;
  • 1 tangerine;
  • 4 tablespoons soy sauce;
  • 2 teaspoons mild mustard with grains;
  • 2 teaspoons of running honey;
  • One tablespoon of good vegetable oil is better than walnut, but olive oil is also fine;
  • 2 tablespoons breadcrumbs;
  • Half a teaspoon of curry powder;
  • A teaspoon of dried paprika;
  • Salt pepper.

First you need to prepare the marinade for this dish. To do this, mix half the soy sauce, mustard, honey, tangerine juice, oil and spices. Coat the meat with this mixture and leave on the table for an hour. At this time, cook the rice until half cooked, season it with soy sauce, mix with diced pumpkin. The marinated chicken is ready to be stuffed with a mixture of rice and pumpkin.

After stuffing, secure the carcasses with toothpicks, sprinkle them with breadcrumbs and place them in a heat-resistant form. Add 1 finger of water to the mold and place it in the oven at 170 degrees for 30 minutes. Periodically pour the liquid from the bottom of the pan over the meat. The finished chickens will be juicy and aromatic, and due to the breading, they will also have a crispy crust.

How to cook chicken gherkin in a frying pan

If you fry a gherkin in a frying pan, it will be crispy and juicy. A grill pan works well for this, but you can also use a regular one.

To do this, take:

  • 1 chicken;
  • Half a teaspoon of paprika;
  • A teaspoon of dried green basil;
  • A teaspoon of finely chopped green onions;
  • 6 tablespoons of white semi-dry wine;
  • Salt;
  • Oil for frying.

First, spread the carcass, as for “tobacco,” and marinate in a mixture of wine and spices. After half an hour, transfer it to a frying pan heated with oil and press down with pressure. This way the meat will cook well and even the bones will become crispy and edible.

After 20 minutes, turn the carcass over to the other side, press down again and fry for another 20 minutes. The meat is ready when clear juice flows out of it. Baked potatoes with yogurt and herb sauce or Greek tzatziki sauce work well for this dish.

The calorie content of the leg is 180 kcal per 100 grams of product

This is a consequence of the uneven distribution of chicken fat in the carcass. It will also be very important to consider how the fried chicken was prepared. Its calorie content also depends on such details as the use of breading, the presence or absence of skin.

Chicken skin contains the largest amount of fat, and, accordingly, it will be more nutritious than other chicken meat. The skin should be removed from the chicken carcass before cooking, and not after - because fat will get into the meat during frying. Breading (flour or breadcrumbs) can “absorb” a huge amount of oil, which significantly increases the calorie content of the dish.

A chicken wing (with skin and breaded) has a nutritional value of 250 kcal, and without it - only 125 kcal

The conclusions suggest themselves.

How to prepare this dish at home? It's quite easy! Here is one of the recipes:

Chicken fried in mayonnaise:

Products:

  • Gutted chicken (1.2-1.5 kg) - 1 piece
  • Mayonnaise - 5-6 tablespoons
  • Garlic - 2 cloves
  • Salt pepper
  • Vegetable oil

The chicken is washed in cold water. Then cut into small pieces. Add salt, pepper and pressed garlic. Then add mayonnaise, mix everything well so that the spices and mayonnaise are distributed evenly among the pieces of meat. The dish is left for 2 hours at room temperature.

Place pieces of chicken on a preheated frying pan, greased with vegetable oil. The meat is fried on both sides over high heat. Then cover the pan with a lid and bring to readiness over low heat (approximately 10 minutes). When the chicken is ready, the juice released when the meat is pierced should be clear. And eat to your health, but the calorie content of fried chicken is not so small.

Mmm... Fried chicken, and with a crispy crust too! And if you pour sauce over it all, you’ll be licking your fingers. Surely, reading this made you salivate, right? Many people, when consuming this product, do not even wonder how many calories are in fried chicken. But this is quite important.

Agree that chicken meat is very often found at all gatherings and feasts. Therefore, you need to understand in what quantity you can consume this product so as not to harm your own body.

Oh yes, despite the diversity of our diet, chicken meat is a very common product on our table. Firstly, it is cheaper than all other types of meat, and secondly, you can come up with a lot of dishes from it, both for every day and for a festive dinner.

The calorie content of fried chicken in general is approximately 240 kcal per 100 grams of product. However, the calorie content in individual “body parts” is different.

As a rule, the lowest calorie part of chicken is the breast, which contains 100 kcal per 100 grams of product.

For clarity, let’s compare it with a chicken drumstick, which contains, neither more nor less, as much as 160 kcal per 100 grams, and the calorie content of the thigh is 119 kcal.

The largest fat content is concentrated in the skin. Therefore, if you do not want to gain a couple of extra pounds, then do not forget to remove the skin from it before cooking.

If we are already talking about calorie content, then we need to note the following fact: the number of calories directly depends on the method of cooking the chicken, but more on that a little later.

Broiler Cornish chicken breed

Origin story.

The historical homeland of chickens is England. At a time when cockfighting was popular among the English nobility, one local scientist began to think about breeding a species that would be invincible. Gilbert began his breeding activities in 1820.

To achieve his goal, he began to crossbreed Malay and English fighters known at that time. Despite the fact that the ancestors were desperate fighters, distinguished by aggression and a cocky character, the offspring turned out to be very calm and peaceful. However, the result did not disappoint the scientist.

Despite the fact that the Cornish breed of chickens did not have the character traits necessary for fighters, they received excellent user characteristics.

Later, other poultry farmers began improving the species, and they managed to achieve genetic stability, as well as improved meat quality and appearance. Thanks to the efforts of Gilbert and other English poultry farmers, in 1895 the Cornish chicken breed was included in the standard.

The chicken received this name for a reason - this is what the indigenous people of Cornwall call it.

External characteristics

The appearance of English chickens is very attractive. You won’t confuse such a laying hen with anyone else. Let's look at the main characteristics of her appearance that are unique to her.

  1. The first thing that catches your eye when looking at this hen is its powerful, voluminous body with a pronounced relief. A voluminous chest, bulging hips and a wide back. The body is heart-shaped, low-slung. The paws are set very widely apart, the legs are strong, well developed and muscular. The color of the paws is yellow, as is the beak.
  2. The head of the chickens is small, but quite wide. The powerful forehead is crowned with a small pod-shaped crest, usually a rich red color. Earrings, ears and facial skin are also the same shade.
  3. The color of the plumage varies. The most common options are black and white. But, there are also fiery red, brown, fawn.
  4. The average weight of roosters is about 4 kg, and hens - 3.5 kg.

Character

Despite the fact that scientists wanted to breed real fighters, they managed to produce a laying hen with a very soft and flexible character. The “ladies” half of the herd has no tendency to squabbles and quarrels. Feathered men are calm and balanced, but in extreme conditions the fighting spirit of their ancestors awakens in them.

The description of the Cornish chicken breed says that the main fighting qualities, such as aggression and pugnacity, were lost during the selection process. Therefore, modern gherkins will not cause difficulties to their owners.

Puberty and egg production

Feathered Englishwomen do not mature very quickly, like most meat breeds. But they are distinguished by an incredible growth rate. The Cornish chicken breed reaches sexual maturity no earlier than six months, and for this reason their breeding is problematic.

In the first year of laying, a laying hen can produce no more than 140 eggs, the average weight of which ranges from 55-60 grams. Eggs can be of different colors - from white to cream.

Hatching instinct

Hens do not have any difficulties with incubating eggs. During the selection process, they did not lose their maternal instinct, and if this issue is approached correctly, hens can breed healthy and strong chickens. But the breeding process itself can be quite complicated.

Due to the fact that the birds are quite large, not all eggs are fertilized and are suitable for incubation. Hens become overly sensitive when it comes time to sit on eggs, and any fright can alarm them. Again, due to its large weight, the black whale can simply crush the eggs placed for incubation.

Chickens

Raising chicks also requires some experience and knowledge. From the first days, babies are sensitive to cold weather, and may even die because of it. The main difference between the cubs of this breed is their extremely rapid growth.

By the age of 1 month they can weigh about 1.7 kg. Maximum weight is reached at 6-7 months, but they are not kept until that age. The fact is that after five months of age, the taste of a meat carcass deteriorates significantly, and that is why young animals are sent for slaughter at the age of 60-80 days.

Feeding and caring for chicks

In general, caring for babies is not difficult, but building a diet requires some knowledge. Let's look at tips for caring for and feeding young animals.

The peculiarity of chickens is that the period of the first molt and the growth of adult feathers is too long. Because of this, they need good heating much longer than others. In addition to hypothermia, there is another danger - large chicks, when hypothermic, huddle together in groups, and often crush those under them with their weight.

Young animals must be fed abundantly with high-calorie and protein foods. Failure to follow feeding rules has a negative impact on weight gain and can also cause developmental defects. To feed small gherkins, combined feeds are used that are intended for broilers.

Rapid growth is observed without hormonal supplements. Some poultry farms practice introducing hormonal supplements into the diet of babies, but in such cases developmental defects and diseases associated with the musculoskeletal system are often observed. This may not affect the quality of the carcass, but such individuals are not allowed for breeding.

It is extremely important to support growing bodies by adding vitamins and minerals to the diet. Chicks partially obtain these substances from food - greens, vegetables. But even a harmonious diet is not able to meet all the needs of rapidly growing organisms. It is necessary to introduce vitamin supplements and complex medications.

Obesity is common in chickens. Therefore, it is necessary to select food especially carefully and monitor the weight of the offspring. Small deviations from the norm tables are not terrible, but this is a reason to adjust the diet. A large amount of protein, as well as fresh greens in the diet, is the best prevention of obesity in young animals.

Chickens need plenty of water. Liquid regulates metabolic processes, and its deficiency causes malaise in chicks, loss of appetite, and deterioration in growth rates.

How many calories are in chicken and chicken by-products of different cooking methods?

Chicken soup, chicken stew, chicken breast on a salad - chicken in almost any form is very healthy.
Chicken is a lean and low-calorie protein food, making it ideal for weight maintenance. Not to mention, this bird is chock full of essential nutrients and vitamins. But how many calories are in chicken? It all depends on:

  • what part of the chicken was cooked;
  • how it is prepared;
  • how she was prepared.

Different parts of chicken have different levels of fat and cholesterol. When counting the calories in a chicken dish, it's important to consider these factors because there will ultimately be a big difference between one chicken leg and one half chicken breast, or between a fried breast and a grilled one.

Chicken can be called a healthy or unhealthy food depending on the method of preparation.

. Probably the most famous way to cook chicken is chicken soup, which is especially useful for colds. Fried chicken is clearly not healthy, but boiled chicken is not only tasty, but also healthy. Additionally, the freshness of the chicken also influences the health benefits. Frozen chicken is not healthy because it contains preservatives. But fresh chicken is packed with healthy proteins.

If you are concerned about the number of calories you consume in chicken dishes, remove the chicken skin

because it contains a lot of fat.

Miniature chickens have the same nutritional properties as regular boiler chicken, but their meat is more tender.

Therefore, the calorie content of gherkin chickens is high - 139.7 kcal (plus or minus 10 kcal). This is due to the peculiarities of keeping and fattening.

Important! Gherkin chicken meat is non-dietary. It is purchased as a delicacy.

Meat contains useful minerals: iron, copper, sulfur, zinc. As well as calcium and magnesium. Chicken meat contains high levels of vitamins B, A, E, C, H and PP.

Dietary properties:

Chicken today is one of the most popular types of meat in our diet. And there are many reasons for this. Chicken meat is healthy, very tasty and cheap. But there is another important feature - chicken is classified as a dietary meat. Many people ask what the calorie content of fried chicken is, what are the benefits of fried chicken and whether it has any dietary properties. And the calorie content of this dish is of concern primarily to those who are accustomed to counting calories in food, monitoring their body weight, as well as those who would like to lose excess weight, but are not able to completely give up their favorite dishes for this purpose.

So:

The most significant beneficial property of chicken meat, according to experts, is that it supplies the human body with the animal protein it requires.

Chicken meat is a rich source of phosphorus. But, in addition to this, chicken also contains many mineral components, chemical elements and vitamins.

The beneficial properties of chicken are also due to the high content of B vitamins, as well as vitamins A and E. Chicken contains protein and iron, and in addition, potassium and magnesium.

Another important property is that chicken does not contain carbohydrates and has a relatively low fat content.

For the normal functioning of the body, a person needs to consume about 90 grams of protein every day (the norm depends on the profession and age). Chicken meat contains enough protein to replenish its reserves in the human body.

Chicken contains vitamins (A, B, C, PP, etc.) and minerals (calcium, iron, sodium, phosphorus, etc.). Each of these beneficial substances has a beneficial effect on the human body.

Vitamin B6 strengthens the cardiovascular system. Glutamine strengthens the nervous system, which means it makes it easier to survive stressful situations. Niacin has a positive effect on the heart, blood vessels and nerve cells. In addition, it regulates cholesterol levels in the blood and is involved in the production of gastric juice.

Recipes

After purchasing several miniature carcasses, you need to think about which chicken recipes are best suited. If you need to quickly prepare something for dinner, then baking gherkin chickens in the oven is suitable.

For taste, it is recommended to add garlic and rosemary. The secret to cooking rosemary chicken properly is making a special sauce. Crushed garlic and rosemary sprigs are added to the melted butter, which is poured over the chicken before going into the oven.

Important! To ensure that the carcass looks perfect when serving, do not forget to tie the chicken's legs before putting it in the oven.

Method 1: If you have some time, coat the chicken in spices or honey. A wonderful flavor combination is honey and black pepper. This mixture provides the carcass with a golden crust, and sweet-spicy notes appear in the taste.

Method 2: While waiting for guests, you can prepare stuffed chicken gherkins. Stuff the carcasses with apples, rice or caramelized vegetables.

  • Butter – 50 g.

Production: hour.

Calorie content: 376 Kcal/100 g.

Let us describe in detail how to prepare chicken tabaka in sour cream sauce in the oven. We take a fresh chilled chicken carcass, tar it, wash it in cold water and put it on a towel to dry.

It is better to take a small bird, so you will be sure that it is young and will be eaten by the family in one sitting. We make a cut in the breastbone, open the chicken and spread it out on a flat, dry surface. Knead well with your hands or a kitchen hammer. Salt generously and rub with Provençal herbs.

Place in a frying pan with melted butter, press down tightly with a bottle of water or other weight. Keep the chicken on the stove for literally ten minutes.

Mix sour cream, garlic squeezed through a press and chopped herbs in a small bowl. Turn on the electric oven at 185 °C.

We transfer the bird to a baking sheet, pour generously prepared sauce on top and bake for thirty-five minutes.
