But I found an interesting recipe online for homemade marshmallows made from kefir with the addition of gelatin. I modified it a little and prepared a treat for myself, and slightly diversified the desserts for my family.

Of the products we will need:

  • kefir (I had 1%) – 700 ml.,

  • strawberries (I used frozen) 200 g.
  • gelatin 2 tablespoons,

Cooking method:

  1. Initially, I defrosted the strawberries and completely drained the excess liquid. Then I soaked the gelatin in warm water for 20-30 minutes and left until it swells.
  2. Start whisking kefir and sugar with a whisk (or mixer). After 4 minutes, add one spoonful of yogurt (or sour cream) and beat the mixture for 7-8 minutes. Then I added strawberries to the mixture. You can grind it in advance or continue to beat the mixture with a blender.
  3. When the gelatin increased in size, I placed it in a water bath and brought it to complete dissolution. It should come out liquid.
  4. After cooling it a little, literally for a minute, I slowly poured it into the kefir-strawberry mixture and stirred.
  5. When the marshmallows froze, I cut them into squares and gently took the dessert out of the silicone molds. Served with berries and fruits.
