  1. The dough should not be heavy. The products will be tasty only if they turn out fluffy.

The most economical option for a pie dough recipe is a product made with filtered water. You will need to take 1.5 cups of liquid. Other ingredients: 6-6.5 tbsp. high grade flour, small. spoon of salt.

Their yeast-free dough on eggs turns out very well. Thin, crispy, with a juicy filling, they will definitely not leave you indifferent. Very tasty yeast dough

It's my favorite?? recipe for yeast dough for baked pies, pies, buns, etc.

Ingredients (for 20 - 25 pies):

  • Flour - 500 g (you may need a little more or less, because flour is different everywhere)
  • Dry yeast - 1.5 teaspoons (8 g)
  • Sugar - 1 tbsp. spoon
  • Salt - 1 teaspoon
  • Milk – 300 ml
  • Egg - 1 piece (I put 2-3 yolks)
  • Butter - 50 g (can be replaced with vegetable oil)
  • Vegetable oil (for kneading dough) - 2 tablespoons

Preparation:

  1. Preparing yeast mash.
  2. Dissolve the yeast and sugar in half the amount of warm (about 36″C) milk, place the cup with the yeast in a warm place. ** If the yeast is good, then after 15-20 minutes it should come to life and rise into a foamy cap. If the “cap” does not work, then you should change the yeast!
  3. Dissolve the salt in the remaining (warm) milk and scramble the eggs.
  4. Melt the butter.
  5. Sift 400g flour into a large bowl.
  6. Make a hole in the flour, pour into the hole: yeast mixture, milk with eggs, melted butter and knead (adding flour as necessary) into a very soft, sticky dough. **Do not overfill the dough with flour, the pies will turn out hard and rubbery. It is better in the future, when making pies, to use more flour for dusting. **Knead the dough for 10 - 15 minutes (this time is necessary for the gluten of the flour to start working), CAREFULLY, until it comes off your hands.
  7. Place the kneaded dough in a bowl greased with vegetable oil, cover the top with cling film and place in a warm place to rise.
  8. When your dough has increased in size by about 2-3 times, knead it with your hands greased with vegetable oil and let it rise again. Your dough is ready, can you start cutting it right away? ***Usually, while preparing the dough, I let it rise 2 times. The first climb takes me one and a half, two hours, the second - about an hour. While the dough is rising, prepare the filling to your liking.

Preparation of pies:

  1. Place the dough that has risen a second time on a table dusted with flour and stretch it into a rope. Divide into equal pieces (mine weighed 40 g).
  2. Round each piece of dough, i.e. form it into a smooth ball. Cover the formed dough balls with film and leave for 15 minutes to pre-proof. **Preliminary proofing is necessary so that the dough rolls out easier and more readily and is more pliable.
  3. Then roll out each ball into a flat cake ~0.5 cm thick, place the filling in the middle, bring the edges of the dough together and pinch.
  4. Place the molded pies on a baking sheet (seam side down) lined with baking paper, cover with a towel and leave to proof again for 15-20 minutes.
  5. 5-7 minutes before baking, brush the pies with a beaten egg (I use a yolk, beaten with 1 tablespoon of milk).
  6. Bake in an oven preheated to 180 - 200 C until browned (20-25 minutes).
  7. Immediately after baking, the pies can be lightly greased with butter for a soft crust.

Cook with love! ❤ And live deliciously!?

Leave the finished products for 15 minutes to rise, then brush with egg and place in the oven for 20 minutes.

Little tricks for the cook

It is known that the body absorbs calories most actively in the first half of the day. Therefore, for breakfast it is quite acceptable to eat a delicious cheesecake with tea, a croissant with coffee, a roll with cocoa, or even a piece of cake. But you shouldn’t overeat and try to cram your daily intake into yourself, since everything is digested so well before lunch.

To make baked goods healthier, when cooking at home, reduce the amount of sugar by 40-50 percent. Usually the proportion of this ingredient in recipes is indicated in excess. It is recommended to do the same with fat: the amount of butter can be safely reduced by a third, or even half. At the same time, the taste and quality of the dessert will not be affected, but the energy value will be significantly reduced.

When baking in the oven, do not grease the baking sheet or pans. It is better to line the bottom with non-stick coating. Pies or buns will remain just as tender and airy.

Finally, you can use fruit purees and slaked vinegar instead of chicken eggs.

How to cook meat pies

This is the favorite option for most men. Why not pamper your beloved? Moreover, the task is not so difficult. If you intend to have a substantial meat filling, then you need to prepare the simplest dough. Sift 2.5 cups of flour into a large cup, then add 200 ml of warm water with yeast dissolved in it. You need to take 25 g of them. To activate, you need to add a tablespoon of sugar. If desired, add 30 ml sunflower oil.

For the filling you need to take 200 g of minced meat and one onion. There is one secret here. Do you want to know how to make meat pies so that they are amazingly delicious? Twist the minced meat yourself! Then success will be guaranteed. But store-bought minced meat usually leaves much to be desired.

Preparing the dough

First, crumble the yeast and pour warm water over it, add sugar and one glass of flour. Let the dough sit for 10 minutes. Now add all the other ingredients and leave to rise. While the dough is fermenting, let's make the meat. These are not belyashi, which are cooked with raw minced meat. Here the filling will be ready. Fry the onion in a frying pan, then put the minced meat in it. Fry until done and don’t forget to add salt.

When the dough has risen and the minced meat is no longer hot, you can start making pies. It is not recommended to add flour for this; let the dough remain fluffy. Better lubricate your hands and table with oil. Pinch the pies together like dumplings and fry in oil. Place the finished products under the lid. The pies turn out very tasty and juicy.

Yeast dough for kefir pies

Compound:

  • wheat flour - 0.7 kg;

  • kefir (at least 2.5% fat) - 0.25 l;
  • refined vegetable oil - 60 ml.

  • Add oil to the starter and stir.
  • Sift the flour, add it to the liquid base and knead the dough. It is advisable to add flour not all at once, but in portions, this will avoid the formation of lumps.

  • When the dough has risen, punch it down. Wait another 30-40 minutes - during this time it will rise again. After this, you can knead the dough and start making pies.

Pies for children

What could be better than hot pastries with cold milk? If you agree with this, then let's learn how to make jam pies. Children will especially appreciate them. Pies can be made in the oven or in a frying pan. Today we will look at the second option, because it is faster. But even in the oven, the same baked goods turn out very tasty.

The dough for this recipe is prepared very quickly. You only need to mix all the ingredients and leave them for an hour. After this, you can start baking. Pour a heaping glass of flour into a large cup. Be sure to sift it before doing this. Add 2 teaspoons of dry yeast and mix thoroughly. Make a hole at the top and pour a glass of milk into it, stirring a teaspoon of sugar and a pinch of salt into it. Pour the egg on top and start kneading. Lastly, add a couple of tablespoons of vegetable oil.

After an hour, you can already work with the dough. To do this, you need to knead it a little and divide it into portions. Now roll out each one using a rolling pin. You need to put a little filling on each flatbread and seal it. It is best to make the pies small, then they look more interesting. Heat a frying pan and fry the pieces in oil on both sides until golden brown. You can sprinkle the finished products with powdered sugar.

Cooking tips

As you can see, there are a lot of options. Therefore, if until now you have made pies from ready-made dough, then it’s time to get creative on your own. There is nothing complicated in culinary art. You just need to strictly follow the recipe - and you will succeed. But there are a few secrets worth knowing. Be sure to take all ingredients at room temperature. This is especially true for yeast baked goods, although simple dough also turns out much better this way.

Be sure to sift the flour, preferably several times. This way you will enrich the dough with oxygen, and it will be more fluffy and tasty. The next point concerns kneading. Never pour out all the flour at once. Each housewife has her own, and the norm will also change. Gradually add it a little at a time and mix thoroughly. If you plan to leave the dough to ferment, do not tighten it too much. While the yeast is working, it will change its structure and become denser. During the final kneading process, you can add a little more, guided by touch. The correct dough should be like an earlobe.

Now a few words about the filling. It can be anything: vegetable, meat or fish. Sweet pies come with cottage cheese and fruit, sweets and jam. From all this variety, you can choose the option that your family members will like. When preparing the filling, make sure that it is not too liquid. This is especially bad for baking in a frying pan.
