    Healthy food recipes exclude regular wheat flour, but alternatives do not provide the same tenderness and fluffiness to baked goods. The only flour that gives a similar result is rice flour, and we will use it to make cookies. Of course, you can use any other one, but then the baked goods will most likely be denser and crispier.

    We prepare cookies without sugar, with honey. First brew it with butter and spices, so the dough will acquire its original dark color. Don't be alarmed, the preparation process is quick and simple. The only delay will be that the dough must rest in the refrigerator for at least an hour.

    Shortbread gingerbread cookies

    The peculiarity of shortbread cookies is that they are moderately crumbly and fragile, with light notes of ginger.

    Required Products

    • 350 gr. flour;
    • 220 gr. oils;
    • 75 gr. ginger;
    • 170 gr. powdered sugar.

    Step by step instructions

    1. A few hours before cooking, remove the butter from the refrigerator to soften it.
    2. Grind soft butter with powdered sugar until creamy.
    3. Wash the ginger root, wipe dry and grind until mushy.
    4. Add ginger to the grated butter.
    5. Add sifted flour and knead into a stiff dough.
    6. Cool the dough in the refrigerator for half an hour.
    7. Roll out the finished dough, place on a prepared baking sheet covered with parchment and bake at 190 degrees until golden brown (baking time will depend on the thickness of the cookies).

    Ingredients:

    • 80 g honey;
    • 100 g rice flour;
    • 1 yolk;
    • 15-20 g butter;
    • ½ teaspoon of soda;
    • 1 teaspoon dry ginger;
    • ½ teaspoon cinnamon;
    • ⅓ teaspoon nutmeg.

    Instead of glaze:

    • 50-70 g cottage cheese;
    • Natural dye.

    You can use the original glaze made from milk and powdered sugar. Or replace the powdered sugar with SOM (skimmed milk powder, protein).

    You will need:

    1. 130 g whole-ground wheat flour;
    2. 70 g rice;
    3. 1 egg C0;
    4. butter 30 g;
    5. honey 1 tablespoon (you can use any sweetener to taste - stevia, fitparad);
    6. 1 teaspoon baking powder;
    7. freshly ground ginger 1 teaspoon;
    8. cardamom, cinnamon, vanilla, nutmeg, dry ginger - to taste;
    9. salt on the tip of a knife.

    Mix everything, put it in the freezer for an hour and cook the gingerbread cookies in the oven for 5-7 minutes at 180 degrees.

    Prepare PP glaze as follows:
    • white of 1 small egg;
    • 1 tablespoon liquid sweetener;
    • half a teaspoon of lemon juice.

    1. Place honey, butter and spices in a saucepan (ladle). Bring the mixture to a boil over low heat. Add ½ teaspoon of soda. Mix. The mass will foam and increase in volume. Remove from heat. Cool.
    2. Add the yolk and flour to the honey mixture. Mix the dough well. We transfer it to cling film and put it in the refrigerator for 1 hour.
    3. Then sprinkle the work surface with flour and actively knead the dough. Roll it out into a thin layer (2-4 mm), cut it out using curly molds.
    4. Place the pieces on a baking sheet lined with parchment.
    5. Place the cookies in the oven for 5-7 minutes at 180 degrees. Watch the baking, don’t overcook!

    Remove the PP ginger cookies from the oven and cool. In principle, it is ready, you can eat it. But for a more festive look, we’ll decorate it with curd cream.

    You can use a PP custard made from milk and cornstarch, but it will crack when it cools. Cottage cheese will add additional juiciness. Blend the grainy cottage cheese with a blender. If you are using soft cottage cheese, immediately transfer it to a pastry bag (or bag).

    Squeeze out cream instead of glaze, decorating your baked goods to your own taste. To get a colored cream, add natural dye to the cottage cheese.

    If you are not too concerned about the presence of sugar in products, make an original sugar glaze from powdered sugar and milk. Add milk to the powder until you get a thick consistency - then decorate the cookies.

    Ingredients:

    • 400 g flour (you can take premium grade wheat);
    • 200 g sugar (you can add much less if you don’t like sugary sweets);
    • 90g of hard butter, which is better to freeze first;
    • 1 egg;
    • ginger root;
    • cinnamon stick or 8 g ground;
    • 8 g (teaspoon) baking powder (you can take baking soda, quenched with lemon juice);
    • cardamom, cloves, nutmeg or any pepper - to taste.

    How to make gingerbread cookies?

    Prepare the spices:

    1. grind cinnamon, cloves, cardamom in a mortar or coffee grinder;
    2. grate the ginger on a fine grater;
    3. mix them with the rest of the spices and sift the flour into them.

    Next according to the recipe:

    • Grate the butter. To prevent it from sticking to it, we lubricate the device with vegetable oil, while the butter should be frozen.
    • Add a lightly whisked egg, a pinch of salt to the crushed butter shavings and mix.
    • Combine the dry and wet mass and knead the dough.

    The ginger paste should be quite dense (like shortbread cookies), but not dry.

    Let it rest in the refrigerator for a couple of hours.

    Next, set the oven to warm up to 180 C, in the meantime, sprinkle a silicone mat with a thin layer of flour and roll out a layer 0.5-0.7 cm thick (at your discretion).

    This cookie recipe is very simple. And it turns out incredibly tasty. If you haven’t prepared it using this recipe yet, I recommend that you do so right now.

    Ingredients:

    • A piece of butter, weighing about 100 grams, previously softened;
    • 2 teaspoons ground ginger;
    • 200 grams of flour;
    • Half a teaspoon of cloves;
    • 100 grams of granulated sugar;
    • A teaspoon of chalked cinnamon;
    • A raw egg;
    • One and a half teaspoons of soda;
    • A teaspoon of cocoa for color (use as desired);
    • 3 full teaspoons of honey.

    Preparation:

    1. Grind the cloves in a mortar or grind in a coffee grinder to a powder state.

    2. Sift all the flour into a large bowl. Add cinnamon, soda, ginger and cloves to it. Mix thoroughly. Sift everything together again.

    3. Place the butter in one plate with granulated sugar. Beat with a mixer until smooth.

    Ingredients:

    • Flour – 250 gr.
    • Powdered sugar – 100 gr.
    • Butter – 100 gr.
    • Egg – 1 pc.
    • Honey – 2 tbsp.
    • Ground ginger – 2 tsp.
    • Cinnamon – 2 tsp.
    • Cocoa powder – 1 tsp.
    • Ground cloves – 0.5 tsp.
    • Ground cardamom – 0.5 tsp.
    • Ground allspice – 0.5 tsp.
    • Soda – 0.5 tsp.
    • Salt – 1 pinch.

    Cooking process:

    1. Pour a pinch of salt, soda and all the spices into one container. Mix everything thoroughly. In this case, it is convenient to use a spice grinder.
    2. Sift flour and cocoa powder into the same container, which will give our cookies a chocolate tint. Mix everything well.
    3. Grind powdered sugar with softened butter. Then add melted honey and egg to them. Beat the whole mass until creamy.
    4. Combine the two masses and knead the dough. Then we send it to cool in the refrigerator for several hours. Once the dough has cooled, it will be easier to work with and roll out.
    5. We take out one part immediately, and leave the second in the refrigerator.
    6. Roll out the dough onto a parchment sheet to a thickness of 5 mm.
    7. Using molds, cut out cookie dough. We take out the second part of the test and carry out similar manipulations.
    8. Place the cookies along with the parchment on a baking sheet and place them in an oven preheated to 180 degrees for 5 minutes.
