We will prepare dietary dumplings. If this dish can be called that. The idea is that the filling is chicken breast and pumpkin. What is pumpkin for? For juiciness. For me, pumpkin is a fairly universal filler that gives almost no flavor of its own.

List of ingredients:

  1. Chicken breast 1 kg
  2. Flour 500 g
  3. 1 chicken egg
  4. Pumpkin – 300 g
  5. One onion, 2 large cloves of garlic
  6. Spices: salt, pepper, allspice, white pepper, curry, nutmeg
  7. Chicken bouillon.

The first thing we do is wash the brisket and trim the meat from the bones. We don’t throw away the rest, but put it in a saucepan with carrots, celery and onions, add pepper and bay leaf, and cook the broth.

We cut the brisket and pass it through a meat grinder; personally, I prefer a large mesh.

But those who wish can chop everything manually. After the meat has turned into minced meat, add finely chopped onion and garlic. I usually crush the garlic with the flat side of the knife blade and chop it. Afterwards, we take the pumpkin, peel it and grate it on a coarse grater, I like it that way, but you can put all the ingredients of the filling through a meat grinder and don’t worry about it.

Attention!

Take to taste: pepper, white pepper, allspice, salt, and nutmeg. Crush the peppers in a mortar and add to the minced meat, then the curry and nutmeg. After that, take the cooled broth (1 glass) and add it. Mix everything thoroughly until the moisture is absorbed and the filling becomes uniform and “not wet.”

Set the minced meat aside and let it sit.

The dough is very simple:

Take the flour, sift it, beat in the egg and add about a glass of water with half a tablespoon of salt dissolved in it and begin to knead. The dough should not be too soft, it should be quite tight, do not overdo it with water. Overdone? Add more flour. Knead the dough for at least 10 minutes, it should be homogeneous, after kneading, let it stand for 30 minutes (required).

Then we take such a shaitan machine and start rolling out the dough into strips. I bought the car about 8 years ago for 20 dollars, a great thing! You can't roll out the dough with your hands. The process is greatly simplified.

The rest is standard: circles, filling, modeling. Cooking and eating. Therefore, as dumplings - “dietary”, I used them with soy sauce, and not with sour cream. Have a nice time everyone.

Who shouldn't have dumplings

It is recommended to completely exclude dumplings from the diet for the following indications:

  • gastrointestinal ulcer;

These aromatic chicken dumplings will take their rightful place in the diet of those who love moderately spicy and satisfying dishes. To feed them to your household, you will need:

  • 800 g white flour.
  • 500 ml of settled water.
  • 4 eggs.
  • 1 tbsp. l. vegetable oil.

How can you not love dumplings prepared by the caring hands of the housewife! An amazingly satisfying and healthy dish can be prepared very quickly if, for example, tender and dietary chicken fillet is available. Dumplings with minced chicken, the recipe for which we decided to describe in great detail on our website, will please everyone. The dough for dumplings will be mixed with real dumplings - using water and a chicken egg with flour and salt. Unlike meat dumplings, chicken dumplings fit perfectly into a child’s diet.

Chicken breast, which we will use to prepare minced meat, has an amazing range of benefits, especially protein - so necessary for growth. We have already told you about delicious dumplings in pots with mushrooms. Today we will talk about the dish in its traditional form.

Required:

— chicken breast – 1 pc.; - onions - 2 heads; - salt and pepper to taste; - flour - 2 tbsp. plus for “dust”; - chicken egg - 1 pc.; - water - about 1 tbsp.; - bay leaf - to taste; - greens - for serving.

Preparation

1. So, let's start by kneading the dumpling dough. Its classic composition includes: flour, water, egg and salt.

2. Pour flour into a bowl. If desired, it can be passed through a sieve. Next, the egg is broken and two pinches of salt are added.

3. Gradually begin to introduce water and knead the dough.

4. The dough ball for dumplings with minced chicken should be dense but elastic.

5. To make the dumpling dough pliable to work with. It must be kneaded by hand on the table for at least 10 minutes.

6. Then wrap it in a bag and put it in the refrigerator for at least 30 minutes.

One of the favorite options for girls on a diet is a diet choux pastry recipe. It requires a fairly modest list of ingredients:

  • wheat bran, ground into flour (two tablespoons);
  • skimmed milk powder (three tablespoons);
  • corn starch (one tablespoon);
  • boiling water (eight tablespoons);
  • oat bran flour (two tablespoons);
  • one yolk.
  1. The first four ingredients are brewed to a thick mass; after removing from the heat, the remaining two are added to them.
  2. If the mass is not elastic enough, add some more corn starch to it.
  3. After which, the resulting dough is rolled into a ball, covered with film and left in the refrigerator for thirty to forty minutes.
  4. At first the dough may stick to your hands, but after cooling this effect will pass and the mass will become completely elastic.

The second recipe, suitable for a diet, is a regular dough, the ingredients of which, however, are slightly different. It does not use skimmed milk powder, but uses a whole egg instead of one egg. After which the dough is mixed to a completely elastic mass and rolled out, which is possible even without cooling the dough.

The filling has, of course, more options than the dough recipe. First of all, it concerns meat. It is better to avoid fatty pork during the diet, but young veal, chicken or turkey fillet are ideal. You can even use a mixture of them.

In addition, you can add a large number of your favorite seasonings to the meat, the main thing is that all the spices and herbs are natural and contain a minimum of salt. Herbs can be either fresh or dry.

An obligatory ingredient in minced meat is an onion; it can also be supplemented with garlic minced through a meat grinder. In addition, some craftsmen, during a diet, for nutritional value and for the “strength” of minced meat so that it does not fall apart in their hands, modify the recipe and add to it a small amount of any flour that was used to prepare the dough. This procedure does not affect the taste of future dumplings in any way, but it helps improve some of its general characteristics.

It is quite possible to turn dumpling dough into dumpling dough by replacing the meat filling. Of course, here you should also not forget about the diet, and choose a recipe not with potatoes, but, for example, with low-fat cottage cheese, cabbage or mushrooms. Sweet filling, due to the presence of sugar, also remains prohibited. This option should also turn out very tasty and attractive. Such variety is especially important for those losing weight, whose table is usually not replete with a large number of desirable but forbidden delicacies.

I must admit, this was my first time making chicken dumplings, and they turned out incredibly tender, tasty and juicy, and also beautiful.

I liked the recipe for dumplings with minced chicken so much that it’s simply beyond words. Of course, as with any dumplings, I had to tinker with their sculpting.

But the taste of dumplings with chicken is in no way inferior to classic dumplings, and maybe even superior.

Due to the fact that quite a lot of onion (necessarily very finely chopped) and sour cream are added to the minced chicken, the filling of dumplings with chicken turns out to be very juicy and rich. I prepare the dough for dumplings according to a proven recipe, which I have already described here. It turns out very gentle, not tight, and it is a pleasure to work with it.

You can prepare minced meat for chicken dumplings yourself or use ready-made store-bought ones; the choice here depends only on your preferences.

Dough for dumplings is very easy to prepare and requires a minimum of ingredients. In a bowl, mix 400 g of flour and 250 ml of cold milk. Add a teaspoon of salt, but without a slide. First, using a spoon, and then with your hands, knead a homogeneous dough.

You won't need to add any more flour, except to dust the work surface when rolling out the dough, but that will come later. In order for the dough to acquire a homogeneous structure, it should be vigorously kneaded and rolled on the table for at least 3-4 minutes.

And in the end you will get a beautiful smooth ball.

But the dough is not yet ready for modeling. It needs a little time to acquire greater plasticity. Place the ball of dough in the bag, close tightly and leave at room temperature for 15 minutes.

Meanwhile, prepare the minced chicken for the dumplings. Peel the onion and chop finely. For convenience, you can use a blender. My blender did a great job and chopped the onion into small pieces in 30 seconds.

Add onion, 5 tablespoons of sour cream, half a tablespoon of salt and a third of a teaspoon of ground pepper to the minced chicken.

Mix the minced meat with your hands. Knead the minced chicken for 2-3 minutes, after which it becomes homogeneous and holds its shape perfectly.

Let's return to the dough for future chicken dumplings. Take it out of the bag and cut it into 4 parts. Let's deal with the first part for now, and return the rest to the package.

Roll out the dough on a lightly floured work surface. Dough thickness 2 mm. Using a glass, cut out circles. We collect the dough remaining after cutting out the circles into a pile and put it in a bag with the rest of the dough.

Place about a teaspoon of minced chicken in the center of each circle. We make dumplings and place them on a board dusted with flour.

After the board is full of dumplings, I send it to the freezer, where the chicken dumplings freeze safely. And for a new batch I find another board or dish, and so on in a circle.

As a result, an impressive size bag with homemade dumplings is formed in the freezer.

Well, how can you not try freshly made dumplings with minced chicken? Bring the water to a boil, adding 0.5 teaspoon of salt to it, and place the dumplings in boiling water (you should stir them immediately with a spoon, otherwise they will stick to the pan). We wait for the water to boil again and count down 7 minutes. All! Chicken dumplings are ready!

Serve the dumplings with minced chicken immediately, seasoning them with a piece of butter and ground pepper.

Who shouldn't have dumplings

It is recommended to completely exclude dumplings from the diet for the following indications:

  • gastrointestinal ulcer,
  • diabetes mellitus (protein dumplings are allowed),
  • acute and chronic pancreatitis, dysfunction of the gallbladder and biliary tract,
  • chronic renal failure.
