For preparation you will need:
- 1 kg flour;
- 500 ml plain water;
- about 1.5 kg of cottage cheese;
- 150 g cheese;
- 2 eggs;
- a tablespoon of sugar;
- a tablespoon of dry yeast;
- 100 g vegetable oil;
- 50 g margarine;
- salt to taste.

- First of all, you should prepare the dough. You need to take water and dissolve the yeast with sugar. When the process is completely completed, salt is added.
- In a separate container, melt the margarine over low heat, add just a little butter. Cool the mixture and combine with yeast and water. Mix everything thoroughly and slowly start adding flour. Leave for half an hour.

- The last 100 g of flour is added slowly, monitoring the consistency of the dough. It should form into a tight ball, but be a little sticky. Cover the workpiece with a towel and place in the refrigerator for 30 minutes.
- For the filling, grate the cheese and cheese on a coarse grater.
- Combine cheese with grated cottage cheese, egg, herbs and chopped garlic. The most suitable greens are dill, cilantro and parsley.
- The dough is rolled into a sausage and divided into 8 parts.
- Mash each piece into a flat cake, add the filling and wrap. Flatten the cake and roll it into a circle with a diameter of 15 cm and a thickness of 7 mm.
- Bake at 200 - 250 degrees until blush appears.

- Add one egg, salt and soda to a deep bowl. The resulting mixture must be thoroughly beaten until smooth.
- Then you can gradually add flour and stir the whole thing.
- When it becomes difficult to stir with a fork or whisk, grease the table with flour and transfer our dough there. Now you need to knead the dough.
- Once you have kneaded the dough, place it in a container and cover with cling film. Place our dough in the refrigerator to let it harden.
- It's time for the filling for khachapuri with cottage cheese and cottage cheese. We take a grater in our hands. We pass the cheese through its large blade, and two cloves of garlic through the smaller one. We place all this in a bowl specially designated for this matter. To all this we need to add our cottage cheese and herbs.

Preparation:
- Dilute the yeast with warm water, add sugar and part of the flour to make a dough with the consistency of liquid sour cream.
- The dough should rise for 40 - 50 minutes in a warm place.
- Knead the dough by adding sunflower oil, half the cottage cheese, the remaining water and salt.
- Let the dough rest for half an hour in the refrigerator.
- Make the filling from cheese, dill and the remaining grated cottage cheese, add salt.
- Divide the dough into small pieces, and also divide the filling according to the number of dough pieces.
- Roll out each part to a thickness of 1 cm, place the filling in the center of the circle and pinch the edges to form a knot.
- Turn the knot over with the tuck side down, roll it out, and poke a few holes with a fork to prevent bubbles from forming.
- Brush the top of the khachapuri with raw egg.
- Bake at 190 degrees in the oven for half an hour until golden brown.

Quick recipe in a frying pan
To cook lazy khachapuri with cottage cheese in a frying pan, you will need:
- 200 g flour;
- 200 g matsoni;
- 1 egg;
- 2 large spoons of sunflower oil;
- a teaspoon of baking soda;
- salt to taste;
- 70 g butter.
For the filling you need:
- 300 g cottage cheese;
- 120 g hard cheese;
- greenery;
- salt.
Cooking process:
- To make the dough tasty, you should remove the food from the refrigerator in advance to reach room temperature.
- Sift the flour.
- In a deep container, combine matsoni, which can be replaced with yogurt or kefir, with sunflower oil, soda, salt, and egg. Everything mixes well.
- Add most of the flour, stirring constantly. When the dough reaches the desired consistency, knead with your hands. The amount of flour depends on its quality and the size of the eggs.
- The mass should be soft and not stick to your hands. It is wrapped in cling film and left for 25 minutes in the refrigerator.
- Chop the greens along with the garlic, grate the cheese.
- Mash the cottage cheese with a fork and a masher, add the remaining ingredients and mix.
- Sprinkle the table with flour and divide the dough into 4 parts. Also divide the filling. Form khachapuri.
- Turn the cake over and roll it out lightly along with the cottage cheese. The dough should not break through.
