Today I would like to share with you a recipe for amazing coconut curd cookies. For the filling I used a berry - strawberry. But, if you wish, you can replace it with other berries or fruits. Apricots and peaches go well with coconut and cottage cheese. If you're making cookies during the winter, bananas or canned pineapple work great. And for those with a sweet tooth, I recommend putting a piece of chocolate in the middle of the cookie.

Cottage cheese cookies are loved by adults and children. As a lover of cottage cheese dough, I want to share my favorite recipe for this healthy pastry. The cookies are moderately sweet, with a crispy crust and a tender crumb. There is no particular coconut taste, although my husband said that the taste of coconut milk is felt.

Coconut has a completely different role here: it adds a special crunch and airiness, without it there would be a completely different structure. I recommend making it, you won’t be left indifferent.

How to prepare “Curd cookies with coconut” step by step with photos at home

For cookies, take flour, sugar, softened butter, eggs, coconut flakes, soda and vanilla extract (vanillin). First grind the cottage cheese through a sieve or in a meat grinder. I already had it wiped.

Beat softened butter, eggs and sugar until fluffy.

In a separate bowl, mix flour, soda, coconut and cottage cheese. Grind everything into crumbs with your hands. If you have vanillin, add it at this step.

Add the curd crumbs to the butter mixture and knead the dough. If you have vanilla extract, add it to the butter first, and then add the curd crumbs. You can safely add 1 tablespoon of extract. This is the kind of bun we got. Place it in the refrigerator for 1.5 hours.

Turn on the oven at 180°C. Our dough has cooled. Now roll it out into a layer about 0.7 cm thick and cut out cookies with a cookie cutter. You can just take a glass - it will also work out well. If you roll out the dough thinner, about 0.3 cm, then the cookies will turn out completely crispy and there will be no such softness inside. In this case, coconut is also not particularly noticeable. We liked the plump ones better; they turn out much tastier and more tender.

Bake in a preheated oven for 20 minutes. I got 4 of these baking sheets (provided the dough was rolled out thickly).

Ingredients:

  • Cottage cheese (moderately moist, without grains) – 250 g
  • Butter (margarine) – 150 g
  • Granulated sugar – 140 g
  • Salt – 1 pinch
  • Egg – 1 pc.
  • Zest of 1/3 lemon
  • Coconut flakes – 70 g
  • Flour – 270 g
  • Baking powder – 6 g
  • Powdered sugar – 2 tsp.

Preparing cookies:

  1. Remove the butter from the refrigerator in advance; it should have a soft (creamy) consistency and be easy to spread.
  2. Divide the egg into yolk and white. Cover the bowl with the yolk with film and set aside for now.
  3. Add granulated sugar and a pinch of salt to room temperature butter. Grind until smooth. Now add the coconut, cottage cheese (I used ricotta), egg white and lemon zest. Stir. Add flour, baking powder and knead the dough. Do not add all the flour at once: if you have dry cottage cheese, you may need less flour. The dough should turn out to be plastic, that is, capable of taking and maintaining the given shape.
  4. Tear off small pieces of dough and roll them into walnut-sized balls. Form the balls into rolls about four centimeters long. A lot of cookies are obtained from the specified amount of products. I got 65 pieces.
  5. Add powdered sugar to the yolk and grind until smooth.
  6. Place the cookies on a baking tray lined with quality baking paper and use a watercolor brush to cover with the yolk mixture. With the opposite end of the brush, if desired, you can make a simple design in the form of several indentations.
  7. To prevent the bottoms from burning, place foil under the baking sheet and place the products in an oven preheated to 180 degrees on a medium level and bake for about 23 minutes. The cookies should be browned on top and bottom.
