To get the dough for chocolate cake, you need:

  1. Break 3 eggs into a deep bowl and beat them with 1 tbsp. Sahara. You should get a white thick foam.
  2. 4 tbsp. l. dissolve cocoa in 1 tbsp. l. strong black coffee and add 140 ml hot water.
  3. Rub cottage cheese (400 g) through a sieve, add 1 tsp. vanilla sugar and mix with beaten eggs.
  4. Melt 100 g of butter, pour 2 tbsp into it. l. vegetable oil, pour into the dough. Then add cocoa (mixture).
  5. Sift wheat flour (300 g) through a sieve, add 1 tsp. baking powder and a pinch of salt. Pour into the dough, mix everything. You should get a thick mass. If desired, you can add chopped walnuts to it.

Preheat the oven to 1800C. Grease a ring silicone mold with vegetable oil and place the dough into it. Bake for about an hour, checking doneness with a toothpick. The cake will be airy, porous, slightly moist and very tasty.

  • bananas (large, ripe) 2 pcs.
  • sugar 150 gr.
  • butter (softened) 100 gr.
  • sour cream 2 tbsp.

You need to mash the bananas with a fork or in a blender.

Now knead the butter and sugar.

Add sour cream, soda, vanilla sugar. (To be honest, I didn’t have sour cream at home when I made it, so I added homemade yogurt instead.

Combine with mashed bananas and add flour until the consistency of very thick sour cream.

This shape is more suitable for muffins.

But you can use any silicone muffin molds. Or bake in special disposable paper molds, for example, like this.

But we will do this next time :), but for now we put the dough in our silicone mold,

Level the top with wet fingers.

Oatmeal banana muffin with oat flakes

The recipe is perfect for dietary and proper nutrition, and vegans will like it.

  • Oatmeal – 50 gr.
  • Bananas - a couple.
  • Egg.
  • Flour – 100 gr.
  • Milk – 100 ml.
  • Granulated sugar – 90 gr.
  • Baking powder – 5 gr.
  1. Pour milk over the cereal and leave for half an hour so that it has time to swell.
  2. Break an egg into a bowl, add sugar, and mash until white. Pour in the oil, beat well again.

How to make cottage cheese cake with candied fruits

A cupcake with candied fruits can be baked not only for the New Year holidays, but also at other times to pamper your family with delicious pastries.

Step by step recipe:

  1. Grind 75 g of soft butter with 130 g of sugar.
  2. Add 130 g of cottage cheese, grated through a sieve, mixed with 1 tsp. vanilla sugar.
  3. Beat 2 eggs into the dough one at a time, kneading thoroughly after each. You can use a whisk or mixer on low speed.
  4. Add 1 tsp to the dough. soda, quenched with vinegar and 150 g of sifted wheat flour. Mix the dough well.

A simple and delicious cake with semolina is baked without flour:

  1. Wash 2 medium juicy apples, peel and grate on a coarse grater. Add ½ tsp. lemon juice so that the apple pulp does not darken in the air.
  2. Add 400 g of cottage cheese, 2 eggs and 100 g of semolina. Mix well until smooth. Leave the dough for 15-20 minutes so that the semolina swells well.

Combine eggs and sugar in a bowl; beat with a mixer for 30-45 seconds until lightly fluffy. At the same time, melt the butter in the microwave or on the stove over low heat.

Wash the bananas, peel them, cut them into pieces and add to the cottage cheese.

Puree with a blender until you obtain a homogeneous curd-banana mass.

Add melted butter to the beaten eggs, then banana-curd puree and beat everything together or just stir well with a spoon.

Then sift the flour into a bowl, after mixing it with soda and baking powder.

Pour lemon juice directly into the dough and immediately mix quickly but thoroughly. The dough is quite thick; the banana puree gives it a beige color.

Place the dough into portioned molds (I put a paper mold in each silicone mold) or into a cake pan, greased with sunflower oil or lined with an oiled sheet of parchment paper.

The small muffins were baked at 200C for just over half an hour; the big one spent almost 1 hour in the oven.

  6. Pour the flour into the bowl with the carrots, then add the beaten eggs.

Grease the pan with vegetable oil and line with parchment paper. Place the dough into it, smooth it out, and sprinkle oatmeal or pumpkin seeds on top. Place the cake in an oven preheated to 1800C and bake for 1 hour 10 minutes, checking for doneness with a toothpick.

PP oatmeal muffins

You can also make muffins from oatmeal. This flour retains all its beneficial properties during processing, and therefore is indispensable in cooking.

  • 100 grams of oat flour
  • 200 grams of kefir. Use low-fat kefir.
  • 2 eggs.

  5. Using a pastry bag, I fill the baking pans to about 2/3 full. Silicone molds (dry) are suitable; I put paper capsules in some of them.
  6. I bake at 180 degrees in a preheated oven for 25-30 minutes. I check readiness with a toothpick - it should be dry.
  7. Now the hardest part is that you need to wait for the curd muffins to cool down. It’s hard to resist the temptation to try at least one, they smell so delicious! Once the baked goods have cooled, I sprinkle powdered sugar on top. You don’t have to feel sorry for it, as the muffins won’t be very sweet.

I love these muffins with coffee or green tea. On the second day they will be even tastier than on the first - the curd pastries will settle and become a little moister, tasting like French curd cheese.

  3. Pour 30 g of coconut flakes into the dough, knead the dough well again.
  4. Sift 1 tbsp. wheat flour, add 1 tsp. baking powder.
  5. Add flour into the dough in portions and mix well.

Preheat the oven to 1800C, grease the pan with oil, sprinkle with flour, and place the dough in it. Bake for 35 minutes. Sprinkle the finished cake with powdered sugar and coconut flakes.
