    In a bowl in the microwave, heat the water to 38°C. (It should be warm, not too hot.) Add yeast and 1/4 teaspoon granulated sugar and stir until completely dissolved. Let stand until foamy, about 5 minutes.

Brush the clean edge of the dough with water, then roll the dough tightly into a log, starting at the long side and working toward the clean edge; press to seal.

  5. Grease a 22x32cm baking dish with butter and lightly sprinkle with sugar. Cut the dough into 12 pieces and place them in the pan, cut sides up. Cover with plastic wrap and let sit at room temperature until the rolls have doubled in size, about 1 hour, or you can refrigerate overnight and let sit at room temperature for 2 hours in the morning before baking.
  6. Preheat the oven to 175°C. Uncover the buns and bake until golden brown, 25 to 30 minutes. Let cool in pan for at least 15 minutes.
  7. Meanwhile, prepare the glaze:

    Using a mixer on medium speed, beat the cream cheese and butter until smooth. Add sugar and vanilla extract and beat again. Pour a thin layer over warm cinnamon rolls. Serve the buns with the remaining frosting.

These homemade buns will please those who support healthy eating. They are prepared with kefir and oatmeal.

  • 0.5 tbsp. kefir;
  • two eggs;
  • 3 tbsp. Sahara;

  1. Combine melted butter with yeast, sugar, milk, kefir and eggs.
  2. Add flour and prepare the dough. Leave it for half an hour under a towel.
  3. Make a layer of dough 1-1.5 cm thick, sprinkle with cinnamon and sugar, assemble into a roll and cut into portions. Coat with yolk and bake at 180°C for about half an hour.

You can bake cinnamon nut buns in the same way. To do this, you need to add any ground nuts to the filling. They can also be served with cream made from cream cheese and powdered sugar - this will only make the cinnamon rolls tastier.

Step by step recipe

Layered cinnamon rolls can be baked for tea in just 15 minutes.

  • 0.5 kg puff pastry;
  • 60 g plums. oils;
  • 3-4 tsp. ground cinnamon;
  • 2 tbsp each brown and white sugar.
  1. Roll out the defrosted dough a little and cut out four circles, 20 cm in diameter and 5 cm thick.
  2. Mix cinnamon with sugar and melted butter.
  3. Spread filling on each circle and roll into rolls. Press down each roll a little on top and use a sharp knife to cut them lengthwise into two halves, not reaching the end by about 2 centimeters. Twist each half of the bun in different directions and connect the ends, closing them in a circle.
  4. Brush each one with cinnamon and sugar.
  5. Place them on a baking sheet and bake for about half an hour at 180°C.

Quick puff pastry buns

I really love puff pastry. I use it to make not only buns, but also pies with cabbage. Most often, for sweet baked goods I use yeast, but for cottage cheese baked goods, yeast-free is better.

If you are making envelopes, then you can brush the edges with egg yolk before pinching them. And only then connect them, then during baking the egg will not allow them to separate.

About two hours before, take the dough out of the freezer, remove the packaging and leave to defrost until soft.

Ingredients:

  • Puff pastry without yeast – 400 g
  • Cottage cheese – 400 g
  • 2 eggs
  • 2 tbsp. sour cream
  • 3 tbsp. granulated sugar
  • 1 tsp vanilla
  • Powdered sugar

This recipe is very quick to prepare, so let's start preparing the filling right away. Grind the cottage cheese through a sieve to remove any grainy lumps. Mix it with egg, vanilla, sugar and sour cream. You can mix it with a blender until the mixture becomes paste-like.

Once the dough has thawed and becomes pliable, it can be rolled out into a rectangular layer. Apply the filling to it, to seal the edges well, you need to step back 1 centimeter from the edges and then roll it up.

Which we cut into pieces 3 or 4 centimeters wide.

Grease the mold or sheet well or line it with a greased sheet of parchment paper.

Lay out the snails and brush each one with an egg.

Set to bake at 200 degrees until golden brown.

Estonian cinnamon rolls

Estonian cinnamon pastries are similar to classic versions of cinnamon buns.

for test:

  • 300 g flour;
  • 120 ml milk;
  • a glass of sugar;
  • egg yolk;
  • 30 g drain oil;
  • 15 g yeast;
  • salt;

  1. Stir sugar and yeast into heated milk. Leave until foam appears.

  4. Roll out a circle 1 cm thick, sprinkle with filling and roll up the roll. Cut it in half, not cutting 2 cm to the end. Twist both parts and close the circle.
  5. Bake the bun for half an hour at 180°C.

Finnish cinnamon rolls are baked using a similar principle, only in their recipe an additional 2 tsp is added to the dough. ground cardamom.

French cinnamon rolls

for test:

  • 0.5 l of baked milk;
  • 190 g plums. oils;
  • 50 g pressed yeast;
  • ½ cup sugar;
  • 0.9 kg flour;
  • 0.5 tsp salt;

For filling:

  • 150 g butter;
  • 200 g powdered sugar;
  • 2 tbsp. ground cinnamon.
  1. Combine flour with salt and sugar.
  2. Separately combine yeast and heated milk. Add flour and rast. oil. Leave the resulting dough for an hour and a half.
  3. Divide the risen dough into two equal parts, roll out into layers one and a half centimeters thick.
  4. Grease the layers with filling.
  5. Roll into rolls and cut into buns, 2 cm high.
  6. Place them on a baking sheet, at a distance of at least 1.5 cm from each other. Leave for half an hour and then bake for twenty minutes at 200°C.

Buns with cottage cheese and raisins in the oven from yeast dough

The filling can be classic cottage cheese, or it can be seasoned with cinnamon, vanilla and mixed with raisins. Do you remember how in kindergarten they gave juices with such filling as a child? This was my favorite treat.

So, I offer you a recipe for butter dough made with milk. Use any yeast, but most often dry yeast is used, so I use it in the recipe.

Ingredients:

  • 350 g flour
  • 3 g dry yeast
  • 100 g milk
  • 50 g granulated sugar
  • 50 g butter
  • 70 g sour cream
  • 1 tsp salt

For filling:

  • 400-500 g cottage cheese
  • 1 egg
  • 100 g granulated sugar
  • 70 g raisins

Let's make a dough. To do this, pour the heated milk into a separate bowl, pour into it the required amount of yeast, a spoonful of granulated sugar and two heaped tablespoons of flour. Stir and wait for the yeast to start working. Look, you may still have lumps, it’s not scary, they will disperse later.

Look how the yeast bubbles. Add sugar and salt to them.

Melt the butter in advance and mix it with sour cream. Add this mixture to the dough.

You need to add sifted flour in parts. It is better to knead first with a spoon, and then, when the mass becomes stiff, by hand.

It’s enough to add flour when the mass turns out soft and a little sticky to your hands. Cover the bowl with a lid and let rise. Some people put the bowl in a bowl of water for this purpose, while others place it closer to the radiator; I don’t see much of a difference.

Now let's get to the filling.

The cottage cheese should be dry and not very greasy. If you have homemade one, then put it in cheesecloth and in a sieve to drain excess whey. We don't need it in buns because it can escape during the baking process.

Pour boiling water over the raisins, and then rinse well under cold running water to remove all unnecessary impurities in the form of sticks and debris. Then place the berries on a towel and dry well. We don't need the extra moisture from the raisins either.

Add sugar and vanillin to the cottage cheese, beat in the egg and add the raisins. And mash well with a fork.

The dough has risen, start kneading it a little by adding flour.

Divide the dough into two parts. We roll each of them into a long sausage. And now we are trying to cut identical pieces from which we will form donuts.

Take a piece, roll it out into a layer and make two cuts along the edges.

Place the filling in the center.

And now we wrap one end first, then the other.

This is what happens.

Let the donuts rest for 10 minutes. They will rise and cook well. To give them a beautiful color, mix 3 tsp. milk and egg, and cover the buns with this mixture.

You need to bake in a preheated oven at 180 degrees for about 30 minutes.

Cinnamon buns

  • 0.4 kg cottage cheese;
  • 100 g each of wheat and corn flour;
  • egg;
  • 30 g vanilla. Sahara;
  • tbsp corn starch;
  • 2 tbsp. brown sugar;
  • tsp cinnamon;
  • 2 tbsp. milk;
  • tbsp dark chocolate;
  • any nuts to taste;
  • 0.5 tsp soda
  1. Dough. Mix 200 g of cottage cheese with egg, vanilla sugar and soda. Add flour, controlling the thickness of the dough, which should be soft so that it can be rolled out. Refrigerate for half an hour.
  2. Filling. Mix 200 g of cottage cheese with 2 tbsp. milk, a spoonful of starch. In a separate bowl, mix sugar, grated chocolate, cinnamon and ground nuts.
  3. Flour the table, make a layer of dough 0.5 cm thick, grease it, sprinkle with nuts and cinnamon. Roll into a roll and cut into 1.5 cm segments.
  4. Bake the buns for half an hour at 180°C.

You can prepare cinnamon rolls not only according to any recipe, but you can also invent them yourself - the matter is limited only by your imagination. You can use a variety of products for the filling, such as raisins, coconut, berries and dried fruits - the main thing is that you like this combination.
