This lavash roll with apples and cottage cheese will help you out when you need to quickly prepare something delicious for your family for tea. It is prepared in a matter of minutes and turns out very tasty, tender, aromatic. When soaked in the curd-apple filling, the lavash gets a little soggy, becomes soft and is almost unnoticeable in the finished roll. Instead of cottage cheese, you can use sweet curd mass with vanilla - it has the right consistency and taste. You can also add chopped walnuts to the filling, and put cinnamon instead of vanilla - in any case it will turn out delicious.

Ingredients for the recipe “Pita bread roll with apples and cottage cheese”:

  • Thin pita bread – 1 piece
  • Cottage cheese – 250 g
  • Apple (medium) – 1 pc.
  • Sugar – 60 g (3 tbsp)
  • Sour cream – 1-2 tbsp.
  • Vanillin
  • Butter (for lubrication)

How to make lavash roll with apples and cottage cheese

Wash the apple, dry it, cut out the core with seeds and grate it on a coarse grater along with the peel.

Combine cottage cheese with sour cream, sugar and grated apple. If desired, you can add vanillin or vanilla sugar. Adjust the amount of sugar to your taste; you can put a little less if you don’t like sweet cottage cheese. How much sour cream to add depends on what kind of cottage cheese you have: dry or wet.

Mix everything thoroughly. The filling should not be runny so that the pita bread does not get soggy, and the consistency should resemble ready-made curd mass.

Cut a large sheet of lavash in half. I got two small rectangles measuring 25x30 centimeters. You can, of course, not cut the pita bread, but make one large roll out of it, but small rolls look prettier. Spread the pita bread on parchment paper or cling film and spread the curd-apple filling on it in a thin layer, leaving one edge free (about 1.5-2 cm).

Then carefully, so that the thin sheet does not tear, roll the pita bread with the filling into a roll. We make the second roll in the same way.

Place the cheese rolls on a baking sheet lined with parchment paper, seam side down, to prevent them from unraveling. And grease them with melted butter using a silicone brush.

Place the rolls in the oven, preheated to 200 degrees, and bake for 10-15 minutes.

Then take the cottage cheese rolls with apples out of the oven, let them cool slightly, cut them into small portions, 3 centimeters wide, and serve with a cup of aromatic tea.

Apple strudel is a very tasty homemade pastry that can be easily prepared if you have thin pita bread on hand. It is not at all necessary to search for a stretch test or make it yourself. The most ordinary pita bread, a lot of juicy apples and a little imagination will do the trick!

In general, apple strudel is a fairly common pastry, which, in essence, is a roll of unleavened dough and a large amount of fruit filling. For me personally, apples and cinnamon are always a winning combination. Let’s also add creamy notes, a subtle aroma of vanilla, a little lemon juice for sourness, and in a matter of minutes you will have a simple but incredibly tasty treat for the whole family on your table.

To prepare apple strudel, take thin pita bread (I had 2 very large ones, so I cut them in half and got 4 pieces), fresh sweet and sour apples, lemon juice, granulated sugar, butter, biscuits, ground cinnamon, chicken egg and a little vanilla.

So, first of all, squeeze the juice from one medium lemon. Adjust its quantity to your taste. Some of my apples were a bit sweet, so I added more juice. In addition to the fact that lemon juice adds sourness to the fruit, it also helps the apple pulp not to darken.

Peel fresh apples and remove seed pods. If you use sweet apples, they will turn into puree during the stewing process, and we want pieces that hold their shape.

Melt the butter in a frying pan and put apples in it, which we cut into not very small pieces of arbitrary shape.

Pour granulated sugar, add lemon juice, ground cinnamon and a pinch of vanillin (or a teaspoon of vanilla sugar). Save a tablespoon of sugar and cinnamon for later.

Simmer everything without a lid for about 10 minutes so that the butter and sugar form liquid caramel and some of the apple juice evaporates. Do not simmer for too long so that the apples do not have time to turn into puree.

Meanwhile, grind any unsweetened cookies, such as Galetnoye or Maria, into coarse crumbs. Of course, you can also use breadcrumbs if you like. The task of this ingredient is to absorb the apple juice and make sure that the pita bread does not become soft from the liquid. You can chop the cookies with a knife, but it is much faster and easier to use a blender.

When the apple filling is ready, let it cool a little, and at this time turn on the oven to warm up. Open one pita bread and sprinkle it on one side with crushed cookies.

Place some of the apple filling on top along with the caramel juice. Since I had 4 pieces of pita bread, I also divided all the filling and cookies into equal portions.

Fold the edges of the pita bread towards each other.

And then we simply roll it up on the side where the filling is located.

Similarly, we roll up the remaining pita bread with apples and place the future strudels on a baking sheet covered with baking paper.

Lubricate the workpieces with a loose egg and sprinkle with a mixture of sugar and ground cinnamon, which we left in advance.

Bake apple strudels from lavash in a preheated oven for about 20 minutes at 190-195 degrees. A very appetizing, rosy, aromatic and crispy cinnamon-sugar crust forms on the surface.

We serve our delicious homemade apple baked goods warm. If available, serve apple strudel with a scoop of creamy ice cream - a simply perfect combination.

How to cook at home

We take the most common cottage cheese, the one sold in briquettes. Please pay attention to the fat content of the product; it should not exceed 5 percent. If the cottage cheese turns out to be a little dry, it can be diluted with a small amount of any low-fat fermented milk product, for example, sour cream or plain yogurt. Add honey to the cottage cheese and stir thoroughly until it forms a paste.

Cut apples and pears into small cubes. We choose the sweetest varieties, with them the strudel will turn out even more juicy and aromatic.

Now we begin to place the prepared ingredients on the flattened pita bread. Distribute the cottage cheese evenly, stepping back from one edge by 5-7 centimeters.

Next, lay out the chopped apples and pear. Be sure to mix it up so that with each bite you can feel the presence of both fruits in the dessert, because despite the similarity, each of them has its own unique taste and aroma.

Now we sprinkle our preparation with raisins. You can also add lightly chopped nuts to taste. And, of course, cinnamon completes all this splendor. What strudel would be complete without this amazing spice! If you are afraid that you won’t have enough sweetness, you can sprinkle the preparation with cane sugar, stevia or any other sweetener you are used to. For my taste, the sweetness from fruits, raisins and honey is quite enough.

We begin to carefully wrap the pita bread with filling into a roll. At the end of this simple process, the ends of the roll need to be tucked inward. Place our future strudel on a baking sheet covered with parchment. Brush with yolk to form a golden crust. Place the roll in an oven preheated to 180 degrees for about 20 minutes.

The magnificent aroma of cinnamon and apples will instantly fill your kitchen, but while the strudel is preparing, it’s time to brew delicious tea to go with it.
