  3. Mix all filling ingredients except protein. Beat the white separately into a fluffy, stable foam, which is added to the minced meat last. If the cottage cheese is dry and the filling turns out crumbly, you can pour a few tablespoons of milk into it. And minced meat that is too rare will easily thicken after adding a little more flour.
  4. From a layer of dough 5–8 mm thick, cut out circles with a diameter of 9–10 cm. Place a teaspoon of filling on half of each circle, fold the dough piece in half and press slightly on top.

Preparation:

Sochni from shortcrust pastry

For several decades, disputes have not subsided regarding what the dough for juicers should be. Many people like a more airy and moist base, so they use only sand for juicers.

Ingredients:

  • chicken egg – 4 pcs.;
  • sour cream – 200 ml;
  • butter – 300 g;
  • granulated sugar – 2 cups;
  • baking powder - 2 packs;
  • vanillin - 2 packs;
  • flour - 6 cups.

For filling:

  • cottage cheese – 800 g;
  • sour cream – 6 tbsp;
  • sugar – 1 glass;
  • vanillin – 1 tsp;
  • egg – 1 pc. (for lubrication).

Preparation:

First, make a sand base. Pour sugar into a convenient container, add diced butter, beat in chicken eggs, add sour cream. If you remove the last component, then the juicers will not have the usual creamy-curd taste. Sour cream is taken with a high percentage of fat content. At the end, add a packet of vanillin and baking powder and mix thoroughly with a whisk or fork.

If you use margarine instead of butter, then take twice as much.

Gradually add flour, in portions, so that lumps do not form. When the dough becomes dense, knead it with your hands, achieving a uniform consistency, but do not fill it with flour so as not to lose airiness and moisture. When the base is ready, it is rolled into a ball and placed to “rest” under a towel or film.

At the next stage, prepare the filling. The cottage cheese is placed in a container, sour cream and sugar are added to it, as well as vanillin if desired. All components are thoroughly mixed. Dust the table with flour and roll out the dough to a thickness of 2-3 mm. Then cut out circles with a glass, lay out the filling and fold in half. Line the baking sheet with paper, grease it with oil, put the juices in, and put an egg on top. Bake the dessert for 20-25 minutes at 180-185 degrees.

How to cook sochniki in the oven

Transfer the dough ball to a floured table. Roll out into a layer approximately 1-1.5 cm thick, no more.

Using any device, cut into circles - blanks for juicier. Determine the size yourself.

Place the filling on half the circle (don’t be sorry, put a lot, not like in a pie).

Cover the filling, but do not close the edges, the juiciest ones have the filling visible, this is its peculiarity.

Brush the semi-finished products with the remaining egg yolk from the filling. Grease the dough and the filling itself.

Preheat the oven to 190 o C. Place the baking sheet with the preparations on the middle level. Baking time 20-25 minutes. Judge the readiness for juiciness by appearance. As soon as the pies are browned, take them out and run to put on some tea. Bon appetit!

Personally, I turn a blind eye to the calorie content of juices, because I can’t refuse, and I don’t want to spoil the pleasure. I inform those who are curious: for 100 gr. joy accounts for 274 kcal, which is neither more nor less. Although it’s better to limit yourself to one juice.

Sochni with butter dough

Each housewife has her own variation of cooking juicier. Many of them make dessert using butter dough. As a result, it turns out fluffy, and the taste is not much different from those that we tried in childhood.

Ingredients:

  • flour – 320 g;
  • granulated sugar – 125 g;
  • egg – 1 pc.;
  • sour cream – 150 g;
  • butter – 50 g;
  • salt - a pinch;
  • soda – 05 tsp.

For filling:

  • cottage cheese – 200 g;
  • egg white – 1 pc.;
  • sour cream – 35 g;
  • granulated sugar – 40 g;
  • flour – 1 tbsp;
  • vanillin;
  • yolk for greasing.

Preparation:

Using a mixer at low speed, beat the egg until light white foam is obtained. Then butter is added to it (warm, not from the refrigerator). Combine the components into a homogeneous mass, add fatty sour cream, then mix well again. Separately sift the flour, enriching it with oxygen, along with baking powder. Next, start kneading the dough. Do this gradually so that lumps do not form. Leave it to rest in a bowl under a towel to prevent the top from drying out for 20 minutes.

In a bowl combine cottage cheese, flour, granulated sugar, a little vanillin and sour cream, pre-beaten egg white. Mix thoroughly; if the mass is liquid, add flour, and if it is dense, add milk. The dough is rolled out to a thickness of 8 mm, circles are cut out, the filling is placed on one part, and the other is covered. Brush the top with egg white and bake at 180 degrees for half an hour.

Sweet sochni with curd filling

If you use rich yeast dough for juicier, the baked goods will turn out very fluffy and unusually soft thanks to the results of the vital activity of yeast fungi.

This juicier base will include:

  • 200 ml warm milk;
  • 60 g pressed yeast;
  • 90 g granulated sugar;
  • 3.5 g salt;
  • 200 g butter (or vegetable-butter mixture);
  • 520 g flour.

List of products for filling:

  • 400 g cottage cheese;
  • 100 – 150 g sugar;
  • 2 eggs.

Baking progress:

  1. For this test you do not need to prepare the dough or wait for it to rise. The kneading process is extremely simple: dissolve yeast and sugar in milk, pour in melted butter. Then stir in the flour in several additions. You should get a thick elastic mass.
  2. Beat the cottage cheese with a blender along with sugar and eggs into a homogeneous minced meat.
  3. Dividing the dough into balls or cutting out circles from the rolled out mass (whichever is more convenient), form juices and place them on the prepared baking sheet.

  • 60 – 80 g sugar;
  • 10 g vanilla sugar;
  • 20 g butter;
  • 1 egg.

How to make socni from choux pastry:

  1. Pour water and oil into a saucepan. Boil this mixture and immediately place it in a bowl with sifted flour. Mix the dough well: first with a spoon and then with your hands. Afterwards, leave it until it cools completely.
  2. Grind the cottage cheese with both types of sugar, egg and soft or melted butter.
  3. Form small juices from the cooled dough and curd filling using one of the methods described above. Brush them with egg or milk on top. The temperature and baking duration will be 200°C and 25 – 30 minutes, respectively.

How to bake socni with cottage cheese “from childhood”

Delicious sochniki stuffed with homemade cottage cheese and raisins, prepared by the hands of a loving grandmother in the village - what could be better?

To refresh pleasant childhood memories and please your family with delicious baked goods, for the dough you will need:

  • 650 g flour;
  • 180 g sugar;
  • 160 ml sour cream;
  • 100 g butter;
  • 2 eggs;
  • 4 g soda;
  • 3.5 g vanilla sugar;
  • 2.5 g salt.

To make the filling for the amount of dough from the specified amount of ingredients, you need to take:

  • 500 g cottage cheese 9% fat;
  • 100 – 125 g sugar;
  • 90 g sour cream;
  • 50 g raisins;
  • 40 g semolina;
  • 1 yolk to cover the juices before placing in the oven.

We bake juice “from childhood” as follows:

  1. Beat butter at room temperature with a mixer together with sugar until the latter is completely dissolved. Then stir in the eggs, sour cream and remaining dry ingredients.
