If you have frozen puff pastry for your cherry puff pastry, take it out of the freezer (as much as you need) and leave it to defrost.

So, put our puff pastry on a baking sheet, which I always cover with baking paper. And now, retreating 0.5-1 centimeter from the edge, spread the cream. This time I have 2 sheets of dough, but for this pie I often use one layer, because then the cream turns out just right.

We distribute cherries over the top. I don't defrost mine.

Of course, you shouldn’t go heavy on even such “light” pies and make them the basis of your menu, but it’s still acceptable to indulge from time to time.

Cherry pie with kefir

Budget option and products are always at hand.

You will need:

  • 1 glass each - kefir, flour, sugar
  • 1 PC. - egg
  • 1 teaspoon – soda
  • 2 cups – ripe cherries
  • 1 tbsp. spoon – potato starch

How to cook:

1. Sprinkle the prepared cherries with a spoonful of sugar and a spoonful of starch.

2. Beat the eggs well with a mixer or whisk, add sugar, beat again.

3. In a separate bowl, mix kefir with soda and pour into the egg mixture.

This cherry pie is anything but simple. To prepare it you will need about an hour and a half of time and a simple set of ingredients. A distinctive feature of this cooking option is the use of chopped dough and sour cream filling, which makes the baked goods tender. The front of the cake looks amazing.

Ingredients:

  • Wheat flour ─ 200 g.
  • Butter ─ 100 g.
  • Water ─ 70 ml.
  • Cherry ─ 250 g.
  • Full-fat sour cream ─ 100 g.
  • Chicken egg ─ 2 pcs.
  • Sugar ─ 70 gr.

Cooking process:

  1. A special feature of preparing chopped dough is that all products and equipment must be well chilled. To do this, all products together with the equipment are placed in the freezer for at least 10-15 minutes. After this time, take the bowl of flour out of the freezer.
  2. Sift the flour twice through a fine sieve.
  3. 30 minutes before cooking, place the butter in the freezer, it should cool well. Chop the butter into a bowl of flour with a cold knife. Only a natural mixture of fats is suitable for this recipe. If you use margarine, the taste of the baked goods will change.
  4. Using your fingertips, rub the butter into the flour until it forms fine crumbs. You need to work with the mixture very quickly so that the butter is cooled and does not melt.
  5. Add 0.5 tablespoons of salt and 5 tablespoons of sugar to the mixture. It is better to add water in two stages; first, pour in 4 tablespoons of liquid and observe the consistency of the dough. It should form a lump; if visually there is not enough water, you can add a few more spoons.
  6. The resulting chopped dough is easy to confuse with shortbread, but this is completely wrong. The consistency of the resulting mass is somewhat similar to fine crumbs; ideally it should be crumbly and soft.
  7. You need to work quickly with the dough. It takes no more than 5 minutes to knead. All the kneaded dough must be gathered into a ball so that it does not separate. It is squeezed in the palm of your hand and wrapped in cling film.
  8. An important stage of preparation is proofing in the refrigerator. It must be refrigerated for at least 1 hour. It can be stored in the freezer for about 8 weeks. Frozen dough is best thawed in the refrigerator.
  9. It is best to work with ready-made chopped dough on a dusty, dry surface. The dough is rolled out into a thin layer and a layer of parchment is applied to it. The thickness of the dough layer should not be more than half a centimeter.
  10. The baking dish is generously coated with butter or sprinkled with flour. Carefully transfer the rolled out dough from the parchment into the mold and level it over the surface. The edges are cut with a knife.
  11. Wash the cherries under running water and remove the seeds.
  12. Sprinkle the berries with a small amount of sugar or powdered sugar.
  13. I start preparing the sour cream filling, for which it is best to use full-fat sour cream. It is transferred to a mixing bowl with a mixer. Additionally, add one chicken egg and add sugar, beat with a mixer at high speed for 2-3 minutes until the crystals are completely dissolved.
  14. Pour the sour cream mixture over the pie and put it in the oven.
  15. Bake at temperatures up to 180 degrees. Check the readiness of the baked goods with a toothpick. It is important that the fill has time to set. If you remove the ingredients too early, the cake may fall apart.

The cherry pie is ready, it should sit in the mold, and only after that it can be taken out and served. The front side of the sweet dessert looks delicious; it can be additionally decorated with powdered sugar.

Pie with cherries and cottage cheese

You will need:

  • 1 cup each - flour with sugar
  • 3-4 pcs. – eggs
  • 150 gr. – butter or good margarine
  • 2 packs (400 gr.) – soft cottage cheese
  • 0.5 kg. – cherries
  • 150 gr. – sour cream
  • 1 teaspoon – baking powder

For the glaze

  • 50 gr. – sugar, sour cream, butter
  • 2 tbsp. spoons - cocoa powder (you can use one chocolate bar)

How to cook:

1. Chop the butter (margarine) into small pieces with a knife, add sugar. Mash the mixture with a fork.

2. In a separate bowl, beat the eggs with a mixer.

3. Add baking powder to the flour, mix, combine with all the products, knead the dough.

4. For the filling, mix cottage cheese, sour cream, two tablespoons of sugar. The result is a delicate curd cream.

5. We put the dough into the mold, form the sides, then a layer of pitted cherries and fill everything with curd cream.

6. Bake the pie for about 40 minutes until done at 170 degrees.

7. While the cake is in the oven, make the chocolate glaze. Mix sour cream, sugar, cocoa, pour in melted butter. Mix everything.

On a note! Instead of cocoa, you can take milk chocolate and melt it with butter. Then you don't have to add sugar.

8. Cool the finished cake slightly, pour glaze on top. Place in the refrigerator for 2 hours to soak.

  1. Defrost the cherries.
