The packaging of all samples contains the words “baked milk” - either in the name of the product or in the description of its taste or aroma. Baked milk is even declared as part of some samples (and some have condensed milk with sugar). All this, combined with the pictures on the packaging, is intended to give the consumer the impression that the cookies contain baked milk.
Analysis of the fatty acid composition showed that if there is baked or any other milk in the samples, its amount is extremely small.
Experts made this conclusion taking into account the milk fat content (it turned out to be less than 3% of the total fat).

In accordance with the requirements of the technical regulation TR CU 022/2011 “Food products regarding their labeling” (Article 4.3), it is not allowed to indicate components in the name of food products if they or their processed products are not included in the food product.
If a flavoring agent is used in a food product, the name of the component replaced by this flavoring agent and not included in the food product may be included in the name only using the words “with taste and (or) aroma.”
Since the invented name “baked milk” in the absence or extremely slight presence of milk in the composition can mislead consumers, the samples “Lyubyatovo”, “Briankonfi”, “Biskvitka” and “RotFront” (“Cow”) are included in the List of Products with comments.
By the way, the name of the latter contains the word “taste”, which, however, does not meet the requirements of the technical regulations for the labeling of food products. The rest of the listed samples do not have the words “with taste” or “with aroma” on the packaging; only the “Akkond” and “First of all” samples have them in the name.
On the packaging, milk is included in the product, and there are no comments regarding it regarding the indication of name and composition. However, according to experts, the packaging design and drawings of this sample still mislead the consumer, creating the illusion that the product contains dairy components.
For the remaining samples, information about the presence of milk in the composition seems doubtful, and this also served as the reason for their inclusion in the List of Products with comments.
The absence of milk, however, did not affect the taste properties of the cookies in any way: according to experts, all samples have a quite pronounced taste and smell.
The appearance of all products corresponds to the standard: the shape is flat, without dents or swelling; the surface is smooth, with a clear pattern; The products are baked when broken, with a uniform structure.
The benefits of baked milk for the body
Due to the fact that the fatty molecules in the liquid are smaller and easily digestible, the benefits of baked milk for the body are much higher than the harm. The product is even recommended for diabetics, allergy sufferers and people with digestive problems.

Experts checked the cookie samples according to several quality parameters - they examined the products for moisture, alkalinity, wetness and ash content, and determined the fat and sugar content.
The "outsiders" were the "Biskvitka" cookies: they get wet the slowest, they have the highest humidity - 6.4%, alkalinity - 1.9 and ash content (an indicator of the content of mineral dust and other contaminants) - 0.056%.
One of the best quality test results is for the Bryankonfi cookies. It has the highest percentage of wetness (226%) and the lowest humidity (3.8%).
The lowest alkalinity was observed in the Lyubyatovo sample (0.4%), and the minimum ash content was observed in Clever cookies (0.037%).

Not one thing, but another
With one exception (more on that below), all samples passed the quality test successfully. It remains to be seen whether they are safe?
The study showed that all samples are safe according to microbiological parameters. No microbes, coliform bacteria, pathogenic bacteria, yeasts or molds were found in the cookies.
I would like to say: eat boldly, these cookies will not harm your health! However, the examination discovered another threat - trans fats.

Trans fats are the common name for modified fats containing trans isomers of fatty acids. In accordance with the requirements of technical regulations, edible fats should not contain more than 2% trans isomers. Until January 1, 2020, a less stringent requirement was in force (the maximum permissible content of trans isomers was 20%).
Thus, in the Akkond sample, the mass fraction of trans-fatty acid isomers was 23.2% of the total fat. This is more than the technical regulations allow, even taking into account the less stringent requirements in force at the time of production of the cookies). Akkond cookies were included in the Black List for non-compliance with safety requirements.
Other manufacturers are also at risk. If, as of January 1, 2020, they have not changed the requirements for fats used in the manufacture of cookies, they may also fall into violation: in the fat phase of the RotFront sample, the mass fraction of trans fatty acid isomers was 7.9%, in Clever cookies - 9% . However, the tested cookie samples were manufactured at the end of 2017, so for this indicator they comply with the requirements in force at the time of their release.
In the remaining cookie samples, the content of trans fatty acid isomers turned out to be very low: from 0.1% (“Briankonfi”) to 0.5% (“First thing”).

Trans fatty acid isomers are formed as a result of modification of liquid vegetable oils. As a result of this process, fats become hard. Solid fats are included in the formulations of most types of confectionery and other products. Butter or cocoa butter can be used as such fat, however, these components are quite expensive and manufacturers resort to their cheaper substitutes - hardened vegetable oils, milk fat substitutes, and others.
A simple recipe for homemade butter cookies
1. First of all, you need to prepare the flour in advance. Carefully sift it to remove excess debris. 2. In a deep, as clean and dry container as possible, combine granulated sugar, cinnamon, vanilla sugar and eggs. Beat everything well until the sugar grains are completely dissolved. 3. We prepare shortbread cookies with a rich taste using the following ingredients... Prepare four tablespoons of rice flour, a tablespoon of corn flour, one chicken egg and a pinch of baking powder. You should also use fifty grams of butter and some sugar, depending on your taste preferences.

- 100 g softened butter
- 200 g fine granulated sugar
- 1 egg
- 60 ml of milk (a quarter glass), lukewarm or at room temperature (in my case it was baked, “Ruzskoe milk”, it has a very mild taste, if you really like the taste of baked milk, you can make homemade baked milk - more pronounced in taste and color , then it will be felt brighter in the cookies)
- 400 g wheat flour
- 1 tsp baking powder
As a basis, I took the recipe for milk shortcakes - the ones that each of us remembers in childhood, but the dough was rolled out a little thinner and baked a little longer.
This results in crispier cookies. If you want to make it softer, roll it out thicker. By the way, the soft taste of baked milk will be better felt. 1. Beat butter and sugar until smooth. 2. Beat the egg, add half of it along with the milk to the butter and beat again until creamy. 3. Add baking powder and mix. 4. Add flour and knead to a homogeneous, almost non-stick dough. 5. Roll out the dough into a layer 6-7 mm thick and cut out circles with a diameter of 6-7 or the same size as the cookie stamp. If there is no stamp, mongeau can make the design by hand (using a fork or other tools). 6. Beat the remaining egg with a small amount of milk (1 tbsp) and brush the cookies with it. 7. Bake in an oven preheated to 200 degrees for about 10 minutes (12 if you want it golden brown and crispy).

I think this cookie will become one of my favorites. The dough is kneaded in a couple of minutes and does not require refrigeration like shortbread. The stamp was finally tested (after all, it had been lying around for so long!!!). And now I want to make chocolate chip cookies with layers.
