How to cook sochniki with cottage cheese. Mix margarine (you can replace it with butter), eggs and sugar. Then add sour cream, salt and stir again. Add flour and baking powder to the resulting mass (it can be replaced with soda quenched with vinegar). Knead the dough. As a result, we get a bun.

We set it aside for a while and at this time we will start filling. The filling is done simply. All components are simply mixed together. The filling is dense and should not spread. Flour is needed if the filling is runny.

Next, roll out the dough on a table sprinkled with flour. Not thin, about half a centimeter. And we cut out circles from it using improvised materials (for me it’s a cup). We take the filling and place it on the edge of our circle. And cover the filling with the remaining half. We pinch the sides with our fingers and leave the middle open. Place the juices on a baking tray greased with vegetable oil. Brush the top with egg.

And put the baked goods in the oven, preheated to 180 degrees, for about 25 minutes.

Secrets and subtleties of making sochniki from the chef

If you make sochniki at home, use butter rather than margarine, although opinions vary about the temperature and consistency of the butter. Some housewives believe that the butter should be soft, while others prefer to chop cold butter into cubes. There are so many recipes and so many opinions! Do not skip the sour cream, as it makes the dough loose, porous and wet. The sour cream should be rich - such juices turn out tastier! If you don’t have baking powder, add baking soda slaked with vinegar to the dough for fluffiness and ease of baking. However, if you took baking powder and dry vanillin, first mix them with flour and only then knead the dough. Do not add too much flour or knead the dough for too long as it should not be very stiff. The best dough is soft and slightly sticky. Also make sure that the filling does not turn out liquid, otherwise the dough will get wet during baking and the products will turn out too wet. Let the juicers stand for a couple of hours after the oven - during this time the filling releases juice and mixes with the dough, which gives the pies a special softness and crumbliness.

Curd juices

The taste of childhood for any Soviet child is Sochniki with cottage cheese. This delicacy was sold in any bakery and was a frequent treat in Soviet families. Unfortunately, today juicer is rarely found on the shelves of confectionery shops, and what is found does not at all resemble that magical taste. But there is a way out: you can prepare curd juices yourself; the recipe with photos describes the preparation process step by step in detail, and you can easily please your loved ones with delicious pastries.

Ingredients:

for test:

  • wheat flour - 320 gr.;
  • butter - 100 gr.;
  • sour cream 20% fat - 100 gr.;
  • chicken egg - 1 pc;
  • sugar - 80 gr.;
  • baking powder - 0.5 tsp;
  • a pinch of salt.

For filling:

  • cottage cheese - 200 gr.;
  • egg - 1 pc.;
  • sour cream - 25 gr.;
  • sugar - 40 gr.;
  • flour - 15 gr.

Step-by-step preparation:

Step 1: Remove the butter from the refrigerator until it is soft. Mix flour and baking powder and sift.

Step 2. Beat the egg with sugar, you can add a teaspoon of vanilla sugar. Add sour cream, butter, a pinch of salt to the resulting egg mixture and mix. On the Internet you can find recipes for dough without sour cream, but do not exclude this ingredient, thanks to it the dough becomes soft and crumbly.

Step 3. Mix dry and liquid ingredients, knead the dough. Add flour and baking powder gradually and do not knead the dough for too long, it may turn out too steep and the finished cookies will turn out hard. It's okay if the dough is a little sticky. Roll it into a ball, wrap it in cling film and put it in the refrigerator to “rest” for 20 minutes.

Step 4. For the filling, mix all the necessary ingredients except flour and yolk. Add flour if the filling is too runny and the yolk is needed for greasing before baking. If you buy country cottage cheese, remember that it contains a lot of whey and should be squeezed out before cooking.

Step 5. Roll out the dough to a thickness of 5-7 mm, and cut out round pieces with a diameter of 10-15 cm. Place the filling on one half of the circle and cover with the other half of the circle.

Step 6. Preheat the oven to 180 degrees, cover the baking sheet with parchment and grease with butter. We lay out the juices and grease them with yolk. Bake for about 20 minutes, be sure to let it cool before using.

Tender and ruddy juices are delicious to eat with tea or milk; they store well for 4-5 days in a closed box or bag. But most often they are eaten on the first day. You can also experiment and add raisins, berries or nuts to the filling.

Classic recipe for curd juices according to GOST

Sochniki with cottage cheese (recipes for cooking with different fillings are described later in the article) in Soviet times were prepared exclusively with margarine. To get the original taste, you need to use it, and not butter.

What ingredients will you need?

The list of ingredients for making classic juicers is quite simple:

  • Wheat flour, premium - 400-600 g (you need to be guided by the consistency of the dough) and 90 g for the filling.
  • Sugar – 100 g for dough and 80 g for filling.
  • Egg C1 – 3 pcs.
  • Margarine – 200 g.
  • Baking powder – 1⁄2 tsp.
  • Salt – a pinch.
  • Soft cottage cheese – 400 g.
  • Medium fat sour cream – 1 tbsp. l.
  • Vanilla sugar – 1⁄2 tsp.
  • Powdered sugar - to taste.
  • Vegetable oil for greasing the baking sheet.

Step-by-step cooking process

The preparation of sochniki is divided into 3 main stages - kneading the dough, preparing the filling and assembling.

How to make the dough:

  1. You need to take the margarine out of the refrigerator in advance and let it reach room temperature, which will take about 1.5-2 hours.
  2. You need to mix 400 g of flour and baking powder. Then you should sift the mixture through a sieve - this will saturate the flour with oxygen. The juices will turn out crumbly.
  3. Place the softened margarine in a deep container and add 100 g of sugar and a pinch of salt.
  4. Next, you need to beat the margarine, sugar and salt at low mixer speed. It is necessary to achieve homogeneity of mass and light whiteness.
  5. Then add 1 egg and beat the mixture at medium speed for 1-2 minutes.
  6. Next, you need to beat the second egg into the total mass, continue beating it for another 1-2 minutes.
  7. You need to gradually add flour and baking powder to the mixture, passing the ingredients through a sieve.
  8. Now you should knead a soft dough. It should be thick and homogeneous. It also does not stick to your hands. The dough comes away from the sides of the bowl easily. If it blurs, you should add more flour.
  9. To achieve the desired consistency, the dough must rest. Cover the bowl with the dough and place it in the refrigerator for 30 minutes.
  10. The cottage cheese filling can be prepared while the dough is infusing.
  11. In a bowl, mix cottage cheese, 80 g of sugar, vanilla sugar, sour cream, flour and egg. Mix all ingredients thoroughly until smooth.
  12. It is necessary that the mass infuses for 15 minutes.
  13. The finished chilled dough should be slightly kneaded with your hands and rolled into a thin layer of dough.
  14. Then it is divided into parts. There are about 12 of them.
  15. Each part should be rolled into a ball.
  16. Now you need to lay out a sheet of baking paper and coat it with vegetable oil.
  17. From each ball you need to form a small cake. Its diameter is 11-12 cm.
  18. Next, each cake needs to be laid out 1 tbsp. l. fillings. It is laid out along the middle of the cake.
  19. The filling should be covered with the other side of the cake.
  20. There is no need to pinch the edges - in the classic version, the filling should slightly “peek out” from the dough.
  21. You need to turn on the oven in advance. It should warm up to 200 degrees.
  22. Using scissors, cut out a small square of parchment sheet on which the cake with cottage cheese lies. Repeat the action with the remaining areas.
  23. Bake the juices in the oven for 20-30 minutes. If the top of the jug is browned, it means the dish is ready.

Rules for serving dishes, decoration

The finished juicers need to be cooled slightly and sprinkled with powdered sugar on top. To serve, use a flat plate with a paper napkin placed on it. It will help remove excess oil from the juicer that was absorbed during baking. Sochniki are usually served with tea.
