This technique will allow you to use very little vegetable oil for frying the cakes, which will significantly reduce their fat content.
Pour the liver mixture into a well-heated and oiled frying pan. The cakes fry quickly: about 70 seconds on one side, about 40 on the other. Try not to overdry them so that the liver cake does not turn out tough. As a result, you should get 7-8 cakes.

Maslenitsa is in full swing. According to an already established tradition, during Maslenitsa week it is customary to have noisy fun, visit people, and treat everyone to pancakes.
Today we will also bake pancakes, but not simple ones, but liver ones, from which we will make a liver pie or liver cake. It will turn out delicious and beautiful. We will slightly change the traditional liver cake recipe to reduce the final calorie content and fat content in the finished dish. If no one knows about our tricks, then it will be almost impossible to notice the difference.
To make our unusual cake more tender, we will use two types of liver: beef and chicken. We will replace mayonnaise, which is included in almost all traditional recipes, with a light sauce based on sour cream, 15% fat, and minimize the amount of vegetable oil required for cooking.

Homemade pork liver cake
The recipe for such a snack cake is easy to prepare, if, of course, you know exactly how to prepare it correctly, and probably the main thing is to understand all the intricacies of pre-processing this very liver. Pork liver is best suited for this dish.
Ingredients:
- Pork liver – 900 gr
- chicken eggs - 3 pcs
- flour - 5 tablespoons
- milk - 450 gr
- carrots - 2 pcs.
- onion - 2 pcs
- vegetable oil
- lemon juice - 1.5 teaspoon
- mayonnaise - 5 teaspoons
- greens and salt - to taste.
Cooking method:
1. We wash fresh pork liver in water and cut off the film from it. We make several punctures in the middle and place it in a deep bowl, into which we pour 300-350 grams of milk and leave for 4-6 hours.
2. After the time has passed, remove the liver and cut it into small pieces.
3. Grind it in a meat grinder until smooth and add 100-150 milliliters of milk.
4. In a separate container, lightly beat three chicken eggs and pour them into the general mixture, add flour, salt and knead the dough. The consistency should be approximately like thin sour cream.
5. Place one ladle of prepared dough in a heated frying pan with vegetable oil, cover it with a lid, reduce the heat to low and cook for 2-4 minutes until the crust is slightly golden brown, turn over and do the same for the same amount of time on the other side.
6. Fry finely chopped onion and grated carrots until tender.
7. Coat the first pancake with one teaspoon of mayonnaise, and spread the filling on top around the entire perimeter in a thin layer. We do this in the same order until the end, after which we get a liver cake, which we decorate on top with herbs and put in the refrigerator to soak for 4-5 hours.

At least, it seemed so to me when, at the age of 3-4, I first saw a mound of shapeless mass of unknown color and therefore did not want to eat liver in any form: stewed, fried, boiled. They tried to explain to me that the liver contains a lot of vitamins A and B, amino acids, microelements that are beneficial for my body and that it is so tasty. But all persuasion remained unanswered.But one day my attitude towards the liver changed. And all thanks to the liver cake. I appreciated the taste of liver, and later its benefits. And everything happened somehow by itself.
I, like all children with a sweet tooth, loved cakes. Mom, so as not to endanger my health, baked them herself. And while flipping through a cookbook with glossy pages, in search of something new, the following inscription caught my eye: Liver cake. The recipe was so simple and the photo beautiful that she came up with an interesting idea. She called me, pointed her finger at the photo and asked: “Do you like it?” Of course, I liked the picture with the cake. - Rinse the liver; if there are veins, film and flow tubes, all this must be removed and the offal cut into pieces;

Cooking method:
Pass the liver through a meat grinder or mash with a blender. Add eggs, flour, finely chopped onion. Salt and pepper the mixture and beat with a blender.
Grease the multicooker bowl with vegetable oil and place two long strips of parchment paper crosswise to make it easy to remove the baked goods later. Pour in the dough, close the multicooker and turn on the “Baking” mode for 60 minutes.
